so……….now you know

Hmm. Hmmmmmm.

What to do when something enormous happens, and I’m so used to living my life as publicly as I can, tweeting every vapid-but-it-feels-kinda-deep thought and blogging about every up, down, and diagonal shunt of my life. But this one needs some time, some respect, some quiet. 
But also it would be really impossible to not address it, so in compromise, I’m just gonna talk about it pretty quickly. 
Two things happened recently: One, I realised I’m gay. (…gayer than I initially thought, if you will.) 
Two, well, Tim and I are as a direct result no longer getting married. Or together. A person’s sexuality is entirely their own business, no explanations are owed to anyone, (how can you explain something that just is?) and a relationship is the business of the people in the relationship only. Seriously. But – I offer you the following bullet points.
– Tim and I were together for nearly nine years. Much as it would’ve been convenient if this had all fallen into place when I was, oh, seven years old, I would not trade Tim’s and my time together for any trinket in the world. 
– We started off as best friends, and we’re gonna end up as best friends, whether we’re ninety years old and hanging out together on a porch somewhere drinking whisky or whether we finally work out how to become vampires and live forever and avoid aging and like, just meet up occasionally until infinity. There’s obviously one hell of a journey ahead (not least, we’ve accumulated an intimidating quantity of possessions) but this will never, ever change.
– My brother summed it up the best when he txted me and said something very wonderful to the effect of “I’m sad you two had to end but I’m happy you found yourself.” Those are pretty much the emotions flying round right now, but to the power of five hundred. 
– I’m gay. The gayest. Stone cold gay. Tony award-winning actress Marcia Gay Harden. Things don’t fall into place immediately. Sometimes things are hidden so deep because you don’t want to notice them, sometimes things were there all along. It’s not black and white, it’s not a light switch, it’s…it just is. Again: no-one’s business, but I’d just like to gently point out that all of us are somewhere on a spectrum. Much as we might be taught otherwise, or indeed, have the subject studiously avoided altogether.  
Cool. Okay. Lots of change ahead. Lots of things will never change. 
I haven’t really felt like cooking for a while – truth be told, I’d felt nauseous for days, maybe weeks – but on Monday night I made Tim and I (well, we’re still living together) a roast chicken for dinner and on Tuesday morning I made us breakfast, Breakfast Apple Crumble that is. And it felt good. And then I was like “wow Laura you’re a genius with this recipe from your incredible cookbook you should really make breakfast more often”. Yep, it’s so good that it stopped me being self-deprecating for a whole minute. That’s probably the nicest thing I can say about a recipe, but to be more helpfully specific – the quickly fried, roughly chopped apples topped with toasted oats, chewy with butter and brown sugar, is an actual gift to yourself first thing in the morning. 

This recipe is indeed from my cookbook, Hungry and Frozen: the cookbook. Who among us can say that they don’t like mentioning their cookbook whenever possible? (trick question, not many of us can. Because not many of us have cookbooks. I have one though! Oh man, this got obnoxious.)

Breakfast Apple Crumble

2 apples
3 tablespoons butter
2 tablespoons brown sugar
2 tablespoons rolled oats
2 tablespoons whole oats
2 tablespoons sunflower seeds
1 teaspoon cinnamon

Finely dice the apples. It can be roughly done, but the smaller the pieces the faster they’ll cook. Heat a tablespoon of the butter in a frying pan, and tip in the apple. Fry gently, stirring, for five minutes till it is softened slightly. Tip it all into a bowl, then melt the remaining butter and the brown sugar together in the same pan. Once sizzling, tip in the remaining ingredients and stir to toast everything slightly and coat in syrup. Once it’s looking browned and crisp, spatula it over the apples. 

I said it served one person in my book, but to be honest it was plenty for the two of us. Also I didn’t have sunflower seeds so used some almonds instead and it was still grand of course.

Apples and cinnamon together are like eating a hug. A hug. With cream poured over, so much the better. Ideally it would’ve been evaporated milk, which I used to have as a child poured over canned peaches for dessert, but I’m not turning my nose up at actual cream before 8am.

So that’s what’s been going on lately. While this is one hell of a situation, Tim and I have been very lucky that so many people surrounding us have been kind, generous, caring, thoughtful, amazing, and accepting without question. We’ve been able to hang out together, but we’ve also had people surrounding us individually with love and basically being giant ears for whatever we’ve got to say. People are wonderful, Tim is wonderful, I’m really not too bad myself, and I hope I can give that same level of support to someone else if it’s ever, ever needed.

Oh: I apologise if this is not the way you anticipated finding this news out. Tim and I know a lot of people. It’s hard to keep track of who knows things and who doesn’t, how far news has spread…I hate phone calls and scary one-on-ones anyway, and this blog is my home away from home, so this is probably the most personal and hey-you-yes-you way I could say this. So…now you know.

Listening to it is like that feeling where you can just sense yourself falling asleep and you’re still the tiniest bit cognisant and it’s all muted and muffled and a bit sinister but lovely. Or, uh, it’s a nice song, is what I’m saying.

Guess who’s been listening to lots of Green Day? Me, obviously, this is my blog. I just love ’em. Tim and I were actually at the Milton Keynes concert that got recorded for the Bullet in a Bible album/DVD (Truly. We just happened to be in the audience that night. Who would’ve known that the blandest city in England would’ve ended up having a concert recorded live there?) so I’ll always have a thing for that. Brain Stew and Are We The Waiting/St Jimmy and p much the whole thing are really great.

it’s silly when we get into these crazy hypotheticals, you really want some bread then go ahead, create a set of goals

What’s really nice is making friends with people to the point where, when you hang out with them, you can just as easily talk and talk and talk about everything there is as the minutes rush by, or sit in companionable, untroubling silence, just being in each other’s presence. I haven’t always had this in my life, so I’m never-not grateful that I now (and for quite a long time now)…do have this. If you’ve got such friendship, give yourself a triumphant high five, or better yet, high kick. If you don’t, I don’t know, don’t try to force it on anyone but do your best to spend as much time with the people who make you feel most like yourself. Not that you guys need me to tell you that (did you also know that drinking water is good for you?) just didn’t want to, you know, make anyone feel bad. In case I sounded way too smug, don’t worry, there’s a squillion things I could complain about, it’s just interesting to be positive sometimes. Even in this particularly clunky way.

If you’ve noticed that the photos seem to be in a different place to my house, it means you’re a diligent reader and there will be a tasteful sports car as a prize under your seat. But really, it’s because I spent all day sprawling at my friend Kate’s, where we talked about everything and sat in calm silence on our laptops and – in the ultimate friends-forever-with-hearts-dotting-the-i move, we had a nap together. It was pretty blissful. We also ate this coconut, raspberry and almond bread and butter pudding for brunch. Unfortunately you can’t all have a friend that is Kate specifically, (it might be tiring for her) but hopefully you have some equally good friendly people in your life. If nothing else, you can definitely get this pudding with relative ease and certainly none of the potential fraughtness of human interaction.

It bakes into a rather impressive sight, all puffed and golden and studded with lipstick-pink raspberries but is truly simple – all you’re doing is taking bread, pouring some stuff over, and half-assedly baking it for a while. It’s like falling off a log (and not like “falling off a log…and into a ravine filled with ravenous hyenas and circling vultures,” which was my super professional response when my manager asked how a particular task was going at work the other day. It’s cool, we get on.)

raspberry, coconut and almond bread and butter pudding

Serves plenty. Ideal for breakfast. A recipe by myself. PS: dairy-free. 

1 french bread stick
1/2 cup frozen raspberries
5 eggs
1/2 cup sugar
1 can coconut cream
2 teaspoons cornflour
generous shake of cinnamon
pinch of salt
handful of almonds, roughly sliced

Slice the bread into rounds a couple of cm thick – mine fluctuated between 1.5 and 3cm – and arrange in a baking dish where they will fit snugly. Scatter the raspberries over the top, pushing some of them inbetween the slices of bread with your finger.

Mix together the eggs, sugar, coconut cream and cornflour, not particularly thoroughly, just till it’s all incorporated. Evenly pour this over the bread slices, and allow to sit for half an hour. Sprinkle the almond slices over the top, and bake at 180 C/350 F for around 40 minutes or until puffy and golden. 

The rich, sweet coconut cream and sour little raspberries are excellent together, and at filling each slice of bread with their deliciousness. Don’t be tempted to leave off the almonds, as their toasty crunch is pretty sublime, but you could use another nut instead if that’s all you’ve got. It needs to sit for a while to allow the custard to sink into the bread, but the longer you leave it the less saucy it will be – whatever you do will be the right choice though.

Also leftovers are really wonderful fried in butter. Learned that one from Kate.

It was a rather quiet week, which was really nice – I need a lot of downtime doing nothing to counteract all the times I have to, you know, do things, and I enjoyed doing plenty of knitting and sitting and inhaling TV shows and such. In fact the most exciting thing that happened up until today was –

I got to hang out with a cat!

I’m at the stage now where cats are basically unicorns to me. (Quick summary: I love cats, landlord won’t allow cats despite my very persuasive and brilliantly worded emails, a thousand times sigh.) So rarely do I see one, that every occurrence of cat in my life is thrilling to the point of overstimulation. The cat in the above picture belongs to my friend, who I hate-watched Glee with on Friday night (oh, Glee, you’re doing more harm than good) and sadly scratched me after sitting on me for half an hour (the cat, not the friend) but it was still so fun! So cat!

Oh, and it would be remiss of me to not acknowledge how exciting it was that I also finally watched Fast and the Furious 6, which I’ve been calling 6 Fast 6 Furious for so long now that I had to google it to verify what the proper title is. It was bananas and hilariously fun and miraculously featured several cool women characters. And I will not be talked out of my theory that Dwayne ‘The Rock’ Johnson’s and Vin Diesel’s characters are secretly in love with each other. 
Quiet though this week was, I still wish, increasingly more so every day, that I had more time to write and focus on this blog and my cookbook and everything I love. Sometimes I forget I even have the cookbook because I have no time to think about it or how I can get more people reading it, and it takes all my energy just to get one blog post a week happening. There are so many projects and ideas and shenanigans I’d love to work on but there is just no time. But – at least there’s leftover bread and butter pudding to take to work for lunch tomorrow.

we’re up all night to get lucky

It seems very unfair to have both insomnia and writer’s block, not that I like the phrase writer’s block because it seems so self-fulfilling, but these are the words that rolled around my head like a marble on a wooden floor this entire night (not like the regular marbles that we used to play with in school, or even the double-sized ones we called bonkers, but the rare prize known as the grandaddy, triple the size of a normal marble and like holding a planet in your own hand. Until you inevitably lost them all. I have no idea what the point of playing marbles was when you could spend all your time gazing deeply into them – needless to say I was much better at looking at them than playing with them competitively. Man, I guess I have a lot of feelings about marbles.) I paused only to have a brief but elaborate dream about being unable to go to sleep, which was, I don’t know, a little bit on the nose even for my brain. 
But: I have a doctor’s appointment today (which will basically be me pleading “make me slee-hee-heeeeeep”) so hopefully that will start to take care of it. It being a complete state of somnambulance, of being unable to sleep more than two or three hours a night, of being unable to keep my eyelids from flying open and staying that way. Uncool! Sleeping should be one of those things you don’t have to try too hard at, like being funny and paying attention to letters from the IRD.  

Also a bit unfair: I’m not sure that today’s recipe is as good/irrefutably perfection as it could be, but I also think I know how to make it better, so I’m sharing it with you anyway. Every time I went to sweepingly refuse to write about it, I had to admit that it did taste really, really good. I’m talking about cinnamon date rolls, by the way.

But first, I’m talking about my Auckland cookbook launch last week. Wow.

It was such a fun, incredible night. My mum, dad, and little brother were able to be there, outlandishly stunning Sacha McNeil from Nightline came along; I invited Anna Coddington (who I’ve interviewed on this blog before) and she brought Anika Moa and I was like “HI ANIKA MOA THIS IS SO IMPORTANT”; I got to see so many friends and meet so many gorgeously terrific and terrifically gorgeous new people that I’ve previously only talked to online, like Amanda, Lani and Jilly, I got given a corsage (!!) and there were so many nice people and they were all so nice to me and it ruled. Seriously, do yourself a favour and have a cookbook launch party. 
Feverish and fervent thanks to Delaney Mes who helped in a million different ways to get the party happening, to Unity Books who supplied copies of my book and a friendly person to sell them on the night, to the people at the beauteous Bread and Butter Letter boutique for being charming and kind and having such a fun place for my party, and to fizzy sherbet lollies and pretzels for helping get me through the night. So many nights, in fact.
And, if you want, you can watch MC Rose’s delightful intro and my own speech, which, like all public speaking, I ADORED. If you were at the Wellington launch party, yeah, I recycled most of my jokes. I’m not good at letting go. 

So finally, these cinnamon date rolls that I’m quite, but not intensely enthused about. Here’s the deal. They are easy. Amazingly delicious. And other such adjectives. But…don’t do what I did and use regular flour. It’s tiresome, but if you specifically buy hi-grade/bread flour, these buns will have the extra gluten they deserve to become puffier and lighter and easier to knead and even more wonderful than they already are. So – if you only have regular flour, they’re pretty much great, but go on. Learn from my stumbles. Since there are so many and all.

What I’ve done here is take two rectangles of dough and roll them, sushi-ly, around chopped dates, butter, cinnamon, and a gritty sprinkling of brown sugar. They’re then scored, garlic-bread-style, and baked so they have a kind of pull-apart quality, while leaving the sticky, caramelly filling thoroughly cocooned in soft dough so it doesn’t burn. Cinnamon is such a warm, comforting scent and for what it’s worth, these will make your house smell incredible. Kneading the dough isn’t so hard, it’s just some patient, rather satisfying pushing and flattening, and the yeast comes in sachets so you don’t have to worry about getting scientific with it. Just throw it in to the flour and go. There isn’t actually that much sugar sprinkled into these, but what’s there melts into the butter and creates sticky, syrupy toffee wonderfulness. That will burn your DNA off if you eat them straight from the oven, so try to let them cool a little.

cinnamon date rolls


A recipe by myself

500g plain flour
50g sugar
1 sachet instant dried yeast
1 teaspoon salt
50g melted butter
3 tablespoons greek yoghurt
1 cup milk
1/2 cup dates
2 tablespoons brown sugar
50g butter, extra, cubed
Cinnamon

Place the flour, sugar, yeast and salt in a large bowl. Tip in the butter, yoghurt, and milk, and mix to make a rough, sticky dough. Knead repeatedly by pushing the dough with the palm of your hand and back into a ball repeatedly, until it forms a solidly cohesive-enough lump, which springs back quickly when you prod it. Cover with gladwrap and allow to rise in a warmish (or at least, not freezing, it doesn’t actually have to be that warm) place for an hour or so, then get back in the kitchen with it. Push it down again with your fist and divide it into two even pieces. 

Roll them out into rectangles about fifteen centimetres wide and 25 centimetres long – although really, so long as they’re similarly sized rectangles it doesn’t matter about measurements. You may need to let the dough sit for ten minutes to allow it to relax a bit before rolling it further. Roughly chop the dates, and sprinkle them, along with the brown sugar, plenty of cinnamon, and the and cubed remaining butter, over the two rectangles. Roll them up from one of the long sides so you have two long tubular tubes of dough. 

Set your oven to 180 C/350 F and sit the two dough rolls in a baking dish lined with baking paper, as I’ve done in these pictures. Using a serrated knife, make some decent slashes across the top of each roll of dough, which will allow you to be able to pull the whole thing apart into segments easier once it’s coked. Allow to sit for a further fifteen minutes while the oven warms up – this stage is called proving, I guess because you have to prove your commitment to breadmaking by waiting again – and finally bake for around 40 minutes. 

Homemade bready things don’t last like ones from a packet, but you and I both know (now that I’ve told you) that pulled apart pieces of this come back to life easily in the microwave.
Oh, okay, I guess I didn’t have writer’s block after all.

I had a day off today, on account of some time off in lieu I built up a while back at work. Strangely enough, I still found myself swatting away that creeping bleak Sunday evening feeling yesterday, even though I knew Monday was entirely mine. However it really was a lovely quiet little weekend. I baked, and Tim and I had burritos and grilled corn and Bloody Marias for brunch (the difference between a Mary and a Maria is vodka and tequila, to which I found myself asking aloud which was more of a brunch liquor, and tequila won because we felt like it, even though vodka had more of a morning feel to it. Yeah.) We also watched a lot of House of Cards and spent much time unpacking our swirling feelings around Top of the Lake and a few minutes unpacking Star Trek 2. I went to an exhibition launch at the City Art Gallery on Friday night and drank a lot of wine and all of a sudden it was Monday morning and all of today stretched out before me.

It all stretched out before me, because I slept in for seven minutes. On my day off. My body is annoying. And then, also annoying, I spent a lot of the morning curled up on the floor sniffling, on account of our landlord rebuffing Tim and I not once, but twice, in our request for a pet cat. Whether or not you’ve noticed that I talk about cats quite a lot, or have one tattooed on me, or have three paintings of cats on my wall, or whatever, the fact is I want a cat with every molecule of my being. It physically hurts my heart. And we just can’t have one, despite there being nothing in our tenant information about not having pets, or indeed, any reason whatsoever from our landlord, despite my very persuasive email. And apparently my yelling “I’m gonna take this to City Hall!” will have no effect, well, according to Tim. I really don’t want this to be the end of the road for Tim and Laura Having A Cat, but also I acknowledge that I’m not Leslie Knope and this isn’t a comical episode of Parks and Recreation where plotlines will be wrapped up neatly after some toiling. But I also feel like I can’t simply stop trying. Is there some kind of tribunal for if your landlord makes you cry because they just say no to a cat, without saying why?

But as I said, I did do some baking, as a means to a very specific end: work snacks. A few different factors – money, time, disorganisation, listlessness, money again – mean that my lunches for work are generally terrible. In that I’ve recently been having instant noodles for lunch, and that’s a distinct step up nutritionally and delicious-wise from what I used to eat. It’s a bit stupid but it’s the way it is: I can make myself elaborate (or at least decent) dinners or pretty weekend brunches or huge cakes, but I struggle to put any effort into lunch for work. Maybe because it’s hard to throw lots of time and money into something you’re going to wolf down under fluorescent lights, maybe because it’s hard to make something that is filling and that you look forward to and that you won’t get utterly sick of after five days (instant noodles, looking at you.) Maybe it’s just because I’ve only recently started to think about it, and it’s easy to fall into habits that require the least from your brain.

I do go through occasional bursts of inspiration, but I’m going to try to be more consistent now, so that I have the energy throughout the day to not fall asleep, and so that lunch isn’t something I dread yet long for because I’m so hungry but also know that it’s just dried noodles in a polystyrene cup. (They actually are pretty delicious as a snack, by the way, but they’re not that filling and day after day of them is not cool.)

Kinda typically, I completely screwed up one of my ventures, the granola bar. We might call them muesli bars in New Zealand, but that to me recalls memories of primary school morning tea, grimly dry, mealy, oaten briquettes which came in boxes of six or eight and occasionally had a mean sprinkling of chocolate chips on top or some vague apricot flavour. And also, oddly, a listening comprehension test from the same time where the narrator pronounced the word “muesli” as “mooooslie” and it was very distracting. Granola bars sounds a little more freewheeling and chewy and American and cool.

I made this recipe for Date Orange and Almond Granola Bars from The Moveable Feasts, a food blog I love – the author Amy just seems like someone I’d get on with in real life, and she is beautifully descriptive about food but in a relaxed way…I don’t know, a lot of food blogs these days have a really strange energetic style that I not only don’t enjoy reading, but also it blurs them all into one. This one though: it’s good. And this recipe seemed exactly what I was after to take to work – something sustaining and easy to make, and yet still snacky and sweet and enjoyable.

I then somehow added three times the required amount of oats. I don’t know how or why, just my usual heedlessness I suppose – it wasn’t till the next day that I worked it out – but it basically turned into granola, really really good granola, so all is not lost. Just diverted. I now have a container to take with me to work for eating by the handful, the spoonful, or the milky bowlful, depending on my needs.

So if you want to make the granola bars, just follow the link, and if you want to make this into granola bar granola…just triple the quantity of oats. On purpose.

Fortunately the other thing I made worked out just fine. I really like Fine Cooking magazine and figured I’d find something on its website that my brain could happily latch on to. Well, there was a little heedlessness involved here, too – this is supposed to be a recipe for Ginger Bars, but halfway through making it I realised I had no ground ginger. No harm done: I like cinnamon even better.

These have all the squish and sweetness of brownies, but with the pure rush of comforting warmth that cinnamon brings. They take about five minutes to make and get better each day. They just taste ridiculously good.

Cinnamon Bars

Adapted from a recipe from Fine Cooking magazine.

  • 180g soft butter
  • 4 tablespoons golden syrup
  • 2 tablespoons honey
  • 1 1/3 cups sugar
  • 2 teaspoons cinnamon
  • Pinch of salt
  • 2 eggs
  • 2 cups flour
  • 1 teaspoon baking soda

Set your oven to 180 C/350 F and line a brownie tin with baking paper.

Cream the butter, sugar, honey, golden syrup, cinnamon and salt together till light, airy, and pale. (Also: you should totally eat some at this point, it’s amazing.) Beat in the eggs, then stir in the flour and baking soda. Tip the lot into the brownie tin, sprinkle over a little more cinnamon if you like, and bake for about 25 minutes. It should still be a little tender in the middle, not entirely wobbly and liquidy, but not too firm either.

So, now that I am armed with two snacks, one of which can double as a lunch, I’m feeling a little better about the week ahead. Cat-related tears aside (which resurfaced this evening) (which I should really call having-no-cat-related tears.)

As you can see, my photos lately either take the form of badly lit dinner, or nicely lit but faux-artless scenes of plates and knives and forks. Or both. This scene is real, for what it’s worth (or I would’ve moved the damn lens cap out of the way.)

I have a theory. Well, that implies that it’s well thought-out – at this stage it’s less of a theory, more of a sentence on a blog. But: I swear food can sense fear, like horses can. (I know, I had a horrible horseriding accident at age ten. Sustained whiplash and a respectful terror of horses.) I have been on a ruining rampage in the kitchen lately, and it’s as if the food can tell I’m all nervous and have bad instincts about it. My latest screw-up was a salted caramel slice where I burned one can of condensed milk in the pan, and then, obtusely, the next batch refused to cook. Just wouldn’t. Slid around, off the base, which I’d already baked but which managed to somehow un-bake itself under the liquidy topping. I called it fail-slice. And ate most of it anyway over the next day or two, because the ingredients themselves still tasted okay.

That seemed so much more door-slammingly dramatic in my head, but to be fair, every time I ruin something I’m cooking it feels like the first and only time in humankind this has happened. The waste of ingredients, the bass-drop letdown after all that anticipation, the hangdog way that I have to impart the disappointing news to any expectant eaters. With that in mind, I am amazed that these falafel waffles, with their high level of novelty-induced-anticipation, and with their delicate, unbuttressed structure…worked. Worked just fine. Despite my nerves. So maybe food can’t smell fear, and all I have is a sentence, not a theory, and a lot of coincidentally recent cooking mistakes. The point is, I also have falafel waffles, and their relative success has helped my kitchen nerves no end, like in Sonic the Hedgehog when you gather up lots of sparkly rings, so it doesn’t matter if you lose a few here and there, because you will still have more rings to spare. (I played a lot of Sonic the Hedgehog one time.)

Sliced my lemon this way because I saw it in a fancy magazine. It looks so pretty but is kind of stupidly wasteful since you only get two slices per fruit. And now I’m in an aesthetics vs practicality food blogging quandary. Which is kind of like a metaphor for the waffles! (Or perhaps just kind of like the waffles.)  

I like a good portmanteau-ing as much as the next person, and “fawaffle” is pleasing, but I think I better enjoy the rolling assonance (hey…oh?) of falafel waffle written in full. I first heard of these when a friend Kat (who I’ve met all of once, but you know, the internet!) emailed me with some suggestions of things to do in New York while Tim and I were there in October last year. She mentioned that we should definitely try falafel waffle. We never made it to this mystical place but the idea stuck in my head. Falafel mix, but instead of baking or frying it, clamp it between the crenellated arms of a waffle maker. There’s significant aesthetic outcome involved, sure, but falafel is delicious and enwaffling it is surprisingly practical. It makes a lot at once, you don’t have to watch it, it’s really cute.

Let me first apologise hugely though, for posting a recipe that you need specialised equipment for. I try not to do this. In my defensive defense, not one of the bajillion ice cream recipes that I’ve posted on this blog needs an ice cream machine. But I really can’t see myself getting around the waffle maker thing in order to make waffles appear. I don’t know if there’s some alternative that involves indenting pancakes with the end of a fork or something. I…hope not.

Falafel Waffles

Makes two. Recipe by me. Concept not mine. To cold-weary to google them.

2 cans chickpeas (I’d really wanted to soak chickpeas overnight and blend them up, but continually forgot.)
1 teaspoon salt
1 tablespoon tahini (or peanut butter, in a pinch)
1 handful chopped herbs: coriander, parsely, chives, or all three. I only had a tablespoon of chives, but still.
1 teaspoon ground cumin, more if your cumin has been sitting around for years
1 pinch ground cinnamon
1 egg

To serve: anything at all – lemon slices, thick plain yoghurt, more tahini, mustard, chilli sauce, tomato sauce, whatever.

Drain the chickpeas and blend them up in a food processor (more specific equipment, sorry, I’m on a roll here) till quite well-blended but not pureed – you want a a mix that’s nubbly in places yet smooth in places. Basically: be half-hearted about your processing and it will probably turn out how it’s supposed to. Add the salt, tahini, herbs, cumin, cinnamon and egg and pulse briefly to mix. 

Heat up a little oil in your waffle iron, putting it on a very high setting. Once you’re sure it’s good and hot, spoon in half the falafel mix, pushing it round evenly with the spoon, and shut down the lid. Leave it for a good solid five minutes, maybe longer – till it really seems cooked through. Use a spatula to carefully lever it away from the bottom grill, then lift it up and onto a plate. Repeat with the remaining mix.

I know two damn waffles doesn’t sound like much at all, but these are ridiculously filling, and when you think about it, each embossed heart segment is like a whole falafel on its own. There’s not that deep-fried crunch of the real thing, but it’s still excellent, outside of its looks. The cumin is rich and aromatic (that feels stupid now that I’ve written it down but it just is, okay) the indents making for maximum crispness within the baked-not-fried context, and chickpeas have a nutty deliciousness all of their own. Plus I covered mine in tahini and thick plain yoghurt and mustard and lemon juice, which made it look appalling but taste even better.

Is a waffle iron even worth it? Kinda. I adore waffles, but they are best if someone else is making them for you, otherwise I tend to get tired/bored halfway through the bowl of batter. Also they just aren’t as good as ones from a cafe generally. But on the other hand: waffles! Whenever you want them and also have the energy and ingredients! Tim and I got ours through Fly Buys, which is this points-gathering rewards scheme that takes forever to accumulate (one point per $25 spent on groceries. I mean really. Anyone rich enough to gather up enough points to get anything with that kind of system doesn’t need the system!) After seven or so years we scraped together enough points to get this waffle iron though, so…hooray for the system. The system is sound.

As well as apologising for your needing a waffle iron to make waffles, I’d also like to apologise if this particular post seems grave and unenthused: I have a cold and every word I type feels like an effort, the kind of effort when you’re trapped in a dream and you have to try and wake yourself up with an exhausting push of the body because it feels like a house is flattening you. I may also feel like the only person who has ever had a cold before, but it doesn’t help that work is so busy this week that I can’t take a forseeable sick day anytime soon, despite feeling deliriously atrocious. Even with my dramatics, that’s pretty much telling it like it is without too much embellishment. Which is all I’ll say about that – I’m always nervous to talk about work on here in case I get pulled into an office and am told “you said the word ‘work’ on your blog. That crossed a line between the professional and the personal. You’re fired and/or arrested.” (I’m basically always nervous, in fact.) I’m hoping I can outwit this cold with my smarts though, like Liam Neeson in Tooken 2. I still currently retain my sense of smell and taste, and the coughing only happens at night when I’m trying to sleep, so there’s that. I have ginger and whisky and vitamins and determination to get better by the weekend. And an immunity boosting ego trip from successfully making falafel waffles!

Between the cold and work I’ve been either running around or laying low but I had a good wine-fuelled impromptu-dance-party on Friday night, swooned frequently over Lost in Austen (it’s silly, but wins on swoon-per-capita) and saw this cool cat on Sunday at book group. Someone commented on instagram that this cat’s face is a bit like my natural face in photos. What a compliment! (That’s not sarcasm.) Like a horse smelling fear, or a recipe possibly smelling fear, cats can normally tell how badly I want to be their friend and so, being the bloody-minded creatures they are, remain aloof. But despite its sneer here, this cat (Oscar) was in fact super friendly and flopsy and nuzzlingly ridiculous.

how do ya like them egg rolls, mr goldstone?

Our table, which Tim spent a goodly segment of easter weekend sanding and repeatedly basting in polish, is back. Which means now if I make us breakfast on it, everything suddenly looks 97% more idyllic in photographs. As Prop Joe from much-clasped-to-modern-hearts TV show The Wire said, look the part, be the part, huh? (…he ended the sentence with something a little saltier than “huh”.)

 

I’ve had a sorry run of egg-related kitchen failures lately. Like these terrible pastry cases that I wanted to make into lemon tarts. I refused to throw out, thinking I could eat them, the burden-of-your-shame-biscuits that they had become, and not waste ingredients – but they were dry and gravelly and yet soggy and falling to bits at the same time. Wasting ingredients and injuring your own self-esteem is a cruel combination. But while nervous, I had a good feeling about these miso scrambled eggs. Miso paste is used with water become a thin, unpromising, yet magically delicious broth. Wonderful as that is, miso paste as a general ingredient gives you this mysterious savoury tricksy flavour that makes everything taste like itself, but better. Like when I put my glasses on and everything in front of my eyes sharpens up.

It looks a little indisposed at first, the miso paste tinting the scrambled eggs a troublingly peachy shade. But it comes right, and if you’ve got some garnishy thing around to cover it with – in my case, fried shallots, but chives, coriander or sesame seeds would also be excellent – so much the better. Hooray for garnishes.

Miso Scrambled Eggs

A recipe by myself. Serves two, or one very hungry. Or four people a small spoonful each. Or six people, but three of them can only watch. Look, it’s 6am when I’m typing this, okay.

1 tablespoon white miso paste (heaped or level, depending on your sodium avidity)
2 tablespoons water
4 eggs
Plain oil for frying (I used rice bran. It has a pleasing lack of oiliness to its taste.)
Fried shallots for garnish (optional) (but way delicious)

In a medium sized bowl, whisk together the miso paste and water till smooth. Crack in the eggs and roughly mix, just to break up the yolks and swirl in the miso. Heat a little oil, about two teaspoons, in a saucepan over a medium heat. Pour in the egg mixture and allow to cook gently, stirring with a spatula or wooden spoon to scramble it as it firms. Once thick and fluffy and basically not liquid any more, divide between two pieces of hot fresh toast. 

If you’re the easily suspicious kind of person, and I understand how tampering with scrambled eggs might do that to you, be assured that this is ridiculously, non-threateningly delicious. The miso paste gives the eggs a rounded saltiness, the intensity of roasted mushroom or slow-cooked beef, but without changing anything about the texture or basic flavour. It’s subtle, but present. It’s really, really good. I love breakfast/brunch ever so much, and while going out for it is one of the more exciting things you can do with your life, sometimes it’s nice to kick up a fuss in the home. Also like all breakfast foods, this is a perfect dinner. Or midnight snack. Or lunch. Or one of those snacks that you have to help your brain think about what you’ll have for lunch. Which is different to brunch.

It’s my birthday next week. Birthdays can be stupidly melancholic – wanting to do something but not being sure what; reflecting on everything you’ve ever done up until this point in vicious detail; wanting all of the trinkets that there are; feeling this frantic stiltedness at trying to make the day a good one, followed by the post-birthday comedown. Bundle of fun, aren’t I? On the other hand I keep telling myself that it’s possible to enjoy yourself any old day of the year, that a birthday isn’t your one shot at a fun time (see, when it’s written like that my squirminess seems really ridiculous); and besides, two interesting things are happening: on my birthday itself the government will be making its final decision on whether marriage equality will go ahead in New Zealand. Which is a very big deal for a whole layer cake of reasons. Don’t make this a Justin Bieber-esque “worst birthday”, oh politicians. Plus, as Tim and I have solemnly vowed not to get married until marriage equality goes ahead, anything could happen! Surprise wedding! (There will be no surprise wedding. I’m terrible at bluffing, I promise I’m telling the truth.) Oh, and the next day, I am getting a tattoo! Wheeee! So far everyone I’ve mentioned it to has been either very excited, or, more amusingly, very politely reserved and pleasant and smiling brightly about it. I have not had anyone say “how will you get a job you’re ruining your life and why, why?” but just in case, I have some answers at the ready:

– I’m doing it for the attention
– Because I’m very influenced by the Spice Girls (these two reasons admittedly apply easily to other areas of my life, but not this one)
– I want it. It’s my body and I am in control of it, and isn’t it lovely to just want to do something and then do it? What is the point? And when did you last enjoy someone questioning what you do with your body?

I can’t wait. I can almost feel it. And what am I actually getting tattooed? No big, just a picture of Tim’s face, on my face. To scale.

Ha! I’ve joked about that so often that I’m now scared someone will overhear me and think it’s what I really want and organise it for a birthday present or something. Uh, no, what I’m getting is a cat, on my left thigh. I can already feel some “uhhh-huh” from here (and also some “oooh”, I see you cat fiends of the internet) and I don’t know, it’s just what I want. It came to me in a feverish vision one sleepless night in New York in October, and it has stuck with me so persistently that I decided I’d like it to stick with me literally.

My friend Ange (for whom the Twin Peaks party tolls) has officially left Wellington. I’m terrible at goodbyes, I mean even on the smallest scale, I just never want the party to be over. So there is much wallowingly sad sadness. But also a small bit of selfish delight, because she is letting Tim and I booksit her library.

This is maybe a fifth of the books she gave us.
I used to be the most intensely voracious reader as a child. But these days, with sleep feeling like a waste of time and a million things to write, reading hasn’t been a thing I’ve done all that regularly, apart from my monthly book group chosen text. And yet, like Ange had cast a spell on them or something, last week I read four whole books. They consumed me as I consumed them. Taking a trip in another person’s brain for a while, I’d forgotten how good it can be. And that all-consuming need to pick up the book whenever you get a spare moment – it has been too long.

Here’s what I’ve read over the last week:

The Book of Proper Names, by Amelie Nothomb. I yelled “OH MY GOD” after finishing this. It’s incredible. I also related to the main character in many ways. The main character was five years old for a lot of the book.

How to Breathe Underwater, by Julie Orringer. Devastating short stories, just the kind I like with sticky hot summers and awkward teenagers and some religious theory. One story was so weirdly close to home I wanted lie under a table and cry after reading it.

Picnic at Hanging Rock, by Joan Lindsay. Dreamy and sinister and full of girlhood and intense friendships and sorrow. Might be too scared to see the movie adaptation, though.

Bonjour Tristesse, by Francoise Sagan. Not nearly as scandalous as the rather skittish blurb on my copy made out, but beautifully worded and excellently sybaritic all the same.

Honourable mention: Who Was That Woman, Anyway? by Aorewa McLeod, which I read for book group on easter Monday. Cantered through it, absolutely loved it.

There are a small number of blogs I really, really read all the time. Le Projet D’Amour is one, as the writing is riveting and the author, Hila, is always writing things I want to, or didn’t know I wanted to, read about. My acquiring all these books coincided with my reading Hila’s post about the Women Writers Reading Group, and her post about the statistics regarding authors who are women – spoiler alert, their books aren’t reviewed or highly regarded as much as those by men. I’d been trying to actively read more books written by women anyway, but this was, like stirring miso paste into scrambled eggs, a delicious intensifier of what was already happening.

I’ve been txting and tweeting Ange to ask her to continually tell me which book I should read next from her collection, partly because I’m paralysed with indecision and partly because it makes me feel like I’m in a beautiful movie or something about books and hushed correspondence and rainy days (oh, you know what I mean) and so she recommended the first two on the list. Picnic and Bonjour Tristesse are also hers, both of which I chose for myself by picking them up absentmindedly and then suddenly coming to and finding myself sitting on the floor uncomfortably, halfway through reading them. The next one she recommended is Slouching Towards Bethlehem by Joan Didion. The weather is getting icy colder and I am daydreaming about packaging myself in a soft, soft quilt and reading this book. Even right now, while I’m typing. Which is why it took me so long to write this paragraph.

Read anything good lately? I bet Ange has it in the pile she gave us.

The Four Tops, Reach Out (I’ll Be There). So achingly perfect. And I am never not endeared by the “rrrrah!” at the start of the first verse.

I watched Pitch Perfect again over the weekend with friends, and yes, there’s a lot problematic about it but ugh, so much good. Some stuff, too good. Anyway, I’ve been watching this clip over and over and over again since, and am not ‘fraid to admit it (I really tried to like the original T-Pain song that it’s covering but it’s just too empty without the allure of a cappella.)

Sara Ramirez (of Grey’s Anatomy but also a Tony Award winning Broadway star) has the most killer voice. Here she is singing a song that always makes my heart melt like an ice cream on a hot sidewalk: Meadowlark.

i’ll drink to that, and one for mahler!

Back when I first left my job and strode purposefully into the warm, sugary waters of cookbook-writing (before immediately getting sick for three weeks) I had it in my head that I’d be able to blog more than ever. Well, ha! I certainly learned a thing or two since then. Like I wouldn’t really have the time, at all. So, sorry to leave it so long between blog posts. Basically, if I am awake I am working on the cookbook. It leaves very little time for blogging. But as this blog is so deeply important to me, it does not behoove me to neglect it. So here I am, and I will attempt to keep this relatively snappish (a) so I can get onto preparing for today’s cookbook photoshoot and (b) because there is only so much one can say about a smoothie. 
It has been one heck of a week. If my last blog post indicated that it was crunch time and time was crunchy, well, time has since become ever more textured. Barbed. Studded. Clawed. Gritty. It’s grit time. Hopefully all this grit will bring forth a pearl of a cookbook though.
At book group the other day (which escalated with delightful predictability to into-the-night discussions on feminism, politics, and HBO television) I had an amazing Ottolenghi salad that the host, my longtime friend Ange had made. I then realised how long it had been since I’d cooked anything that wasn’t something being tested for the cookbook. Much as I’ll miss the montage that is my life currently, I am definitely looking forward to opening up someone else’s cookbook and making their recipes.
But I am still fair sparkling with excitement, every particle of me alive and tense with the knowledge that I am going to be a published author, that my ideas have actually taken me somewhere. Luckily the universe reminds me often enough of this, so that when I’m all grumpypants and don’t want to look at food, the amazing ridiculousness of this all sets in again, I remember that any problems I have are AMAZING PROBLEMS TO HAVE and I find energy to keep going. I mean, I physically cannot bring myself to complain about any of the more stressful elements of this whole process (please ignore any times I actually complained about it) because it’s all so…incredible.

Yesterday, pale with the knowledge that I’d hardly eaten anything vitamin-rich lately, I made myself a smoothie for breakfast. It was perfect – eye-wideningly zingy, not troublingly filling, and gloriously pink. Who am I to tell you how to make a smoothie? It’s just blended up stuff. When I was a child and my grandma gave me her old blender, which had a three-cup capacity and all the grunt of an electric toothbrush, my favourite thing to do was blend up a can of peaches in its syrup and drink that like the fancy lady I thought I was. What I’m saying is: smoothies, they’re not long division, but they are delicious. Here’s an idea for you.

Raspberry, Pear and Basil Smoothie

The secret ingredient is a sneaky, sour teaspoon of apple tea powder. Which in itself is a perfect snack. If you don’t have any, this is still more than fine of course. Consider a tiny pinch of citric acid instead, if you like.

1 heaped cup frozen raspberries
2 pears
1 lemon
1 tablespoon apple tea powder
A few basil leaves

Tip the raspberries into a blender (pausing to ostentatiously instagram them first, if you’re anything like me.) Peel the pears and roughly chop them, and add them to the blender too. Eat the peel to assuage any wastefulness-guilt. Squeeze the juice from the lemon into the cup measure, then top up with water. Pour this into the blender, add the apple tea powder and the basil leaves, then process thoroughly till smooth. 

I say use frozen raspberries, because who has heaps of fresh raspberries kicking around to be diluted into smoothies? Do you? Who are you, Marie Antoinette? You could use any berry you like – frozen strawberries are rather pleasing as their seeds aren’t so obvious between the teeth. On the other hand, the seeds kind of make you feel like you’ve got something to do as your teeth grind them down, so there is a case for both sides. The pears give a similar kind of bodily smoothness to the drink that bananas might, also their mild, fragrant juiciness is a good backdrop for the more boldly acerbic berries. Basil’s smokiness provides a little depth and warmth. And the finished smoothie is a really pretty colour. Really, really pretty. Let us not overlook its aesthetic value for the sake of pretending we’re overlooking its aesthetic value.

Last time I blogged I was urging anyone local to come along to the rally for Marriage Equality. Well, I went, with all my friends, and it was the most intense, happy, emotional day. I wore my big gold dress as it was the most celebratory thing I owned and also because it made me think of Edie Beale’s ‘Revolutionary Costume For Today‘ from Grey Gardens. (“The full-length velvet glove hides the fist”.) We marched together, all the way to parliament in the hot sun, to hear speeches from many different sides of the story, from the most recent of accepters to those who had been working longer than I’ve been alive to fight for equality, for people to just be who they are. It was incredibly moving. Later that evening, over lots of ice cream (I needed to test a ton of ice cream recipes, so I did just that, and then invited people round to eat it all) we huddled round a livestream of Parliament TV to watch, with lip-biting nervousness and then heart-soaring joy, as Louisa Wall’s bill was voted to go ahead to a select committee by a surprisingly generous majority. This isn’t the final hurdle – there are still so many steps to be taken for the bill to become law – but still, it was such an exciting, wonderful achievement. Watching it all unfold with people dear to me was even better. I’m really not expressing myself here, but it was all…just…so important.

If my paragraph hasn’t moved you in the slightest, perhaps this video of Mitt Romney being incredibly disrespectful will show just one reason I feel so strongly about this issue – I’ve watched this video three times and my eyes well up each time by the end.

Another exciting thing that has happened, on a much smaller scale – and yet no less large-scale in its way – I received an email from Julie Clark of Floriditas cafe, saying their bakery always has plenty of ingredients and she’d read about some of my recipe testing mishaps and she’d like to help me out. How kind, thought I, perhaps she has a spare bag of sugar for me! The next day she emails again to say she’s just down the road and has something for me.

That something was 20 blocks of butter and 60 eggs. I’d never even met Julie, and to receive so much kindness from a stranger near-on floored me. She didn’t know it at the time, but Floriditas was where Tim and I went for a celebratory dinner on the night I found out my book deal was confirmed, and also we often buy their loaves of bread to add to the snacks table at photoshoots for everyone to eat. So…synergy? Anyway, damn, sometimes these moments come out of nowhere and all you can do is say thank you. All my recipe testing since then has been monumentally less stressful, since, if something doesn’t work out quite right, there is still another remaining tonne of butter for me to use. Thank you, Julie!

Next time I blog, we may well have wrapped up the photography process and I’ll be very nearly finished the manuscript. The team – Kim and Jason the photographers, Tim the handsome project manager and Kate the stylist, are continuing to do such a brilliant job and putting so much energy into this and I am SO so excited for you all (I mean, no pressure, if you don’t want to buy the book that’s totally up to you) to see their amazing work.

Till then, I’ll be carving that butter sculpture of myself that I’ve always dreamed of.

i’ve got caviar for breakfast, champagne every night

I was never excited by breakfast as a kid. Breakfast meant having to go to school, inevitably sitting round all day with wet shoes because there was this puddle right by the steps to my first classroom which never dried up, not even in the middle of summer (as far as my dramatic memory goes, anyway.) Later at boarding school, it meant not knowing where to sit, day after day of dry loveless cereals dampened with milk and choked down or eyeing up masses of pale, bulky margarine to be spread over pale, barely warmed toast. But: I appreciate that I’ve been lucky that whatever the financial situation was around me, not one single day has gone by that I haven’t been assured breakfast. Even when Tim and I were first living together there was always bread for toast (a diabetic needs their carbs! And hey, thank goodness Tim isn’t kept alive by like, caviar or truffle oil. Just simple, cheap carbs.)

There’s good memories of breakfast too. Dad suggesting and then making canned corn on toast on a Saturday morning. Nana guiding me from the white sugar to over to the more thrillingly caramelly brown sugar to pour over my porridge when I was staying with her. And now I love it – going out for brunch with Tim (well, we have to as cafe reviewers, so bully for us) or slouching round together in the kitchen in the early hours with a cup of tea or coffee pretending for a while we don’t actually have to leave the house and earn money. With this in mind, if you’ve got some time handy, nothing makes breakfast nicer than – of course – actually having something good to eat. Granola is an elegant solution. Robust and filling, but importantly delicious – depending on what you put in it – and the recipe’s flexible. And best of all, once you’ve made it, you’ve got breakfast in five seconds, and all you have to wash up is a bowl and a spoon. No dishes at all if you just curl up with the jar and eat it by the handful till you’re ready to carry on with your day.

I’d been meaning to make granola literally forever. Okay, just a month or two, but whatever, sometimes I find it fun to use words that make people huffy about correct usage. I don’t mean harmful words that you say while also yelling “PC gone mad! PC gone mad!” as if it’s some kind of shield that lets you be an awful person…I just mean acting the fool. Also contributing to this might be the Parks and Recreation character Chris Traegar who reminded me how satisfyingly useless the word “literally” is.

That said, this might not literally be granola. It’s more muesli with granola aspirations. But aren’t we all? Allegories aside, what I mean is: it’s a little more free-flowing and not quite as tooth-challengingly clumpy as proper granola, but on the other hand it’s nicer and cheaper than the stuff at the supermarket. If your cupboard is bare you’ll need to spend a bit of money to get the ingredients, but fortunately most of them are fairly cheap and this batch will last you for ages.

This one has a one-two punch of grated apple and apple juice to impart crisp juicy flavour, cinnamon to make you feel warm and safe inside with every mouthful, and cashew butter for a bit of much-needed lusciousness. Ugh, I know, who has cashew butter? Well, I do – a Christmas present from my brother – and I wanted to use it in something specific. If you’re given to making your own granola maybe it’s not so difficult a pantry item after all, but if you don’t have it within reach, you could use tahini of course, or even peanut butter, which will affect the flavour a little but only in a “made on a production line that also processes peanuts” kind of way, I presume. Or just leave it out!

Apple Cinnamon Granola

This makes HEAPS. Initially I just had to leave it in the roasting dish until I’d eaten some, because we didn’t have a container big enough for it. Even now, several meals down, it’s divided between two big containers.

  • 3 cups rolled oats
  • 2 cups wholegrain or “whole” oats
  • 1 cup quinoa flakes
  • 1 cup linseeds
  • 1 cup sunflower seeds
  • 1 1/2 cups dessicated coconut
  • 1 cup brown sugar
  • 2 large apples, grated (including skin)
  • 2 teaspoons of ground cinnamon (to taste)
  • Pinch salt
  • 2 heaped tablespoons cashew butter
  • 2 heaped tablespoons golden syrup
  • 1/2 cup apple juice

Set your oven to 100 C. Line your biggest roasting dish with a big sheet of baking paper. Mix together all the ingredients from rolled oats to salt directly in the mixing bowl itself, then place in the oven, stopping to stir about every ten minutes or so, for thirty to forty minutes.

Then, just when you think you’ve got away with not having to do any dishes, mix together the cashew butter, golden syrup, and apple juice till relatively smooth, and drizzle it over the roasting dish of oats. Don’t worry about covering it all – just mix it through. This is going to create some cluster action. Return to the oven for ten minutes, then turn the oven off and leave it in there to cool. If this isn’t an option – flatmate wants to roast a chicken or something – then just carrying on baking for another ten minutes after stirring it again.

The apple flavour is surprisingly subtle after all that, but the harmonious pairing with cinnamon brings it out further than it would be on its own. This has crunch and warmth and sweetness and is generally a beautiful way to start the day. Or have it for dinner. And use what you can find – add sesame seeds or pumpkin seeds if you have them, use demerara or white sugar, leave out the quinoa and add wheatgerm, whatever. It won’t fail. It’ll give you sunshine on a cloudy day.

We had a charming weekend away in Greytown, which I won’t tell you much about since I’m going to be writing about it for the newspaper, but for now – just look at this kokako. All I knew about these glossy birds was gleaned from educational videos in school, where the main take-home message was: they are monumentally endangered. So to actually be able to see one at Pukaha Mt Bruce was pretty wonderful. We’re gazing at this rare, precious bird quietly and respectfully through the mesh fence that protected it from the outside world, taking in the moment. Then it starts flirting with Tim. Yes. Tim got openly hit on by an endangered native bird. It shadowed him as he walked the perimeter of the enclosure, continually jumping up to cling onto the mesh by Tim’s face and squawk at him plaintively. I was ignored entirely apart from this brief moment of eye contact between us in the photo above. Recognising a rival? Can’t blame the kokako, really.

Sherie Rene Scott, the Broadway star who is on my list of “people who have made me cry even though they’re only on a grainy YouTube video”. One of my favourites is of her singing I Miss The Mountains in a very early workshop of what would become the musical Next To Normal. Maybe quite specifically because of her vibrato on “mountains” at 1:54 and the way she says “meeeeeeh-iss” at 2:25.

I’ve also been listening to a TON of podcasts (yeah, those things, I know, I only just got into Google Reader this year too) lately, if anyone has any they can recommend me then please go right ahead.

Next time: I am right in the middle of making pulled pork for the first time, and if it tastes even one tenth as good as it smells, I’ll be one happy person. And therefore more likely to blog about it. 

banana by the bunch, a box of captain crunch would taste so good

While there are large-scale diseases with varying degrees of manageability, on the day-to-day level the human body can still be pretty unfair to its inhabitant. I say this with full acknowledgement of my privilege – that is, I am sound enough of body. I mean your intentions going one way and your body going another.
But what’s got me thinking about this, is that it’s currently 5.30am. Not that shocking an hour really. But I’ve been absolutely, no-turning-back awake since 3.45am. Not for want of trying to sleep. My brain started getting stupid anyway. Like I’d be imagining rain on the roof and being all nice and calm, drifting away on a floating bed – suddenly my brain would insert into this lovely scene an enormous insect, a particular insect that terrifies the heck out of me and whose name I’m not even going to utter on this page. My brain did this about five times while I lay there in cold-then-hot discomfort, my normally reliable pillow becoming flat and concrete-like…when I checked my phone and over an hour had passed, I accepted there was not much I could do about it. So here I am.

Alas, this is quite typical. I’m not the best sleeper. Normally it manifests in my taking hours to fall asleep after turning off the light, but this time I had sleeplessness working its way to the middle from both ends of the night. As I sit here typing in the dark, Tim, the minxy hellion, is sleeping like he always does, deeply, unflappably, and with enviable briskness. Meanwhile I’ve been lying thinking “I’m going to be so fragile tomorrow. Does thinking I’m going to be fragile mean I’m going to be more fragile? Aagh, it’s that insect that I hate!”

Luckily I had the foresight yesterday to bake some banana bread, a warm pillowy slice of which I am confident will provide untold comfort.


Especially when that banana bread was spontaneously studded with the roughly chopped remainder of a vanilla-fluttery, buttery block of Whittaker’s white chocolate. (Please scuse the pink stains on my chopping board. Either everything is stained permanently or you never eat beetroot, there is no middle ground in life.)


Banana bread always seems like a rather lovely thing to me, perhaps because I associate it with the banana bread that shy, lonely Charlotte Johanssen brought over for her the Ramsey family in Babysitters Club #13: Hello Mallory, while the majority of Stoneybrook ignored the newcomers, quite racistly. While I didn’t exactly know what banana bread was at the time – we would’ve likely called it loaf cake in New Zealand – something about its compact, sliceable practicality all wrapped in tinfoil and carried over by Charlotte conveyed the sense of neighbourly friendliness better than any other food could’ve.

This is, kinda bafflingly, the FOURTH time I’ve blogged about Banana bread (Nigella’s beautiful recipe in 2008, and then in 2010 a vegan recipe and a highly recommendable Banana-lime Palm Sugar Loaf) and yet this new recipe still has its rightful place. Oh and I say ‘bafflingly’ because I can’t believe I’ve only just now brought up the Babysitters Club connection. Four banana bread recipes itself is not baffling. What’s this one bringing to the table though? It’s simple, it’s strewn with white chocolate, and it has the snuggly scent of cinnamon. It’s also gluten-free, if you want it to be.

Cinnamon White Chocolate Banana Cake

Adapted somewhatish from a recipe in Meat-free Mondays. That book just won’t quit!

125g soft butter
125g sugar (optional – half brown, half white sugar)
2 eggs
3 medium, ripe bananas (or 2 large)
50g roughly chopped white chocolate
170g rice flour, or plain flour 
50g cornflour
2 teaspoons baking powder
1 teaspoon cinnamon
Pinch salt

Set your oven to 180 C/350 F and beat the butter and sugar together till creamy and light. Beat in the eggs, then fold in the bananas and white chocolate. Finally, sift in all the dry ingredients and fold them in gently. Tip the batter into a paper-lined loaf tin, and bake for about 1 1/4 hours.

Something about the magical properties of cornflour make this light, puffy, and with a crisp yet mouth-meltingly tender crust. There might be more to it than that, but I’m pretty sure it’s the cornflour. While I’ll stand up for white chocolate’s deliciousness any day, sometimes being paired with a spice only makes it more delightful, and this is verily the case with the cinnamon. Its warm mellow fragranced-ness against the shards of creamy sweetness is brilliant, and makes me want to pair white chocolate and cinnamon together again in other baking. And soon.


Um, yes, that is a glass bottle with a stripey straw in it. Guess what’s in the bottle? Iced coffee. Part of me is all “but it’s so pretty” and the other half is saying “Ugghh this is so blogger-y”. As always, to prove to myself that form over function could still provide a function, and I wasn’t just using props in my photos for the sake of it, I drank that coffee through the straw. It gave the already fruity, complex brew distinct notes of warm cardboard. But, as Leslie Knope said when she married off two male penguins to each other at the zoo: “I firmly believed it would be cute”.  I think I need to stop guilting myself out over this.

And look, here I am at 6.45am! A blog post under my belt, and the day’s hardly begun. I think I’d still take the sleep though. Fingers crossed for tonight. Which is feeling a long, long way away – oh, did I mention it’s Monday? Cruel, cold Monday? Thank goodness for banana bread, hey?

when 2 become 1

This morning Tim said “Oh yeah, happy…um” and I romantically finished his sentence for him by saying “meh.” We’ve never really done anything particular for it – our first ever Valentine’s Day together years ago involved him saying he’d be working till midnight at his new job at McDonalds and me saying  – I kid you not – “Can they do that? Is that even legal?” Oh naive country gal that I was. Anyway, I don’t need a designated day to tell him how much I like him, he’s just that great!

I am quite the sucker for one foodstuff dressed up as another. Like this idea I had: Ginger Crunch Pikelets. That’s what the title of this blog post refers to by the way. Not Valentine’s Day. In case you were wondering. I like you people, but we’re not that familiar.

Straightening your tablecloth is so uh… bourgeois? Un-creative? Something I didn’t spot at the time of taking this photo?

Well let me bring it back to the subject: the pikelets have all the spicy heat and toffeed sweetness of the biscuity slice, but now with the added frivolousness of being a small round shape, fried in oil. If you do want to make the original slice itself, that’s still a sensible and delicious pursuit, and here’s my Ginger Crunch recipe. And while plain pikelets spread with a pikelet-sized dab of butter are perfect as is, they’re not so sacred that they can’t be tutu-ed with.

I’m very pleased with these. To be witheringly honest with myself, they could do with being a little lighter – maybe buttermilk or half milk half yoghurt could take care of that? If need be, I would guess you could use soymilk too – in fact the one time I made pancakes with soymilk they were the most fluffiest, lightest and satin-surfaced I’d ever had.

Ginger Crunch Pikelets

Recipe by me.

1/4 cup rolled oats
1/2 cup milk, buttermilk, yoghurt or a mixture
1/4 cup water
1 tablespoon golden syrup
1 tablespoon plain oil (I used rice brain)
150g flour
1 teaspoon baking powder
1 1/2 teaspoons ground ginger
1/4 cup demerara/raw sugar
1 egg

Soak the oats in the milk, water and golden syrup while you gather everything else. Whisk in everything except the dry ingredients, then fold them in gently. Fry in heaped tablespoons in a nonstick pan over a lowish heat. When bubbles form on top of the little spheres of cooking batter, use a spatula to ease under their surface and flip them over. Spread with butter if you like, but definitely serve drizzled with more golden syrup. If you don’t have raw sugar regular brown sugar’s fine, but the crunchy nature of it adds a little extra something. 

Also note: altitude/number of years they’ve been sitting in your pantry/brand etc will affect your oats – the mixture shouldn’t be too thick, so if it looks more like scone dough, add more milk. Pikelet batter is pretty forgiving, so you should end up with something edible no matter what happens.

The scattering of oats keeps these densely filling, while the sticky golden syrup and granular raw sugar mellows out the ground ginger’s potent heat, which itself spices up the otherwise plain landscape of the pikelet. I made them for pudding, with the plan of having some leftover to reheat for a mid-morning snack the next day, but they would stand in happily for any meal, I think.

And you can make a pikelet golden syrup sandwich!

So, Whitney Houston, huh? I am really saddened by this news of her death. Mariah Carey has always been the diva I connect with most – might be something to do with my age, even – but Whitney’s vocal flawlessness and control and the conveying of emotion in her songs, from the intense joy of I Wanna Dance With Somebody to the intense stoicism of “they can’t take away my dignity” (seriously, who could get away with using the words “my dignity” in a song? Not many, if any) is something I’ve always appreciated. From a distinct but shady-edged memory of everyone singing I Will Always Love You at a family party, to the amount of times I quote “It’s not right but it’s okay”, Whitney: RIP.

What else has been happening? I got my practical, everyday-applicable gold dress fixed, but couldn’t fix my ability to catch the camera at the wrong time:

This was the least awkward of like, 17 photos. On Friday we had a GGG night (that’s Gin and Gossip Girl) which descended into a 90s YouTube video dance party…on Saturday we watched a whole lot of Veronica Mars…on Sunday we played the board game version of Game of Thrones…The whole weekend was essentially a celebration of television. We are clearly the coolest people you will ever meet.

And something actually from this decade, and yet perhaps even less relevant to many: The Book of Mormon won the Grammy for Broadway cast recording! Yay! Andrew Rannells singing I Believe is adorable! So adorable.
