just twist your hip and do the dip

You know how you learn something and then find you see it everywhere? Like you’ll learn a new word and then hear it in a song and read it in an article and hear someone say it in passing. I recently read a book – The Sense of an Ending – which has a whammy moment when you realise one character had been repressing, or at least not divulging, a particularly significant memory. No sooner had I read this book, when I’m flipping aimlessly, and I do mean aimlessly, through a weekly magazine. And I am confronted with an advertisement bearing the blankly content face of a commemorative Kate Middleton porcelain doll in a wedding dress. And it reminded me of something I haven’t thought about in years and years: that I used to be a little obsessed with those Franklin Mint porcelain dolls and would rip the advertisements out of aunties’ and nanna’s magazines and catalogue them in a folder in alphabetical order (well they all had names, Heather and Rosa and so on) and dream of the day I could own them all. Luckily for my now utter horror at the idea of walking into a room full of expressionless doll eyes staring back at you, I had no disposable income at the age of eight or so, and as such the folder was as far as it went. But isn’t it strange what you forget and remember again – not the traumatic things – but these vivid little slices of your life that remind you exactly who you were and are?

Leaving behind the “I Was an Awkward Awkward” chapters for now, I’d like to bring your attention to hummus. I know, hummus, that ubiquitous but excellent beige lotion, how can it have still more surprises up its sleeve? Well who more reliable to elicit such surprises than my idol Nigella Lawson, who only goes and replaces the tahini (sesame seed paste) with Peanut Butter. Peanut butter has a somewhat brash flavour, but against the mild chickpeas and smoothing yoghurt it mellows out and provides this sweet, nutty, oleaginously compulsive edge to your hummus. I really love tahini – sesame being one of my favourite flavours, but peanut butter doesn’t so much deliver the goods as urgent courier them while wearing appealingly fitted shorts and saying in a warm voice, “I’ve got a big package for you”.

Peanut Butter Hummus

Recipe from Nigella Lawson’s book Kitchen, I’ve simplified it slightly. Really, just play with quantities of the ingredients as they please you. If you’re not able to eat dairy, I’d add an extra tablespoon of water and lemon juice and peanut butter and it’ll be all good.


1 can chickpeas, drained
1 clove garlic
2 tablespoons olive oil
3 tablespoons peanut butter
2 tablespoons lemon juice
3 tablespoons Greek yoghurt
1 teaspoon cumin
Salt

Blend all together thoroughly till smooth. Add a little more yoghurt or water if it’s not spreadable enough.

Because I feel that hummus alone isn’t quite enough to bolster this blog post, a second recipe for you. I’m really sorry that both of these require a blender/food processor – I hate when recipes give directions for making cake batter in a cake mixer when said cake mixers cost many hundred dollars, or when an ice cream recipe finishes with “and then put it in your ice cream maker and follow their instructions” or whatever. I’m sorry. You could effectively crush up the chickpeas with a fork or a potato masher, but the strawberries really need the swift action that only an electric rotating blade can provide. 

What, you don’t have a dedicated hummus knife commemorating the Parihaka War Memorial in Whangarei? Look I’m not saying your party is “ruined” as such…

If you do have a blender though, there aren’t many happier foodstuffs in this world than pink lemonade. I first tried making it with raspberries, and that was great, but strawberries are even more delicious, which is brilliant because they’re also half the price.

Pink Lemonade

A recipe by myself

2 1/2 cups frozen strawberries (bully for you if you’ve got real ones, but it’s winter in NZ right now. And frozen strawberries are really pretty cheap any time of year)

2 1/2 litres of lemonade
Optional: passionfruit syrup, mint leaves

Place the strawberries in a blender and allow them to defrost somewhat. Add 1/2 cup of water and blend till smooth and gloriously pink, adding more water if your blender can’t deal with it. Spatula into a jug and slowly top up with lemonade. The bubbles and the strawberry puree will form scuzzy bubbles on top, just stir it with a wooden spoon to break it up.

And lo, a joyful jugful of deeply pink, wondrously delicious lemonade shot through with the fresh taste of strawberry. A little passionfruit syrup helps sharpen up this berry flavour, and mint leaves are just delicious with nearly anything, but simply strawberries and lemonade on their own are more than fine.
I served both these delights over the weekend at my inaugural Ice Cream Demonstration Party (that’s not necessarily what it’s called but the capital letters make it seem official) where in front of a small group of lovely people I demonstrated and imparted pretty much every particle of knowledge I have about ice cream, taking them through recipes for said ice cream and sauces to go on top, then we all built our own ice cream sundaes and then they went home with a goodie bag. i am the definite feast delight

Apropos of nothing: If – although let’s go with when – I get famous, I should like to do many things. I’d like to start a trend for not having to wear a bra if you don’t want to. Not that I can necessarily “get away” without one, but sometimes on a humid day they just feel so punishing and unfair. And really, if someone pulls you aside and says “look, you’re not wearing a bra and it’s making me really uncomfortable”, I’d wager it says more about them than you, right? Second order of business: try and wangle an OPI HungryandFrozen nailpolish range. Am thinking matte rainbow-coloured dots which look like hundreds and thousands sprinkles, a rich yellow butter colour, perhaps a sophisticated, buff-tinted “Cake Batter”, and something else which still hasn’t fully formed in my brain yet. Nigella-Cardigan-Pink? The colour of those heavy velvet curtains that sweep across a stage before and after a show? Something Claudia Kishi-inspired? The third thing I’ve been thinking about is just buying a huge warehouse somewhere with a huge speaker system, so anytime you want to dance around a room like this, you can hire it for an hour from me. Apart from the high likelihood that my dancing moves and I are occupying it already, that is.

Apropos of nothing, I really enjoy saying apropos of nothing! Indubitably!

Anyway here I am. Can’t hurt to daydream about everything in such minute detail that it can never possibly happen the way I want it to and I end up disillusioned and sad when it doesn’t, right? Right!

In the meantime I am rich in friends and famous in my brain, which is a good start. You know friends are good friends when you see them practically every day but it still feels like something exciting’s going to happen every time you do. As a few of us were coincidentally all going to see the band Bon Iver on the same night I suggested that I cook us all dinner beforehand. Which was perhaps an even more exciting prospect than the concert itself at the time. I just love orchestrating situations where I get to cook for people I like. The finished menu was a logical middle point between maximising on what I had on hand already, what recipes I liked the look of, and what would actually be delicious to eat.

It somehow, despite being entirely created in the space of an hour and a half, all came together to form a spectacular vegan feast. Which I liked so much that I’m going to share with you. All three of these recipes are very loosely based on actual recipes – the first two from the Meat-free Mondays book and the third from Katrina Meynink’s gorgeous Kitchen Coquette book. It’s not that the original recipes didn’t sound perfect as they were, it was all about minimising time taken and money spent. And yes, I did just happen to have pomegranate seeds lying round. In a container in the freezer no less. But if it’s any consolation they were over a year old. So I can be smug, but not that smug.

Lentils are just alright with me, but this is lifted from its admittedly beige earnestness by the juicy pomegranate seeds and smoky, tender eggplant.

Barley, Lentil, and Eggplant with Pomegranate and Mint


1/2 cup brown lentils
1/2 cup barley
1 eggplant
1 onion
3 cloves garlic, crushed
1 tomato, chopped roughly
2 tablespoons chopped preserved lemon or hot lemon pickle (or just some lemon juice)
Seeds of a pomegranate and a handful of mint leaves

Optional – and I did – 1 can cannellini beans or chickpeas to beef (heh) it out. 


Soaking the barley and lentils at least a few hours before you get started will make the cooking process quicker. Boil them together in a pan with plenty of water till tender. Drain, set aside. Slice up the eggplant into chunks, fry in a little oil  – in batches is easier – till browned and softened. Tip them into the lentils and barley. Slice the onion up and in the same frying pan brown it with the garlic. Add the tomato, chilli sauce and lemon, and continue to cook for a little longer. Return the eggplant, lentil and barley to the pan, stir to warm through and season to taste. Serve scattered with pomegranate seeds and shredded mint leaves.

Feel free to just use barley OR lentils. But this is a great way to use up those stupid tail-end packets of things which inevitably sit round for guilty years in your pantry. Free your lentils, and your mind will follow. Actually the whole thing with these recipes is that since I’ve already messed around with them to suit my needs, feel free to do the same. They are very low stress. No watercress? Use rocket. No almonds? Use any other nut. No pomegranate? Sprinkle over feta or just use more mint or something!

Something about blackening the corn and partnering it with toasty-sweet almonds and peppery watercress in this salad is surprisingly spectacular.

Rice, Charred Corn, Avocado, Watercress and Almond Salad


1 cup rice – I used basmati but brown rice would be really good here.
1 cup frozen corn kernels (or you know, however YOU get hold of them)
1/2 cup rice bran oil plus extra for frying
1 teaspoon cinnamon
2 teaspoons chili sauce
1/2 cup whole almonds
1 tablespoon icing sugar
1 teaspoon ground cumin
A handful of watercress leaves, rinsed and chopped
1 avocado, diced


Cook the rice as you usually would, and allow to cool a little. Stir the 1/2 cup oil, the cinnamon and the chili sauce through it, plus plenty of salt. Taste to see if you think it needs any more of anything in particular. Set aside and heat up a frying pan. Mix together the almonds, sugar and cumin and then heat them in the pan till fragrant and toasted. Set aside. Rinse the pan – or don’t – and heat up a tablespoon or two of oil. Throw in the corn kernels and let them fry till some are slightly darkened and scorched in places. They might start to ‘pop’ and jump around a little so watch out. Stir occasionally. Tip them into the rice along with the watercress, almonds, and avocado and mix thoroughly. 

These are just edamame beans and regular green beans cooked in boiling water and stirred through a dressing made of 1 tablespoon shiro miso paste, 1 tablespoon sesame oil, 1 teaspoon honey and a little chopped fresh ginger and garlic. Miso’s intense, fermented flavour is strangely addictive and even more strangely versatile. Here it’s nutted up with sesame and used to coat creamy edamame and crunchy green beans.

I was almost as happy with my dress as I was with anything else. If only there was an Instagram filter called “Cheekbone Finder” or something. But yes, the show, wow. From listening to Bon Iver’s music, I was expecting one guy, one microphone, and maybe a mandolin and a few handkerchiefs. But there was a many-peopled band all outstanding in the field of excellence, a glittering light show, and the singer, Justin, seemed so happy to be here! Which is always an endearing trait in someone you’ve paid a lot of money to see. This might sound weird, but I think my favourite bit was an unsettlingly brilliant saxophone solo, which brought to mind the eeriness of the dinosaur sequence in Fantasia.

And…apropos of something, recently Tim and I were in line for another gig, in front of three guys. From their clothes and piercings and so on, they looked like interesting-enough, open-minded people. And then they started talking. And Tim and I wanted to vomit. I wanted to say something – especially since several of my friends have felt able to speak up to people to tell them what they think recently – but it was late, and there were three of them and two of us, all those kinds of reasons. Tim and I just had to stand there in line and listen. And while I wasn’t up to doing anything that night, I’m able to pass on to you my convictions instead. Please. If you ever hear people saying things so casually like “they aren’t saying yes but they weren’t saying no” and “if they’re that drunk they’re asking for it” or worse – please understand how terrible this is. How it builds. Keeps a particular victim-blaming attitude accepted. I’m not saying this very well but I feel really strongly about it so I’m going to let some other people say it better than I can. If you like pithy analogies, this one might help open your eyes a little. This might make you think about the conflicting messages women are constantly given, and this is the flipside which is told all too little. Eileen Jewell, Shaking All Over. Her voice is deliciously mellow and relaxed and after hearing Wanda Jackson’s version so many times, I like the calmer but still dirty arrangement of this classic.

Christine Ebersole’s voice goes from crystal-clear to shrieky in a matter of seconds while she’s acting her face off in Grey Gardens the musical. Will You is one of the more crystalline moments in the show, and while the song was only written a few years ago it sounds like a lost track from the forties. Beautiful.

This is probably a decent Bon Iver song to listen to if you’ve never heard them before. It was way souped up live!

she gets too hungry, for dinner at eight

I am a tired person these days. It’s because I think about this blog a lot. I think about what I can do on it. I think about whether other people are thinking about it, loving it as much as I do. I stay up late writing stuff. I write stuff early in the morning. I’m not sure if it’s the sort of thing you’re supposed to admit, but it’s true. When I finally go to bed at night, instead of relaxing into a powerful sleep, my silly brain is all “meeean now’s my chance to brainstorm! Get it? I’m a brain! Time to plan a squillion smurfillion things…to stay awake and think. Hard.” My kingdom for a more cooperative brain! (Or as some dry fellow once said, “if I only had a brain!“) (Also I had a late night last night at a party for cool lady Kim’s birthday. Double tiredness! But this was the good kind at least.)
Conversely, I’ll often arrive at needing to make dinner, one of my favourite times of the day, and my brain’ll be all “umm…there’s cookbooks everywhere, and yet…I can’t even?” However this week, despite not sleeping all that much and having a brain whittled down to a nub, I somehow managed to get some spontaneous inspiration happening. So I made sure I remembered what I did. I don’t have the monopoly on tiredness, needing to eat and wanting something delicious all at the same time, and these two hasty dinners I made recently might work for you too.
Spicy Tomatoes and Chickpeas with Coconut Milk.
Fun because: three cans of stuff = dinner. And it takes all of seven minutes and costs hardly anything.
Pasta with Bacon, Pears, Pecans, Rocket
Fun because: you can change heaps of the ingredients for other things you have. 

Spicy Chickpeas with Tomatoes and Coconut Milk


1 can tomatoes
1 can chickpeas
1 can coconut milk 
1 teaspoon each of the following: cumin seeds, coriander seeds, cinnamon, nigella seeds…oh, whatever you like, really, but that’s a good mix)
1 tablespoon chilli sauce
1 onion
Optional – to garnish – plain yoghurt, coriander, more coriander seeds.


Disclosure: my canned tomatoes were the cherry kind, and my chickpeas were “brun” because I go in for fancy stuff like that, but the plainest of plain stuff will be great too.


Slice up the onion, and fry it in a little oil over a good fierce heat till browned. Tip in the drained chickpeas, the tomatoes (with their juice), the spices, and the chilli sauce and let it come to the boil. Simmer away, stirring, for a couple of minutes, then pour in as much coconut milk as you like, stir, and remove from the heat. Divide between two bowls, and top with whatever garnish you fancy. 

We got delicious, quilt-sized garlic naans from Aaina (at 255 Cuba Street) and they were perfect for absorbing up this soupy spicy mess and making it feel like a feast. The mild coconut milk seeps into the spiced up tomatoes, the sturdy chickpeas give it some body – add a little chilli sauce and it’s gonna rock your pants. It’s vegan till you add the yoghurt – which isn’t even necessary, you could just drizzle over whatever’s clung to the coconut milk can – completely gluten free too.



Pasta with Bacon, Pears, Pecans and Rocket


This was inspired by a recipe of Al Brown’s in the latest Cuisine magazine. I admit, I tried getting in touch with my deeply Germanic roots by making Spaetzle, a kind of pasta dish that I love but have only ever had made for me. The recipe didn’t quite work for me…like the pasta ended up delicious but the dough was like the strongest adhesive and wouldn’t go through the colander like it should and was a big complicated messy mess. I recommend you just use regular pasta.


200g pasta
100g streaky bacon, cut into small squares.
1 pear, cored and sliced.
Butter.
Handful of rocket
Handful of pecans
Thyme leaves


Bring a large pan of salted water to the boil, and cook your pasta till…it’s cooked. Meanwhile, heat up a little butter in a saucepan and fry your bacon till nearly crisp, then add the pear slices. Let them get a good amount of heat on each side so they colour up a bit, then tip it all onto a plate and cover with tinfoil to keep warm. Hot trick: tip it onto your plate so you get extra bacony-flavour goodness when it’s all served up. In that same pan, quickly toast the pecans. Drain the pasta thoroughly, add it to the pan along with the bacon and the pears, stir it all together, and divide between two plates. Cover with rocket and thyme leaves and serve. 

It’s one of those dinners that might not look like much – almost like a bunch of different garnishes all piled on top of each other, masquerading as a proper meal. But hear me out. You’ve got the salty, butter-fried crisp bacon, the caramelised and juicily sweet pears, and toasty, softly crunchy pecans all twirled into your pasta. Cover it in a peppery tangle of rocket, both virtuous and visually sprucing and a few sprigs of thyme just because, and it’s honestly tastebud magic right there. 
Apart from how spectacularly excellent it tastes, it’s also versatile as: use whatever pasta you like, for a start, or even something like leftover boiled potatoes that have been fried in butter. The bacon’s optional, the pecans – they aren’t always cheap – could be walnuts or almonds or even sunflower or pumpkin seeds. Rocket could be swapped for spinach or any other green stuff you fancy, the pear could be a green apple…see? 
Despite my brain being like a crumbly old Ryvita, it has been a fantastic weekend – lurking with friends old and new, drinking tea and cider and vodka, making up ice cream, practicing cornrowing Tim’s hair so he can look like Ron Swanson for Halloween (I’m going to be Elphabaaaa!) reading in the sun, admiring Snacks the goldfish, that kind of thing. The kind of weekend you wish it could be every weekend…
…it’s also now time to get started on fulfilling the tasks on my List which I haven’t really properly finalised yet (maybe I should add “finish list” to my list?)

However, I have made my first hummingbird cake – I haven’t tasted it yet but all the ingredients sound amahzing on paper at least. 

like eating glass

I was supposed to have this blog post sorted last night, but by 7.30pm I was a loose-jawed, slumpy mess and didn’t really have what it took to stage a decent blog-comeback. However, I managed to at least get dinner done – the following recipe for Glass Noodles and Edamame – whilst bearing the increasingly shackle-like load of jetlag that I can’t seem to shake. I don’t want to complain about it as such, (oh poor me, I travelled so much and now I’m just too fatigued for words), I just want to draw your attention to the fact that I did make it at all despite wearing a heavy cloak of semi-somnolence, and therefore you should be able to make it on any given day. That said, I understand if exhaustion and unmotivation of the non-travel variety is part of your day-to-day routine. I’m not the only person ever to feel sleepy, or worse, sleepy in the middle of cooking something involving a little concentration, causing you to collapse to your knees into a bowl of soaking noodles and cry ceilingward, What have I doooooooooone?

But this is do-able. Plus, it comes from the Ottolenghi cookbook Plenty, which Tim got me for my birthday. We’d actually also reserved ourselves a table for an evening at Ottolenghi the restaurant on the day after my birthday. (The day of was all booked out. A month in advance.) It was such a cool night. They made a huge fuss of us having come all the way from New Zealand, gave us prime seats, our waiter was genuinely friendly, our food was genuinely amazing. It was also wildly expensive but it’s not the kind of place we go often…or ever. So we put the price in the back of our minds while we feasted on tender shredded brisket, cheese-stuffed zucchini flowers (the first time either of us had tried them), barley with asparagus and radicchio, so many beautiful flavours, followed by a plain but perfect vanilla cheese cake carrying crunchy, sugary, caramelised macadamias. I’d been a fan of Yotam Ottolenghi’s for a while now, and I found it hard not to grin throughout our meal.

Plenty allows me to recreate those beautiful flavours and combinations at home. It’s a completely vegetarian cookbook, with no pudding recipes (yet I love it still) and when I saw the following recipe for Glass Noodles with Edamame Beans, I could see it was one of those dishes that largely relies on your cupboard being stocked up, as opposed to any skill, and therefore is ideal for the first meal after a month away. There’s a little heating and chopping involved, and then suddenly you’ve got this gorgeous piled-up pile of salty-sweet noodles and edamame beans that taste so nutty and creamy they betray the fact that they are actually a vegetable.

I know glass noodles as vermicelli or rice noodles, but kept the name because it sounds kinda pretty. However I removed the “Warm” from the start of the title – maybe I read too many Baby-Sitter’s Club book scenes of Kristy Thomas describing the SMS cafeteria lunch offerings – but whenever I see the word “Warm” in a title (and it does appear a bit, you know, “Warm Salad of Lamb and bla bla bla” etc) I always mentally add the word “socks” afterwards. Warm…socks. Not cool, but there it is. I get frozen edamame beans – soybeans – at the supermarket up on Torrens Terrace or in Moore Wilson (if you’re in Wellington) but if they’re too hard to find, this would still rule with frozen peas as a substitute. That said, my ancient Aunt Daisy cookbook has a recipe for “Soya Bean Rissoles” (easily digestible seems to be their selling point) so they can’t be that obscure, right?

Glass Noodles and Edamame Beans

From Yotam Ottolenghi’s Plenty

  • 200g glass (rice, vermicelli) noodles
  • 2 T sunflower, rice bran or other plain oil
  • 3 garlic cloves, finely diced
  • 300g podded, cooked edamame beans
  • 3 spring onions
  • 1 fresh red chilli, chopped finely
  • 3 T chopped coriander, plus more to serve
  • 3 T shredded mint leaves
  • 3 T toasted sesame seeds

Sauce

  • 2 T grated galangal or fresh root ginger
  • Juice of 4 limes or 1 – 2 big lemons
  • 3 T peanut or rice bran oil
  • 2 T palm sugar, crushed or 1 T dark brown sugar
  • 2 tsp tamarind pulp or paste
  • 1 tsp soy sauce
  • 1 tsp fine sea salt

Soak the noodles in a bowl of hot water for five minutes, or until soft. If, like mine, they don’t soften up right away, tip them into a pot with a bit more water and simmer for a bit. Don’t let them get too soft and collapsing though. Drain.

Whisk together the sauce ingredients in a small bowl.

Heat the sunflower or rice bran oil in a large frying pan or wok, and add the garlic. When it starts to go lightly golden and smell amazing, remove the pan from the heat and add the sauce and the noodles. Gently stir together, so that you incorporate the sauce but don’t crush the noodles, then add the edamame beans, plus the spring onion, chilli, coriander and mint.

Divide between plates or pile onto a platter and scatter over the remaining beans, sesame seeds and coriander.

Notes: I used sambal oelek instead of chilli, lemon instead of lime, and brown sugar instead of palm – and I just didn’t have any coriander or tamarind. My cupboard is pretty well stocked but I’ve been away for a month and wasn’t going to spend heaps on a few ingredients when I could wait till the vege market this Sunday and get them for cheap. I also didn’t use mint because it grows up on the roof at my place and it was raining and freezing and windy and I just didn’t want to go outside to get it.

Even though I wish we were still traveling and doing things like this:

…on a cold and rain-soaked evening I’m so happy to be back in the kitchen, and this is just the recipe to welcome me back to it. The flavours of chilli, ginger, garlic and soy lift the bland, slippery noodles into something substantial and the beans not only look gorgeous, their pistachio-like taste makes this fairly cheap dinner taste luxurious as. As Ottolenghi suggests, you could double the soy content by adding tofu to make it more of a meal, but I loved it as is.

Actually this isn’t even my greatest jet lag achievement. I did manage – somehow – to make caramel ice cream at Mum and Dad’s place on our first day back in the country, and I helped with the feijoa and apple crumble that went with it. Have you ever separated 6 eggs on 2 hours’ sleep? I don’t recommend it, but my drive to make everyone ice cream overrode my drive to be sensible. We did have a great weekend at home, landing at 5.30am only to be whisked up to the Manukau Heads to see Dad’s band Apostrophe play at a school fundraiser. Despite calling to mind something that Coco Solid once mentioned about the particular awkwardness of performing in the daytime, it was my first time seeing the band play and it was very cool. I don’t think it was just the jetlag that made the songs sound so good – between absorbing all those Dad-penned tunes and seeing Mum make up a bread and butter pudding on the spot with bits of leftover hot cross bun and bread rolls, I left for Wellington with a bit of a “my parents are awesome” glow. We managed to see heaps of family on our short time at home which was so great, even if the later it got in the afternoon the less sense we made.

Just checked the clock and it’s 9.20pm which is the latest night I’ve had yet since we got back on Saturday morning – yuss.

I haven’t had time to listen to much since I’ve been back but of course there’s Apostrophe, my dad’s band – they have so many good songs but to be fair, I really can’t judge ’em unbiasedly, anyway the only thing of theirs online is their single The Skeptic, check it out.

Next time: I’ve got a day off on Friday and I’m going to be baking SO many things. Or at least, more than one thing. I’ve missed baking. There might also be a moment-by-moment recount of how I felt during Wicked. I will also be catching up on all the food blogs on Friday, looking forward to all the pending inspiration.

 

i’ve bean waiting so long, to be where i’m going

Have I got a relatively exciting bean salad for you. Bean salad in and of itself isn’t all that thrilling, but compared to other bean salads this one is pretty special. Aaand I think I’ve used up my quota of saying “bean salad” just there. It was never something I sought out as a kid, although it’s not like my tastebuds were all that sophisticated – mind you neither is bean salad. I do remember eying it up at the deli counter of the supermarket. It looked dubious, a pile of small brown and green pebbles bathed generously in a tub of watery vinegar. This recipe is neither dubious nor watery. It’s verging on sexy. Again…relatively.

I found it while searching for something else entirely on Cuisine’s website and was tangentially inspired, thinking it would be an awesome summer dinner – filling, fast, cheap, oven barely required. As I’ve veered well away from the original, you too can muck round with the following recipe. If you want to use cannellini beans or whatever, no worries. If you want to use more than three kinds, be my guest. If you want to use lemon juice instead of cider vinegar because that’s what you’ve got, then you’re more than welcome to. I included the avocado oil and nigella seeds because I got them for Christmas (thanks, Mum and Dad!) but also because I wanted their respective mellow richness and subtle oniony kick. However you use what you like. As long as there’s some form of bean involved, otherwise…you’re not even really making this recipe at all.
Bean Salad with Poppyseed Dressing

Inspired by this recipe by Fiona Smith from Cuisine magazine.

1 can borlotti beans
1 can chickpeas (I found some super intriguing red chickpeas on special, but regular is obviously fine.)
Roughly 1 cup frozen edamame/soybeans (I say frozen because I presume that’s how you got ’em) You could use frozen peas or broad beans instead.
Handful of almonds
Mint, to serve

Cook your soybeans in boiling water – I tend to throw the beans and the water in the pan at the same time so they all heat up together, as I imagine it’ll shave a couple of minutes off the cooking time. Drain and refresh under cold water. In a hot pan – you can use the same one once the beans are drained – briefly toast the almonds, and then slice up roughly.

Dressing:

3 tablespoons decent-tasting oil. I used avocado, but olive or peanut oil would be great.
2 tablespoons cider vinegar (or lemon or lime juice)
1 tablespoon honey
2 tablespoons poppyseeds
1 fat clove garlic, finely chopped
A pinch of nigella seeds OR cumin seeds (optional)
Salt and pepper to taste.

In a large bowl, whisk together the oil, the vinegar, and the honey. Tip in the poppyseeds, the garlic, the nigella seeds if using and a pinch of seasalt (or a small pinch of regular salt) plus some pepper if you like. Whisk again. Drain the two cans of beans from their creepy can-liquid, and tip into the bowl of dressing along with the cooked soybeans. Using a spatula or large spoon, carefully fold the lot together so that everything becomes properly covered with the dressing, but none of the canned beans get too crushed.

Transfer into the bowl you’re going to serve it from, and top with the almonds and the mint. Or just add both to the bowl you’ve mixed it in if you want to save on dishes.

This salad is brilliant – light, filling, flavoursome, and kinda pretty as far as bean salads go. There’s something texturally satisfying about the combination of soft canned beans and the bite-ier, nutty green soybeans. The dressing also pleases, with its balance of sweet, sharp, salty, rich, and crunchy, and soaks flavoursomely into the otherwise mild beans. The almonds and mint are really just there to make it seem more exciting (something about a plate of beans doesn’t seem like anyone’s first choice) but contribute in a way that you’d want them there every time.
This made enough for dinner alongside some brown rice and sliced, fried zucchini, with the leftover rice stirred into the beans to take for dinner at the Botanic Gardens. It was night one of the ASB Gardens Magic and we saw the wonderful Nudge (standing in for the Thomas Oliver Band). It started to rain about ten minutes into their show but we stuck around and had a fantastic night, first watching people dance round in the rain and then joining in ourselves.
Speaking of rain, but in more horrifying quantities, the dreadful flooding in Australia has been on my mind a lot. The number of deaths seems to rise like the water itself, and it must be awful to have everything you know just…underwater. For what it’s worth, my heart goes out to everyone affected by it (including all the animals), and I hope this land of extreme weather settles down soon.
Having finished my first week back at work (hitting the ground at a brisk canter, this is a busy time for us) I can only conclude that my heart and brain are both at the beach. Feels like a squillion years ago that the most taxing decision I had was which book to read (answer: Donna Tartt’s The Little Friend, Witi Ihimaera’s Tangi, a tribute to Jennifer Paterson, and half of Graham Greene’s Brighton Rock.)

20th century soy

After all those feijoa brownies – which on one particular day served as both my breakfast and dinner, all I can say is that the heart wants what the heart wants – I thought I’d rekindle my relationship with tofu, get some soy back in my bloodstream. The stuff I like to get comes from the vege market on Dixon/Willis Street and is $4 for a generous block of four squares, or fillets if you like, of firm tofu.

We went to see Alice in Wonderland in 3D that night and I wanted a fast-moving dinner planned for when we returned home. It all worked out fantastically – crisp slices of matzoh-crumbed tofu resting on a bed, no, a beanbag of chickpea and golden sultana-studded couscous, and a garlicky tahini sauce on top. It was all made very quickly – such is the joy of couscous, instantly puffing itself up into a meal, and tofu, which has no bacteria squatting within its meatless walls to be smoked out in the cooking process, cutting down on pan-time.

Yes, the photos aren’t great but 1) I was tired and hungry and 2) all that beige. What would you do? There’s only so much coriander in my fridge.
Tofu with Garlic Tahini, Couscous and Chickpeas
Half a block of firm tofu
Breadcrumbs
3 fat cloves garlic
2 Tablespoons tahini
Pinch smoked paprika
1/2 cup couscous
Boiling water
1 tin chickpeas
1/3 cup golden sultanas (you could use normal sultanas, or currants, or dried cranberries etc)
1 teaspoon ground cinnamon
1 teaspoon ground cumin
Handful almonds (or other nuts)
Tip the couscous into a bowl, pour over boiling water to cover and sit a plate on top while you get on with the tofu. When you return to it, remove the plate and fluff up the couscous with a fork. Stir in the drained can of chickpeas and the sultanas (or whatever you’re using instead), the spices plus salt to taste.

Wrap the tofu in a couple of paper towels and press on it to let some of the moisture absorb away. Bin the paper and slice up the tofu. Put your breadcrumbs (I used matzoh meal) onto a plate and press the tofu slices into them, covering both sides of each slice. Heat a tablespoon or two of olive oil till good and hot, and fry the slices till golden, a couple of minutes each side.

Finally, crush or finely chop the garlic cloves, and fry gently (in the same pan that you did the tofu in is fine). Stir in the tahini and a tablespoon of water and adding as much water as you like till you have a smoothish pale sauce. Add the paprika. Serve the tofu slices on top of the couscous with the sauce drizzled over. Sprinkle with the almonds, chopped, and a handful of torn coriander.
The couscous thing was adapted from a Nigella Lawson recipe and was delicious- buttery chickpeas, tender couscous grains and chewy, sweet golden sultanas. I’m always happy to be eating tofu but pressing the crumbs into it provided a bit more texture and welcome crunch. The sauce tied it all together with its garlic smoothness, although undeniably it was a really ugly colour…even with the ‘sprinkle-the-coriander-over’ routine I still couldn’t disguise its utter beige-ity.
We ate this for dinner, as I said, after seeing Alice in Wonderland in 3D. It was my first 3D movie (yeah, so I still haven’t seen Avatar) and once I’d stopped jumping every time a leaf swirled out in front of me off the screen it was really fun. Because I loved the Alice books so much as a youngster I was a bit suspicious about what a film version could offer me, especially since the trailer made it look pretty rubbish but…I absolutely loved it. Not since Step Up 2: The Streets have I been so pleasantly surprised by a film. It was visually gorgeous for a start, but the acting and the fleshed-out characters really made it a wonderful experience. Mia Waisakowska’s Alice is powerful, at first simply reacting to what’s around her then gradually becoming more powerful, overall a highly compelling character. Anne Hathaway and Helena Bonham Carter are stunning queens. Apparently Bonham-Carter drew inspiration from Nigella for her role, and yeah, I could see it. And Johnny Depp is as captivating as, you know, he ALWAYS is. It drooped occasionally but the only thing I really didn’t like about it was the Avril Lavigne song that blasts immediately over the ending credits. It’s so bad that it’s like a parody of an awful song rather than just a simply awful song. Disney kindly showed us several fancy trailers for upcoming 3D films prior to Alice in Wonderland starting, including Toy Story 3, something about owls, and yet another Shrek sequel. I wonder if 3D is proving to be an exciting platform for companies to re-thrash already thrashed franchises…

Martha by Rufus Wainwright from his new album All Days Are Nights: Songs For Lulu. I love Wainwright’s music, his theatrical imagery and endless voice, so a new album is always a bit of a treat. This is just him and a piano, not sparse in the slightest, I’m not sure he could do ‘sparse’ but utterly beautiful and stripped of any real excess. Martha, presumably named for his sister, is one particularly affecting track on this album, the first he’s put out there since his mother’s death earlier this year.
Night Hawkes from Wellingtonian Red Steer’s latest EP, The Fever Fold. It’s an exciting track with an enviable beat that sneaks in partway through and makes me want to choreograph something. Tim reviewed it at The Corner, an NZ website so awesome that we both write for it, and you can even download the EP for free once you’re done reading up on it (and my review of MGMT’s Congratulations, there’s no free download but I do reference Hair, almost as exciting…)
Sleigh Bells’ Tell Em, crunchier than sandpaper and very fun. Their relentless fuzzity could be hard on the ears but as someone who grew up rural, ears pressed to the radio at night with one finger slowly inching the tuner round to pick up any kind of signal, it all makes sense to me.
Do you know what I’m emphatically not listening to? Ali Farka Toure and Toumani Diabate’s Ali and Toumani, the collaboration that has recently been released, five year’s on from Toure’s death. We walked from the top of Cuba Street to the bottom of Lambton Quay at the other end of town, entering every single music shop we found and not one place had it. I know, I should have bought it sooner…

crouton, crouton, crunchy friend in a liquid broth

We had a power outage this afternoon in Wellington. I’m glad I wasn’t stuck in an elevator when it struck, or halfway through roasting a chicken, because that would not have been fun at all. No drama for me though – all it meant was sitting round in the foyer at work reading up on policies and then scooting home early. When I got there the new Cuisine magazine had arrived in the mail, like a warm gamma ray of electricity in an otherwise dimly lit afternoon. We’re heading up to Auckland tomorrow so I didn’t want to make anything huge for dinner that would leave us with piles of leftovers. I found this soup recipe within the pages of Cuisine – and yes, it has been cold enough lately in Wellington to start getting all soupy again – and something about the complete simplicity of the ingredients appealed to me.
The recipe was a bit oddly vague in places so the following is slightly adapted. This recipe is boxfresh – only Cuisine subscribers will have seen it so far so…scoop!
Roast Garlic, White Bean, and Bread Soup

From the May issue of Cuisine (one day they’ll interview me, one day!)

20 cloves garlic (try to get really good stuff that will actually taste like garlic)
2 large onions
1 teaspoon thyme leaves
1 teaspoon sweet smoked paprika
1 litre chicken, vegetable, or (my favourite) porcini stock
400g tin butter beans or cannellini beans, drained and rinsed
Parsely and chervil to serve (I used basil, it’s what I had)
1 cup sourdough croutons

Peel the garlic cloves and roast them in a little olive oil at 180 C/350 F for about half an hour till soft. I did this by wrapping them into a pouch of tinfoil and then wrapping that in another layer of tinfoil – keeps them soft and saves on dishes.

Once this is on its way, slice the onions into half-moons and gently fry in a little olive oil till soft and golden. This will take a while, so by the time they’re good and soft the garlic should be ready. Mash the cloves with a fork (including the oil they were roasted in) and add them to the pan along with the thyme and the paprika. Pour in the stock, bring to a simmer, and tip in the beans. Simmer till the beans are well heated through and season well. Serve with the parsley, chervil and croutons (I didn’t have sourdough so just used some regular bread, cut into cubes and tossed with a little olive oil, and chucked them in the oven which I’d just turned off, the remaining heat turned them into croutons.)

Serves about 6. Nice with a bread roll or scone on the side.
This made for a seriously perfect chilly-evening dinner, the ingredients coming together to make a hearty but still elegant soup that seemed awesomely European, even though I have no real clue if this has any actual continental background or if the author just made it up on the spot. Sometimes just feeling European is enough. The softly flavoured beans, the fantastically garlicky broth, and the still-crisp croutons sinking into it were a rather stunning combination. Worth mucking round with bits of garlic for. This recipe reminded me why soup is so brilliant, even if it’s not as sexy as some other dinner options.
So, like I said, we’re heading up to Auckland tomorrow. I can’t wait to catch up with the whanau – I haven’t been home since Laneways and it’s really not very often that I get to go up to Auckland just to see family without any work agenda. We’re going to see the Auckland Music Theatre production of RENT – and when I say we, I mean my whole family and Tim – and I am so excited about seeing it on a big stage by such a renowned company. I don’t need to outline how much I love RENT here, you know I’ve done it enough before, and I don’t need anyone to outline its shortcomings to me – I’m well aware of them too. I’m a little trepidatious about how this cast is going to work out but I think overall it will be a very, very good time. And I’m just really happy to see RENT being performed on such a visible scale in New Zealand. Between this, and Idina Menzel appearing on Glee, it feels like it’s all starting to come together…

Watching Erykah Badu makes me never want to cut my hair ever again. Found out today that Common is doing a couple of shows in Auckland in June, quiiite keen to go along…
Superboy and the Invisible Girl from the Broadway cast recording of Next To Normal. This was the very first song from this musical that I ever heard, and it had been a long time since I’d heard lyrics this beautiful and innovative and poetic in any genre of music, not to mention a guitar riff as alluring. OH how I’d love to see this show, Alice Ripley and the rest of the stunning cast will have to amaze me from afar till such time as I do…

to yoga, to yoghurt, to rice and beans and cheese

Today I spilled boiling hot tea on myself three times (and once on my office chair). I burnt my left hand on a hot pan while cooking dinner and whacked the other hand on the corner of the bench as I walked into it instead of past it. Finally I dropped beetroot on our telephone. Truly. It’s like I’m in a Florence & The Machine song or something. I’m not sure if clumsiness begets more clumsiness – I know from experience that it’s really, really easy to have one thing go wrong in the morning and then not even give the rest of the day a chance to do right by you, when that happens there’s no doubt you’re going to walk into doorframes. But today I woke up feeling relatively optimistic. I guess it just shows…I’m plain clumsy.

Such clumsiness is partially the reason why you’re more likely to see recipes on this blog that don’t involve sugar thermometers or weighing egg whites or…you know, that sort of thing. Rice and Beans involves – at least the way I make it – none of the above. It’s stress-free, one-pan, traditional comfort food. Not traditional to me personally, but sometimes just knowing it’s comfort food to someone is in itself comforting…right? And I always have room for adopting new traditions.

Rice and Beans

I kind of made this up on the fly, inspired by a dish I had at the amazingly good Amigos on Tory Street.

Heat a wide, non-stick pan and toss in a finely chopped onion and plenty of finely chopped garlic. The first time I made this I added a diced carrot, the second time I added a diced zucchini. Once this has softened a little, without browning too much, add a pinch of smoked paprika, a teaspoon of wholegrain mustard, a teaspoon of coriander seeds and 2/3 cup of long grain rice and stir through. Pour in 250mls water, cover, and simmer for five minutes. Add more water, stir, cover – the kind of rice you use affects the amount of water you need and basmati seems to need more water than other kinds. Add a splash of beer, a drained tin of corn kernels and a drained tin of red beans. Add more liquid if the rice still needs it, partially cover and let it simmer over a low heat for a further ten minutes. Serves 2 generously. Maybe cover with feathery, torn coriander leaves or stir grated cheese through if you like.

This is one of the cheapest, nicest, heartiest dinners you can make for yourself. It’s quicker if you use canned beans but cheaper if you take the time to cook up dried – up to you. The savoury warmth of the spices and the beer against the soft, grainy beans and rice is simple but incredible. And, as you will know once I’m done telling you, rice and beans are quoted in La Vie Boheme which put the idea in my head in the first place. (Truly. Was listening to it, thought, “huh, am now hungry for rice and beans”. Power of suggestion, right there.)

Sunny Santa Fe would be…nice

While you’re buying red beans for the above recipe, you might as well stock up good and proper for this Santa Fe Ceasar Salad. The recipe comes from Simon Rimmer’s The Accidental Vegetarian, and the first hundred times I flicked past it I was all “hmm, bit random” but all of a sudden on flick-through #101 it seemed like a something I wanted to try. Allow me to fast-track this process for you and just tell you to make it already.

Santa Fe Ceasar Salad

I didn’t use any chillies. I had some pita bread that I used instead of tortillas, and I didn’t have any parmesan to hand so just left it out. Still so good.

1 Cos lettuce, trimmed
2 soft corn tortillas
1 tin pinto or kidney beans, drained
2 red chillies, deseeded and chopped
1 ripe avocado, chopped
fresh coriander leaves

Dressing:

125mls good mayonnaise
125mls plain unsweetened yoghurt
1 garlic clove, crushed
Juice of 1 lime or lemon
2 Tablespoons white vinegar
100g freshly grated parmesan cheese

Whisk dressing ingredients together, set aside. Break up the corn tortillas, dry-fry in a hot pan till a little charred. Tear up the lettuce leaves, place in a bowl with the cooked tortillas, drained beans, avocado and chillies. Fold through the dressing, top with coriander leaves and sprinkle with parmesan to serve.




Clearly, the dressing is sublime, what with the eggy, oily mayonnaise, rich garlic and sharp vinegar coming together. The crunch of tortilla croutons against those grainy red beans and the crisp lettuce is marvelous. It’s surprisingly filling and while not entirely healthy, you could certainly do worse. You could have an actual ceasar salad.

I love this bit of the musical so much that I’m going to direct lucky you to both a stealthy clip of the Original Broadway Cast in 1996 and the altogether shinier 2005 film version where most of the still-stunning original cast reprised their roles. Oh sure, you could be snide about a bunch of self-titled bohemians prancing about shouting out their carefully chosen influences, I say this is laziness and it’s much better to look beyond that and actually love it for the joyfulness, the inclusiveness, the catchiness, and the awesomeness of rhyming “German wine, turpentine, Gertrude Stein”

Laurie Anderson’s O Superman which you can find on the album Big Science. Breathy but direct, strangely meditative, this song made itself known to me via a few different channels – a John Peel compilation, an American Lit paper with a delightfully passionate teacher (“Language! It’s a virus!”) and RENT (as in, all roads lead to) with Idina Menzel’s character Maureen being clearly something of an homage to Anderson as witnessed in the sublime Over The Moon. Seeing The Groove Guide twitter about this song today, plus hearing another of her songs on Radio Active this evening made it feel like I’d be lying if I didn’t put it down here.

Bucky Done Gun by M.I.A from her album Arular. I first saw the music video to this song in a hotel room in Germany in 2005, it’s as acid-bright as her hand-penned album artwork. It was about the most exciting thing I’d heard in a year clogged with Razorlight et al. Five years on it still thrills and I still wish I could handle a jumpsuit like her.

Matthew and Son. It’s my absolute favourite Cat Stevens song. You know I could tell you why, but I’ll let Mr Cat Steven’s snake hips in this video do the talking for me.

plantain in vain

I don’t know why, or what it says about me, but I go through these intense, whirlwind infatuations with foodstuffs, consume vast amounts of them, and then move on, breaking it off as fast as it started. There was lentils, then oats…later tofu followed by soy products in general…then plantains. At the moment it’s tahini. Make of this what you will. The only good thing we can take from this is that my eating patterns usually settle into something more normal afterwards. Like, not soy products six times a day. This post will outline my brief but heady flirtation with plantains.

As far as food goes – as far as any old thing goes, in fact – plantains are pretty special. They look like bananas, but clenched and stumpy. Like a banana that has tensed up in anticipation of getting a punch to the face. They’re infomercial-tastic in their multipurposeness. They start off green, tight-skinned, firm and savoury, with a flavour echoing kumara (or sweet potato.) Then they progress into a yellow shade, becoming sweeter – but wait there’s more! They finally blacken, becoming even softer and more sweet in the process. Something particularly cool about the plantain is that they have similar complex carbohydrates that you’d find in a potato, but they cook in about ten seconds flat. If you have the deep misfortune to be a coeliac type-one diabetic, you could do well to look these up.

I grabbed them on a whim from our local supermarket because they were cheap and intriguing, like all good things in life. Unfortunately they don’t seem to be stocking them any more. The lesson is – I should have updated this blog sooner. However bear in mind that a lot of the time, bananas can be readily substituted for plantains – even in savoury dishes. The following though, is something you’ll have to get the actual article for. I first dipped my toe in the water by taking firm green plantains, peeling them, slicing them thickly and frying them in a sizzling dab of butter and drop of rice bran oil till they were golden and crisp on the outside.

And there you have it. Looks like banana, tastes like potato. Truly. They cook up in about five minutes, but have that same solid, fluffy bite of a baked potato. With a banana’s potassium! This made a fantastically sunny side dish to something – I can’t even remember what it was now – and was repeated several times over in the following days.

Following an idea from Simon Rimmer’s The Accidental Vegetarian, I tried stirring some fried, sliced plantains through dahl made with red lentils. Amazingly, surprisingly good. The graininess of the lentils and the fried plantains worked excellently together. However the photos I took were kinda heinous and I won’t subject you to them. You’re better off without them.

Realising I’d enthusiastically brought far more plantains than I could really deal with, and that they were ripening with alarming speed, I decided to use them for sweeter pursuits, and turned them into Plantain Ice Cream. A cursory Google search didn’t throw forward any recipes so I made up my own. I threw about 6 ripe, soft plantains into the food processor and blended them till smooth. I then added 2 crumbly tablespoons muscovado sugar and 2 tablespoons of juice from a can of pineapples and continued to process till it was light, fluffy and moussy. I considered adding some coconut milk but decided to leave well alone and not be so damn obvious with my flavour pairings. When I say moussy – the blended plantains really were curiously aerated and could actually have been chilled and served as some kind intensely natural alternative to those powdery, whizzed up instant puddings of my youth.

And then I froze it.

Having made virtuous ice creams before of fruit and not much else, I remembered how utterly rock-hard they set, and had intended to give this a cursory second blitz in the food processor before tasting it. Well there must be some enzyme in plantains which makes them awesomer than other fruit because it was perfectly spoonable straight from the freezer. Curiouser and curiouser!

And completely, amazingly delicious. The fun thing about it is that you’re more or less eating just fruit, which is quite the exciting concept to grasp when your brain is sending “ICE CREAM, OOH BABY BABY” messages around your body. It tastes sugary, but it’s pretty damn healthy. In terms of taste, sure it’s banana-y, but the plantain is somehow zestier, zippier, (apologies for the supercilious vagueness of my description there) almost citrussy compared to the banana. Which is not to say that you couldn’t get perfectly fine ice cream out of a banana, I’ve done it myself and you may substitute freely if plantains aren’t available. Just make sure you process it again after it has frozen, to break up the ice crystals it will form.

I just realised that I’ve purposefully not included a photo of the dhal that I snapped just before it was eaten because it was terrible, whereas these carefully styled photos of ice cream are here on display. In the past I might have obstinately included the terrible photo of the lentils simply because I have this feeling that blogging about what you’re cooking and eating should show what you’re eating as it exists in real life, not how it looks in a studio set-up, painstakingly lit and strewn with vanilla beans or…autumn leaves or something. And yet here I am, choosing the created over the real. I mean, I can assure you that I stood there leaning on the windowsill, eating the ice cream while I was taking photos of it, but it was in my bedroom, on my chest of drawers, and that blue fabric is a scarf of mine. Eh. I’m not quite sure where I’m going with this. I’d like to think I’m relatively principled in my aims for this blog. But ice cream is prettier than under-exposed, grainy CCTV-esque footage of lentils, let’s face it.

I guess I shouldn’t get so wound up about stuff I can’t really explain adequately. All that aside, the ice cream is an ideal use of this beguiling fruit and worth letting them sit around to ripen for. Cooling, refreshing, not at all heavy and arrestingly delicious. Thus…if you see plantains at your local market or whatever, don’t be afraid of them. They’re cool. Take a walk on the wild side.

Tim and I just got back from seeing Elaine Paige live in concert. What a night. She was so dynamic, so engaged, so sparklingly classy and in such good voice. I know I joked a while back that I’m surprised she didn’t play Elphaba in the London transfer of Wicked, but truly – she has been in so many shows, and it was amazing to hear a kind of retrospective of many of these. As she was singing Don’t Cry For Me Argentina, I reflected on how astounding it is that I have been able to see the original London and the original Broadway stars of Evita sing this song in less than six months, in New Zealand – Patti LuPone back in July, and now Elaine Paige. She didn’t sing Nobody’s Side, as I’d hoped, suspecting a live version would have more passion and soul than her strangely (or not so strangely, really) sterile pop version. Instead she came out and sang Someone Else’s Story, and then I Know Him So Well, with the orchestra filling in on the other part. Well, I guess she had to do that one. There were so many classic songs she gave us that it was hard to keep track but a highlight was when she poured herself into the character of Edith Piaf and gave a stunning rendition of Je Ne Regrette Rien. It was an incredible night and…we were easily the youngest there. I felt lucky to be a part of it all.

If you get the chance, check out Glee on TV3 on Friday nights at 7.30pm (with repeats on C4TV at the same time on Wednesdays). It’s a bit strange to me to see all these Broadway stars plastered across New Zealand media channels and hearing people talk about them. Not in a snobby way, like I don’t want anyone to know about them – but literally in a strange, blinky kind of way. I double-take every time I see a picture of Lea Michelle or Matthew Morrison in a local magazine. I’m just used to a large chunk of the pop-culture stuff I like being completely obscure to the general population. If it means that things like choirs and singing and musical theatre and dancing are made to seem okay and ‘cool’ to young people, then bring it on. All that aside, I’ve seen most of season one already and it is sharp as a tack and great fun. Find it!

But this song from it, oh my. I’m obsessed with it. Don’t even try to listen to it or you will be too. It’s beautiful.

Okay, the lyrics to the verses are kind of useless, and it is maybe derivative and will probably get ridiculously overplayed, and normally the only music from Big Pink I’m interested in is the one coming from The Band but all that aside…WHAT a chorus.

it’s all grand and it’s all green

So the best place to buy tofu as far as I can ascertain is the vege market on a Sunday. I branched out this week and went for soft tofu instead of firm; the name doesn’t lie. It near on falls to pieces if you look at it sideways. I guess it’s kind of the minced beef to firm tofu’s rump steak.

I ended up with a whole lot of root vegetables that needed eating on Sunday night. Usually my fallback option in this situation is some kind of pseudo-Moroccan would-be tagine-esque thing, which is seriously what I thought I was cooking last night until I realised it had actually shifted direction altogether into a curry. It’s a fine line – all that cumin, tumeric, coriander… suddenly I found myself wondering whether I should add more tomatoes and feta cheese or biff in a can of coconut milk. Coconut milk won out and I suddenly had this rather gorgeous vegan curry on my hands.

I defrosted some unshelled soybeans (I go through bags of them these days) and popped the beans within into the stew for a little colour contrast…to stop it being overwhelmingly like a braised curtain from the 70s (or, in fact, the curtains I remember us having at home while I was growing up – I have distinct memories of some yellow and brown floral motif…Mum?) The soybeans were awesomely elphaba-green against the earthy vegetables, their colour softened by the coconut milk.

While licking the lid of the coconut milk tin, to catch the sneaky extraneous cream that gathers there, it occurred to me that chocolate ice cream made with coconut milk could potentially be mindblowingly nice. Especially with chunks of milk chocolate and toasted coconut shreds, like a posh version of the Choc Bar ice creams of my youth (and occasional nights in town – for some reason I always crave ice cream if I’m out and about of an evening, you can keep your kebabs and pies thank you). If you haven’t had a Choc Bar it’s basically the above but in a $2.50 icecream-on-a-stick form and laced with palm oil (yeah, I went there. And while I was there, through rigorous testing, discovered that Whittaker’s white chocolate is comparitively amazing.)

The recipe for this suddenly-curry is chilled out, the only thing I measured out with any strict attention to detail was the rice. Nevertheless I’ll tell you exactly what I did in case the idea takes your fancy. It made a fantastic relaxed Sunday dinner. Warming and hearty, the creaminess of the coconut milk soaking into the ridiculous amount of vegetables (seven veges – eight if you count the tofu, which you might as well.) You basically can’t get it wrong which is also nice.

Root Vegetable Curry with Tofu and Soybeans

1 Onion
3 garlic cloves
1 swede (is Swede a root vegetable?)* diced
1 carrot, diced
1 parsnip, chopped
1 kumara, diced thickly
1/2 a cauliflower, chopped into small florets
Good handful soybeans

2 teaspoons cumin seeds
2 teaspoons coriander seeds
2 teaspoons tumeric
1 teaspoon ginger
1 red chilli, seeded and chopped (optional if it’s not your thing)
Zest and juice of a lime
1-2 teaspoons of honey

1 tin crushed tomatoes
1 tin coconut milk
As much tofu as you like

Chop onion and garlic finely and gently saute in a wide pan. Once it has softened a little, add the spices, chilli, honey and lime juice. This will caramelise the onions slightly, you want to keep stirring it so the spices don’t char.

Add the vegetables at this point and stir thoroughly to coat them in the spicy onion mixture which by now will be quite dry. Tip in the tin of tomatoes, half fill the tin with water and swish it into the pan. Stir, cover and allow to simmer till the veges are tender (the swedes are the slowest to kick into action I’ve found).

Stir in the podded soybeans, tofu, and as much coconut milk as you like. Allow to simmer for ten minutes or so. Serve over rice (or ree-cheh if you will)

The vegetables (and inevitably, my entire face) all stained yellow by tumeric, the coriander seeds providing bursts of subtle citrus to complement the lime, the strident warmth of the spices cutting through the creamy coconut…the emerald-bright soybeans doing no wrong as per usual…

Tim: They’re just like sheep. They bleed.
Me: Yeah, but you cut open a fish and there’s the skeleton, but it’s just…surrounded by fish fillets.
Tim: I was thinking more like fish fingers.
Me: Yeah. Tightly woven fish fingers.

Tim and I went to see Wizard of Oz at Embassy cinema yesterday afternoon. It was wonderful seeing it on a big screen, partying like it was 1939. The technicolour made me gasp and the Wicked Witch was still as terrifying as I remember from my youth. But, this is the first time I’ve watched this film since reading the jaw-dropping Wicked and making a connection with the musical of the same name. And it was impossible to remove that context, to view it without that lens. Why does no one show sympathy when the Wicked Witch’s sister has died? Why did the Wizard get away with lying like that? How is Glinda so ‘good’ when, let’s face it, she appears to be on valium? She can hardly connect with Dorothy’s feelings of fear – although let’s also face the fact that the film wouldn’t have been so satisfying if, 23 minutes in, Dorothy was safely assisted back to Kansas.)

I actually cried during Somewhere Over The Rainbow (Judy Garland – so tragic! And it’s a beautiful song). And again when the Witch dies – it’s an emotionally fraught moment! I couldn’t help but imagine Glinda somewhere behind a curtain or pillar watching it happen a la the musical. Or the Witch being frantic by lack of sleep and an inability to communicate effectively a la the book. And I might have cried again when Dorothy said goodbye to the Tin Woodsman, Scarecrow and Cowardly Lion. (Who, in retrospect, are deeply camp, yes? Also: Fiyeeeeeeeroooooo!) I really never cry in films or books or things like that so I’m always a bit interested to note when I do. And…I really want to see Wicked now. I know, it’s so done by all the cool people already but as I’ve said many times, it’s not as easy when you’re in New Zealand.

But if you’ve made it to this segment of the blog unsullied by confusion then you’re doing pretty well, all things considered. Also, Wikipedia it, my children.)

Rez, by Underworld. It’s on this compilation from the nineties that I found. I wish I’d had this compilation back in the actual 90s because it would have made life a lot easier. Instead I lay awake at night with my ear pressed to the radio and its hopelessly crackly signal, waiting for Flagpole Sitta – back in the days before the internet when I didn’t even know what the song was called, but the lyrics “the agony and the irony they’re killing me” seemed so meaningful to a 13 year old – or something by Radiohead to come on. Anyway Rez by Underworld is incredible – like what I imagine the fairies from Shirley Barber’s beautiful picture books would dance to if they went to a rave on a lily pad. See?

Galang by MIA from Arular. Have been a fan of hers since I saw the video for Bucky Done Gun in a hotel room in Germany in the summer of 2005. Didn’t realise music was capable of sounding like that.

Is it bad that I have this urge to make some kind of dish (probably ice cream, my default flavour-carrier) heavily featuring galangal so that I can use galangalangalang as my blog post title?
