This soup actually cured my cold. Either that or my cold was on its way out and the bold quantities of garlic, ginger, and chilli in this soup merely opened the door for it, put its hand in the small of its back (the soup’s hand, the cold’s back…I think) and kindly but firmly steered it outwards.

Soup isn’t always the most exciting thing to have for dinner – it’s generally never fried, crispy, crunchy, chocolate dipped, or any of those things that can be so, so good about eating. However this recipe is courtesy of Yotam Ottolenghi, whose way with food is always exciting. That said, you’ve got to make sure you really read the ingredient list, simple as it looks, and don’t miss anything out. Each thing, from the sticks of celery to the bay leaves play their important part, allowing the soup to neatly dodge the whole “wait, what? This is just bits of herbs floating in warm water” vibe.
Unfortunately I can’t avoid my “awful low-lighting and also prosaic soup composition photos” vibe. First comes the better control of photography on a Winter’s night, then comes the better composition. I promise you I’m reading…well, looking for, my camera’s instruction manual.
Garlic Soup

From Yotam Ottolenghi’s Plenty

Serves 4

4 shallots (or an onion) finely sliced
3 celery sticks, finely chopped
40g butter (optional – just use the oil if you like)
2 T olive oil
25 garlic cloves, finely sliced (yes, peeled and sliced, sorry)
2 tsp finely chopped fresh ginger root
1 tsp finely chopped thyme leaves
200ml white wine
generous pinch saffron threads (optional…because I accidentally left it out)
4 bay leaves
1 litre good-quality vegetable stock
1/2 tsp sea salt
Parsely, coriander and Greek yoghurt and harissa to serve.

Fry your shallots or onions and celery in the butter and oil till soft and translucent – keep an eye on them, don’t let them turn brown. Add the garlic and continue to cook over a low heat, then stir in the ginger and thyme, followed by the wine which will bubble up and reduce down a bit. Then add the saffron, bay leaves, salt and stock and simmer for about 10 minutes.

Note: I acknowledge peeling and slicing all that garlic is a big pain, but it’s worth it in terms of flavour. Maybe a buddy you can enlist, in exchange for feeding them soup?
Ottolenghi says to blitz with a hand blender or in a food processor but I didn’t have the energy for that – all the lifting and the assembling and the cleaning on a cold dark night…and it seemed just fine as it was.
As I said, every ingredient is important – the wine against the hot pan, evaporating into concentrated savoury goodness, the vigorous burst of ginger heat, the softened, traditional flavours of the onion and celery. The heavy spoonful of yoghurt isn’t exactly essential but I would definitely not leave out the green garnishy things on top – coriander’s fresh taste goes well with the rest of the soup, but it also makes it look a bit more presentable. If you don’t have harissa (I did) you’ve got a number of options – stir in some sambal oelek, chopped red chilies, or replace the olive oil with chili oil. Or, of course, ignore the chili altogether.
I realise I’ve spent nearly this whole thing saying how not-fun soup is, but this stuff is truly gorgeous (not-not-fun?), a broth of flavours unfurling like flannel sheets grabbed straight from the dryer – warming, comforting, lightly textured.
Work took me down to Christchurch on Saturday, and I was fortunately able to have a quick catch up with Mika of the mighty fine Millie Mirepoix blog who coincidentally was also down from Wellington. The chilling rubble of half-formed houses and the constant road-blocking cordons, the cracks in the road and the buildings that you had to look at twice to register that they were leaning on an angle or sunken in the middle made me feel a bit queasy and sad inside and it would’ve been easy to get stuck focussing on that. Not that it shouldn’t be focussed on (it should! But in a “now what” kind of way, maybe? Not really my place to say) but what I mean is, it was really good to see a friendly face amongst it all, and to contribute in a small way to the local economy by getting coffee and a really, really good Cherry Ripe Slice at Beat Street Cafe and another fantastic coffee from Black Betty’s. If you’re heading to Christchurch I totally recommend these places – they’re open, they’re friendly and they’re serving up seriously good food.

like eating glass

I was supposed to have this blog post sorted last night, but by 7.30pm I was a loose-jawed, slumpy mess and didn’t really have what it took to stage a decent blog-comeback. However, I managed to at least get dinner done – the following recipe for Glass Noodles and Edamame – whilst bearing the increasingly shackle-like load of jetlag that I can’t seem to shake. I don’t want to complain about it as such, (oh poor me, I travelled so much and now I’m just too fatigued for words), I just want to draw your attention to the fact that I did make it at all despite wearing a heavy cloak of semi-somnolence, and therefore you should be able to make it on any given day. That said, I understand if exhaustion and unmotivation of the non-travel variety is part of your day-to-day routine. I’m not the only person ever to feel sleepy, or worse, sleepy in the middle of cooking something involving a little concentration, causing you to collapse to your knees into a bowl of soaking noodles and cry ceilingward, What have I doooooooooone?

But this is do-able. Plus, it comes from the Ottolenghi cookbook Plenty, which Tim got me for my birthday. We’d actually also reserved ourselves a table for an evening at Ottolenghi the restaurant on the day after my birthday. (The day of was all booked out. A month in advance.) It was such a cool night. They made a huge fuss of us having come all the way from New Zealand, gave us prime seats, our waiter was genuinely friendly, our food was genuinely amazing. It was also wildly expensive but it’s not the kind of place we go often…or ever. So we put the price in the back of our minds while we feasted on tender shredded brisket, cheese-stuffed zucchini flowers (the first time either of us had tried them), barley with asparagus and radicchio, so many beautiful flavours, followed by a plain but perfect vanilla cheese cake carrying crunchy, sugary, caramelised macadamias. I’d been a fan of Yotam Ottolenghi’s for a while now, and I found it hard not to grin throughout our meal.

Plenty allows me to recreate those beautiful flavours and combinations at home. It’s a completely vegetarian cookbook, with no pudding recipes (yet I love it still) and when I saw the following recipe for Glass Noodles with Edamame Beans, I could see it was one of those dishes that largely relies on your cupboard being stocked up, as opposed to any skill, and therefore is ideal for the first meal after a month away. There’s a little heating and chopping involved, and then suddenly you’ve got this gorgeous piled-up pile of salty-sweet noodles and edamame beans that taste so nutty and creamy they betray the fact that they are actually a vegetable.

I know glass noodles as vermicelli or rice noodles, but kept the name because it sounds kinda pretty. However I removed the “Warm” from the start of the title – maybe I read too many Baby-Sitter’s Club book scenes of Kristy Thomas describing the SMS cafeteria lunch offerings – but whenever I see the word “Warm” in a title (and it does appear a bit, you know, “Warm Salad of Lamb and bla bla bla” etc) I always mentally add the word “socks” afterwards. Warm…socks. Not cool, but there it is. I get frozen edamame beans – soybeans – at the supermarket up on Torrens Terrace or in Moore Wilson (if you’re in Wellington) but if they’re too hard to find, this would still rule with frozen peas as a substitute. That said, my ancient Aunt Daisy cookbook has a recipe for “Soya Bean Rissoles” (easily digestible seems to be their selling point) so they can’t be that obscure, right?

Glass Noodles and Edamame Beans

From Yotam Ottolenghi’s Plenty

  • 200g glass (rice, vermicelli) noodles
  • 2 T sunflower, rice bran or other plain oil
  • 3 garlic cloves, finely diced
  • 300g podded, cooked edamame beans
  • 3 spring onions
  • 1 fresh red chilli, chopped finely
  • 3 T chopped coriander, plus more to serve
  • 3 T shredded mint leaves
  • 3 T toasted sesame seeds

Sauce

  • 2 T grated galangal or fresh root ginger
  • Juice of 4 limes or 1 – 2 big lemons
  • 3 T peanut or rice bran oil
  • 2 T palm sugar, crushed or 1 T dark brown sugar
  • 2 tsp tamarind pulp or paste
  • 1 tsp soy sauce
  • 1 tsp fine sea salt

Soak the noodles in a bowl of hot water for five minutes, or until soft. If, like mine, they don’t soften up right away, tip them into a pot with a bit more water and simmer for a bit. Don’t let them get too soft and collapsing though. Drain.

Whisk together the sauce ingredients in a small bowl.

Heat the sunflower or rice bran oil in a large frying pan or wok, and add the garlic. When it starts to go lightly golden and smell amazing, remove the pan from the heat and add the sauce and the noodles. Gently stir together, so that you incorporate the sauce but don’t crush the noodles, then add the edamame beans, plus the spring onion, chilli, coriander and mint.

Divide between plates or pile onto a platter and scatter over the remaining beans, sesame seeds and coriander.

Notes: I used sambal oelek instead of chilli, lemon instead of lime, and brown sugar instead of palm – and I just didn’t have any coriander or tamarind. My cupboard is pretty well stocked but I’ve been away for a month and wasn’t going to spend heaps on a few ingredients when I could wait till the vege market this Sunday and get them for cheap. I also didn’t use mint because it grows up on the roof at my place and it was raining and freezing and windy and I just didn’t want to go outside to get it.

…on a cold and rain-soaked evening I’m so happy to be back in the kitchen, and this is just the recipe to welcome me back to it. The flavours of chilli, ginger, garlic and soy lift the bland, slippery noodles into something substantial and the beans not only look gorgeous, their pistachio-like taste makes this fairly cheap dinner taste luxurious as. As Ottolenghi suggests, you could double the soy content by adding tofu to make it more of a meal, but I loved it as is.

Actually this isn’t even my greatest jet lag achievement. I did manage – somehow – to make caramel ice cream at Mum and Dad’s place on our first day back in the country, and I helped with the feijoa and apple crumble that went with it. Have you ever separated 6 eggs on 2 hours’ sleep? I don’t recommend it, but my drive to make everyone ice cream overrode my drive to be sensible. We did have a great weekend at home, landing at 5.30am only to be whisked up to the Manukau Heads to see Dad’s band Apostrophe play at a school fundraiser. Despite calling to mind something that Coco Solid once mentioned about the particular awkwardness of performing in the daytime, it was my first time seeing the band play and it was very cool. I don’t think it was just the jetlag that made the songs sound so good – between absorbing all those Dad-penned tunes and seeing Mum make up a bread and butter pudding on the spot with bits of leftover hot cross bun and bread rolls, I left for Wellington with a bit of a “my parents are awesome” glow. We managed to see heaps of family on our short time at home which was so great, even if the later it got in the afternoon the less sense we made.

Just checked the clock and it’s 9.20pm which is the latest night I’ve had yet since we got back on Saturday morning – yuss.

just a little too soft, al dente

In a triflingly small number of sleeps, Tim and I will not be in New Zealand anymore. For a whole month. So don’t come looking for us. Unless you’re in London, in which case by all means come find us. Unless you’re into knife crime. Even though I never once felt unsafe during my time in London, well, at least up till July 7th 2005, I still can’t help thinking “knife crime!” said like the scene-change ‘dun-dunn!’ on Law and Order. But we’ll be fine. We’re confident, like Maria Von Trapp. Thanks so much to everyone who has emailed in offering ideas and websites and even their roof for us to stay under. And a massive thanks to my godmum and her family who loaned Tim and myself some awesomely functional luggage, especially compared to our sorry, carpal-tunnel-inducing offerings.

I can’t say that it has really made its way through to my brain properly – that instead of getting up and going to work every day, I’ll be on the other side of the world to where I am right now, for a month. Firstly, there have been some extremely heavy events both locally and overseas filling my mind – natural disasters, disastrous man-made situations…plus I was up in Auckland again on the weekend just been, this time working at ASB Polyfest (amazing but exhausting) so between that and Pasifika the weekend before, there hasn’t been much time to really properly consider it. Somehow it’ll all come together though. As I said. Confident. Like a Von Trapp.

Part of making it all come together is using up any perishable food. This might mean chugging a hefty volume of soymilk, or it might mean lots of thrown-together pasta dishes like the following, where a vegetable that’d otherwise curl up remorsefully in the fridge becomes the star. The star of what I named Sexy Pasta. I just looked at our dinner and the name appeared to me, organically and fully-formed.

Admittedly, it looked a lot sexier in person. Now that we’re further into the year and darkness falls earlier, I need to try and remember how to take decent photos at night.

But look at those ingredients. Hello. You don’t have to use pappardelle – it’s unfairly more expensive than other kinds of pasta, and I’m pretty unlikely to get it again for a long time, after the moment of wacky extravagance that got it in my cupboard in the first place. Regular spaghetti is more than fine, although something with a bit of width, like fettucini, would be great. I use almonds a lot because I bought a kilo from Moore Wilson’s for relatively cheap (much cheaper than buying little packets in the long run, I mean, and also cheaper compared to other bulk nuts) but use what you have – walnuts, pinenuts, pecans, cashews or Brazils would all rule.

Sexy Pasta aka Pappardelle with Roasted Capsicums, Sesame Garlic Toasted Almonds, Capers, Lemon and Mint

  • 160g pappardelle pasta or 200g other pasta
  • 3 capsicums
  • 1/2 cup whole almonds (be generous, this is your protein)
  • 1 clove garlic
  • 1 tablespoon sesame oil
  • 1 tablespoon capers, rinsed of their salt
  • Half a lemon
    Handful of mint leaves
  • Bring a large pan of water to the boil with plenty of salt, cook the pasta according to packet instructions (around 10 minutes) and then drain.

While this is happening, set your oven to 220 C. Halve the capsicums, remove the core and stem, and place cut-side down on an oven tray with some baking paper on it. Roast for about 20 minutes or until they’re a little blackened. Remove from the oven, tip them into a bowl and cover with gladwrap (this will make it easier to remove the skins later) and turn the oven down to 200 C.

While they’re roasting, finely chop the garlic clove. Once you’ve removed the capsicums from the oven tray – leaving the paper where it is – replace them with the almonds and the garlic. Drizzle with the sesame oil, and use a spatula to get it all mixed well, so each almond is slickly coated with oil and the chopped garlic is well dispersed. Return to the oven for about 5 minutes – make sure you keep an eye on it, burnt nuts are no fun.

Carefully peel the skin from the capsicums – should come away easily enough – and tear them into strips.

Finally – assemble. Divide the pasta between two plates, then divide the strips of roasted capsicum over that (including any syrupy juices that appear in the bottom of the bowl). Tumble over the almonds and the capers, squeeze the lemon’s juice on the top, and then rip the mint into bits and sprinkle over.

Soft, slippery capsicums, tender wide ribbons of pasta, salty capers, the sweetness of the almonds roasted into popcorn-crunchy, sticky nutty garlicky excellence, the fresh hit of the lemon and mint. The flavours and textures plow into each other to create a seriously gorgeous meal.

The next post’ll be the last one before our trip, but I’ll try to jump on here occasionally during our time away, to be all like “here’s a fuzzy picture of a hot chocolate I had” and “look! Me in front of a Krispy Kreme donut shop!” etc…

While looking for Julie Andrews singing Confidence on youtube I found this clip of her tapping and singing Supercalifragilisticexpialadocious with Gene Kelly. As well as being half adorable, half bewildering, it showcases the incredibly polished, staggeringly professional nature of stars at the time. When in doubt, lightly banter.

we go in a group, we tour in a troupe, we land in the soup

This minestrone has many, many good things going for it. You can make it up as you go along to suit what you’ve got (that’s what I did). It doesn’t cost much. It’s filling. It’s delicious. It’s vegan. It’s full o’ vitamins. It made me feel better about the increasingly forlorn group of parsnips in the fridge, it might have a similar effect on you. Depending on what you add to it, it can be as summery or as stodgily wintry as you like. And it takes hardly any of whatever effort you’ve got left at the end of the day.


Maybe it’s just me, and I realise being lacklustre isn’t the best way to push a recipe, but the one negative about this soup is…with all that good-for-you worthiness and vegetables-only content it’s not necessarily the most wildly exciting thing to be eating. If you’re up for it, some fresh, buttery scones would be fantastic alongside, or at the least some (also buttered) toast.
However while you wouldn’t think there’d be much to it (for example, because I told you) it’s delicious and sustaining and comforting and, as I said, pretty cheap too. All good things now, and indeed at any time. And while I love stirring chilli and spices into food, what could be seen as holding this soup back is also part of its charm – the simplicity of flavour. Much of it comes from the alchemy of stirring onions over heat and simmering the sweet, starchy parsnips and kumara. They lift it from being a bowl of aimlessly boiled vegetables into something pretty superb.
Undemanding Minestrone
Use whatever related vegetables you have: a combination of leeks, other kumara varieties, potato, frozen peas as well as canned beans/chickpeas/lentils would all work here.
1 onion
4 spindly or 1 fat parsnip
1-2 zucchini
1/2 a big orange kumara
Handful of small pasta like risoni or the bashed up remains of a packet of pasta or a few tablespoons long grain white rice.
Olive oil, salt and pepper. If you don’t have olive oil, use butter instead.

Slice the onion up thin. Heat the oil in a wide pan, and stir the onion slices in it over a gentle till properly cooked and browned slightly but not blackened. Grind in some salt. Chop all the rest of your vegetables into small chunks, add them to the hot pan and stir for about five minutes till they’ve started to become tender and have gained some colour.

Pour over enough water to come an inch above the vegetables, bring to a good bubbling simmer and tip in the pasta (or rice). Allow to simmer gently for another ten minutes or so, until the pasta is cooked through.
At this point you can leave it covered until you need to reheat and eat it – if this is any longer than a couple of hours then put it in the fridge.
As I said, one of the cool things about this minestrone is that you can add what you like to it depending on what you have. Its simplicity is great, but don’t let that stop you. Tomatoes. Canned beans. Finely chopped cabbage. Barley. Carrots. Pesto. Chilli sauce. Whatever you’ve got, this minestrone can probably accommodate it. It’s magic as is though, the pasta grains swelling up and absorbing the liquid flavoured by its vegetable inhabitants, the sweetness of the starchier ingredients stared down by the bolder onion and zucchini.
Meals like this are our thing at the moment. I’m away this weekend and next weekend for work and then the weekend after that, Tim and I take off on our Massive Exciting Overseas Trip so as well as wanting to eat things that don’t cost much, it’s good to get through whatever’s in the fridge. That said, I did run into Millie Mirepoix at the supermarket today and was convinced (okay, convinced myself, but she was an enabler) to buy a couple of gorgeous, perfumed quinces, which will need some fairy immediate attention.
I haven’t even thought that much about what I’ll do with this blog while I’m away – I think I’ll try to get a post done as close to our leaving time as possible and then just leave it as is, hoping for the best that you’ll all be there when I get back. As Christine Ebersole as Edith Ewing Bouvier Beale in Grey Gardens said, “when violets return in Spring, will you?” I’m not sure it’s all that relevant really considering New Zealand’ll be heading towards winter come April, but this song makes me buckle at the knees with its beauty and I just like a chance to link to it semi-gratuitously.

i’ve got strength and endurance, so i count my blessings

So. After Tuesday’s horrific earthquake in Christchurch, from which the sad news continues to eclipse any good, I couldn’t consider much of anything, let alone blogging. Which is fine.

Tim and I and my whole family are so lucky. Removed physically from the horror, although not emotionally. My cousin and his partner down in Christchurch were fine, despite being in the city centre at the time, and we were able to hear this news pretty quickly. Any other friends and family we had down there have been accounted for. But the number of fatalities climb with sorrowful speed. We had two people staying in our lounge last night, friends of our flatmate’s who were in Christchurch when it happened. Their stories were a further reminder to be thankful for what I’ve got.
Thankful or not (and it’s not proper gratitude, how can you be truly thankful that something awful happened to someone else and not you?) I’ve been changed by this earthquake. Wellington, where I live, is supposed to be earthquake central, not Christchurch. I used to be such a daydreamer, floating down the street in my own world. Now I dart from block to block, each shop front a potential missile that I pass like a small victory. I take my phone everywhere. I feel nervous when Tim and I go our separate ways for work in the morning. I lie awake, mentally assessing what might fall on me in the night, the useless-in-an-earthquake concrete walls staring back at me, every twitch of my muscles or distant slamming door feeling like the opening bars of an earthquake’s crescendo. One good thing about staying up so late to listen to the news and refresh Twitter is that my eyes shut that much faster when I do get to bed.
Worth pointing out here that this specific fear of earthquakes and feeling like every creak of a building is nature getting angry isn’t anything new. It’s been this way ever since a well-intentioned but excessively heavy school assignment on disasters when I was about 10. Just now it’s a lot more…near.
As with when I was 10, I try to comfort myself with the thought that my grandma Zelda, who died when she was about 75 (would’ve been so much longer if emphysema hadn’t set in) once told me that she’d never once been in an earthquake. She might’ve been lying to an overly nervous kid (that said, she did live in Tuakau, not known for its tremors.) But then and still now, I tell myself like a mantra that if Grandma could be that age and never be in an earthquake, then maybe I could be that person too. Then there’s practical things to help soothe the mind too: we refreshed our bottled water supply, located a torch, that kind of thing.
Of course there’s food. On Tuesday night I came home and made us a risotto with extra butter and frozen peas, remembering Nigella’s philosophy of the mindless stirring being good for the soul. It wasn’t half bad, just focussing on that wooden spoon spiralling through the slowly expanding grains of rice. We ate it out of bowls on the couch and listened to Radio New Zealand till well after midnight.
With some renewed sense of purpose, I baked some stuff for the bring-and-buy sale happening at Grow From Here up the road. In a sort-of humorous twist, the friends from Christchurch who I mentioned earlier were asleep on our lounge floor while I was trying to quietly, quietly ice a cake and wrap up cookies without waking them. At Grow From Here we met up with another local food blogger, Mika of Millie Mirepoix. I’d made Chocolate Guinness Cake, gluten-free peanut butter cookies, and a couple of fruit tea loaves. Mika had made lemon-iced gingerbread (as in the dense sticky cake, not the biscuit), lemon shortbread, and mini cinnamon-raisin-walnut pinwheels. Other people had bought clothes, shoes, a stack of (mostly amusement-causing, MOR-tastic) vinyl thanks to Real Groovy, homemade candles, jigsaws, even a TV. I’m glad Tim and I were there – it felt extremely self-helpful to do something positive for others. There were so many nice people that came and bought things, often giving extremely generous donations, and it was so cool to hang with Mika and with Kaye who is one of the people who runs Grow From Here. FYI if you’re near Wellington and longing for some plant-life, totally go see Kaye at Grow From Here, she’s lovely and full of good advice and their range of fruit and vegetable plants is amazing. Massive respect to them for getting this organised.
With our powers combined, about $200 was raised by the afternoon. All going to Christchurch. I went back and visited again this afternoon and at that point $700 had been raised. Kaye said that about five minutes after Tim, myself and Mika left, someone turned up asking if they could volunteer. For all the the universe gets it really twisted sometimes, it also provides. I’m going to be dropping some more baking off tomorrow morning and while I can’t hang around, please come to the top of Cuba Street if you can – just a donation of any kind and you can take what you like. And there’s plenty of deliciousness for the taking.
Before Tuesday, this blog post was going to be a salute to vegetables, but not only do I not have the energy to talk about them in detail, I have even less energy to write recipes out. But in the interest of not being entirely lazy and self-pitying…
if you roast a halved eggplant, a few good halved tomatoes, and a halved red onion and some garlic cloves with some salt and olive oil, then simmer them (as is) with stock or water, then peel the garlic cloves and puree everything (carefully…maybe fish out the vegetables and puree them then pour them back into the stock in the pan) with some chilli then you’ll have yourself a delicious, thick and darkly savoury soup. Vegan too. I got this recipe from the latest issue of Cuisine magazine.


And if you slice a cucumber into sticks, mix it with some sliced red onion (sit the onion in water for a while to make it less tongue-harsh) mint leaves, finely chopped roast peanuts and some crisply fried garlic, and then pour over a dressing of white vinegar, fish sauce, a little sugar and sliced red chilli (I just used a spoon of sambal oelek as that’s what I had) then you have Vatcharin Bhumichtr’s gorgeously contradictorial Yoam Droksok, a Cambodian salad which heats and cools on impact and is strangely addictive.

So the baking has helped some. We went to see friends in Ngaio for book group on Wedneday night and played with/coveted deeply their kitten and ate their mini lemon meringue pies and laughed so much, which also helped. Every time I pause from any activity though, my mind goes immediately to Christchurch. Which I guess is just fine. It’s not over for them just because a little time has passed. It’s probably never going to be ‘over’ in fact, just…different.
I’m sure you’ve seen this information in a million other places but in the interest of being part of the solution:
  • Red Cross seems to be one of the most reputable ways to donate. Anything helps, but if you haven’t got anything to give, then maybe pass the link on through your networks.
  • If you’re on Vodafone (in New Zealand) you can txt Quake to 333 or 555 which will send $3 or $5 respectively to the Red Cross. Telecom users txt 4419 – a simple way of doing the above option.
  • MusicHype has an enormous ‘mixtape’ where you can download roughly a metric ton of music for a donation which goes to Red Cross. Very cool idea, and it’s also awesome that they got it set up so quickly. Artists include Salmonella Dub, Mel Parsons, King Kapisi, 1995, DJ Sticky Fingas and literally quite a few more. Well…I’ve spent a good long time listening to what I consider Mariah Carey’s Early 90s Trifecta of Emphatic Reliability: Anytime You Need A Friend, I’ll Be There, and Hero. In times of high stress comes both comfort food and comfort listening. And all those songs with the simple theme of “I’ll be there”, just listen to these songs enough and you do get some sense that yeah, you can get through this. Temporary it may be, but it does help. It might help more if you have songs of some kind of equivalence to this. Maybe listening to Mariah Carey really, really wouldn’t help some of you right now.

see these ice cubes, see these ice creams

More ice cream! Am I obsessed with this stuff or what? Look: I had a can of lychees stashed in the freezer in the hopes of recreating this drink I had a Thai restaurant in Panmure. Without warning, in the middle of the day, the idea of lychee and cucumber sorbet manifested in my mind, eclipsed the previous idea, got the jump on anything else I’d been planning to blog about, and left me more or less unable to concentrate from then on till I could make it happen.

Saturday was spent catching up with close friends and family in fast succession (amazingly fun and good for the soul) but today, Sunday, stretched ahead with no real agenda. It was one of those monumentally rare, still blue-skied days in Wellington and rather than nuking myself in the afternoon heat, the cool shade of indoors was the ideal environment to make this fragrant, juicy sorbet. Because of the high water content it’s icier than most which is why – sorry – I recommend the double-blitzing in the food processor. That said it’s barely hard work to make, and if you do it all on one day, you can get away with washing the processor just the once. (We don’t have a dishwasher so most decisions that don’t revolve around how I can work more ice cream into my life tend to revolve around how I can minimise potential dishwashing.) All you’re doing is freezing then blending then freezing then blending. Then eating.

Yes, you’re putting a salad vegetable into your pudding, but something about cucumber’s chilled, melon-ish texture and the lychee’s perfumed slippery softness makes them ideal buddies to share a loving and iced existence together.

Lychee and Cucumber Sorbet

  • 1 can lychees in syrup (they only seem to come in syrup, so that’s what I used)
  • 1 decent-sized cucumber

Now, I’m guessing you don’t actually have to freeze the lychees beforehand, it really doesn’t add anything to the recipe, but as I said I started off thinking this was going to be something else.

So: freeze the can of lychees overnight, or longer if you’re like me and forget about it. Peel your cucumber, then halve it lengthwise and scoop out the seeds with a teaspoon (I just ate them, felt a bit wasteful otherwise) before chopping into chunks.

Open up your frozen can of lychees and tip into a food processor (it’ll probably take some gouging and digging with a knife like mine, but it’s possible it could come out clean) along with the cucumber chunks. Process the heck out of it, pausing to spatula down the sides occasionally – this will take a while to get rid of any errant solid bits.

Pour into a container and freeze for a couple of hours before – I’m sorry – processing again till very smooth. You can leave out this step but it’ll be all chunky and icy and rough. Refreeze and then serve as and when you wish.

Making up new ice cream is one of my favourite ways to use my brain (and I know this is a sorbet, but I give the umbrella heading because “iced dessert” sounds way too corporate) and luckily for everyone around who has to deal with me, this worked out exactly as I’d hoped. There’s only so many ways of saying fragrant without sounding weird/awkward, so to be straightforward, this stuff smells sooo good and tastes just as wonderful: juicy and hydrating and sweet. The second blitzing gives it more of a frozen coke consistency, rather than a granular, tooth-fissuring grittiness.

Scraped by the frosty spoonful, its diaphanous minty green colour barely hints at the strength of summery flavour it brings. These photos were totally taken on my bed by the way. I try to keep my food photography as real-life as possible without too much tutu-ing round but that’s where the light was, and it’s really not implausible that I’d eat ice cream in bed.

We had such an amazing time at Nas and Damian Marley’s Distant Relatives concert on Wednesday night. Might’ve just been the atmosphere but every song felt really important and significant…like this one. 

The sadly gone-early Patsy Cline with Stop the World – this is a gorgeous live recording of her singing this song. She was what I guess you’d call a consummate performer, filling every word with genuine but not excessive emotion. 

Next time: I feel like it has basically been nonstop pudding lately so I’m hoping the next one will involve vegetables a-plenty, and not by putting them into a sorbet, either.</p>

when tomatoes are flying, duck, but smile

First: Happy Waitangi Day, everyone. As I said on this day last year, it is important to me for many reasons. Firstly, the reason it exists at all: in 1840 the Treaty of Waitangi was signed at Waitangi, near Paihia in the Bay of Islands, a place where my ancestors on both sides have strong links to. Read up on the treaty if you like, it’s one of the more interesting and game-changing events in New Zealand history. Secondly: It marks the date that I had my first ballet lesson, 21 years ago. Evidently ballet waits for no public holiday. A tough business, had I lingered till the next day I could’ve been considered “past my prime” (FYI: this probably isn’t true, and also, I was three years old)

 
Anyway, yikes, February already, so there’s only one month left of summer. And in Wellington it feels like winter’s cutting ahead of autumn in the tuckshop line. One month ago it was all sand and sunscreen and deliciously dizzying heat, now it’s all sporadic sun, pushy gale-force wind, greying clouds and woolly jumpers. Either that or knuckle-dragging humidity. What gives?
One way to remind myself that it is still in fact summer is to immerse myself culinarily in seasonal food, which – bonus – is generally cheaper, easier to get hold of, and tasting its best. Like the tomato, currently at its richest red of colour, fullest of cheek and glut-est of availability.
I read a recipe of the much-googled and widely lauded Martin Bosley’s in his food column for The Listener magazine recently which completely took my fancy: a sauce of raw, chopped tomatoes, steeped in good things and tumbled over pasta. I stupidly didn’t actually copy it down anywhere, and unfortunately The Listener doesn’t seem to have an up-to-date online recipe database in the same way that, say, Cuisine magazine does. (Not that they’re obliged to provide me recipes for free. But gee, if the internet hasn’t half conditioned my brain to expect it!)
I knew there was something particularly impact-y about this recipe which made me want to recreate it, but I just couldn’t remember what. So, with a bowl of rapidly deflating, perfectly ripe tomatoes bought on the cheap, I decided to just be inspired, and improvise.
Raw Tomato Pasta Sauce with Avocado Oil and Cinnamon
 
Inspired by a recipe of Martin Bosley‘s
 
3 ripe tomatoes
Avocado oil (but of course, olive oil is so welcome here instead)
1 teaspoon cinnamon
1 teaspoon sugar
Salt, flaky sea salt if possible – tastes nicer, and you need less.
1 T Balsamic Vinegar and/or the juice of a lemon
1 clove garlic, crushed
Around 180g to 200g spaghetti or other long pasta, to serve
 
Roughly chop the tomatoes, fairly small, and pile them into a non-metallic bowl (apparently metal does very bad things when it reacts to the acidic tomatoes.) Pour over as much avocado or olive oil as you like, but around 2 tablespoons is what I used.
 
Sprinkle over the salt and sugar, the vinegar, and the garlic, and mix thoroughly. Leave for as long as you like at room temperature, but at least do it before you get started on the pasta, so it gets a decent sit.
 
Bring a large pan of water to the boil, salt it, and cook the pasta in it, till it’s done to your liking. Drain and divide between two plates. Spoon over the chopped tomato ‘sauce’, pouring over any juices that have collected, and drizzle over more avocado or olive oil if you like.
 
Serves 2.
Great as this is, I had a massive head-desk when I eventually located the original recipe of Bosley’s – it had almonds and chilli in it. How could I not have remembered something that deliciously significant? My invention was cool, but almonds and chilli. I want that in a sauce.
Still, mine had its own cinnamony charm, with the tomatoes soft and cool and luscious on the hot pasta, the avocado oil’s mellow nuttiness against the sweetly sharp balsamic vinegar and almost lemony-fragrant tomato juices dripping into the depths of the tangle of pasta. Because of how I chopped my tomatoes it was less a sauce and more of a…pile of stuff. But I liked it.
To go with I boiled some peas and edamame and once they were cool sprinkled over a little sesame oil, and chopped in what I could salvage from a disappointing avocado. It was delicious, and pleasingly reflective of the avocado oil with the tomatoes. The reason I used avocado oil is because I got some for Christmas (cheers Dad!) and it’s really delicious, furthermore I’ve run out of olive oil and every time I go to buy some more it just feels too expensive. However if you’re the other way round, as I said in the recipe, of course olive oil is great to use here too.
Poor Tim had to pause here for a minute because I looked across the table and suddenly felt like what I saw (alas, minus his pleasant above-shoulder region) needed to be photographed. It wasn’t posed, he was about to feed himself and I wailed “don’t move!” and grabbed the camera. But still, nice to shake up the usual one-aerial one-closeup-fuzzy shot routine.
So: as long as you can handle, or at least sell to the people you’re feeding, the idea of pasta and a chopped up vegetable being your dinner, then this is one truly summery and seriously unpricey recipe which not only requires hardly any effort, it’s also extremely delicious and not so heavy and stodgy that you need to lie down immediately with a cold compress after eating it. Cheers, Martin Bosley for the inspiration. As I said, he’s heralded wide and far but I’ve never actually tried a recipe of his, and I guess…this doesn’t really count. While some of his recipes, though delicious, seem a bit inaccessible to my time, skills, and cupboard contents, I can’t fault the blueprint which inspired this blog post – a simple, sexy and delicious-sounding tomato sauce. And he also gets a free pass for life because when I approached him to say hi at the City Markets one time, he said “Oh, you’re Hungry and Frozen” which, let’s face it, is a fast way into my heart.

Beach House, Walk In The Park from Teen Dreamgosh this is a pretty song, like the catchiest bits of Where Is My Mind and, um, Eyes Without A Face combined…at last. We were lucky enough to see Beach House at Laneway Presents: Wellington on Tuesday night, and this song was an early and beautifully delivered highlight of the evening.
Mum sent my iPod back along with a whole bunch of other goodies (lentils, pasta, Whittaker’s Chocolate and so on) and having been without it for three weeks, it’s quite the sensory overload to have music and so much of it again while I walk around. I’ve been reconnecting seriously with the cast recording of Hair (Original Broadway and 2009 Revival Broadway cast recording, thank you).

food beyond compare, food beyond belief…

Another year goes past, another flat Christmas dinner is planned for and cooked and eaten and then reminisced about. Our first was in 2006, before I even had this blog, and when we’d just moved into our then-flat. The second one was the day after the David Beckham game, 2008’s was when I’d finished uni and started full-time work and Emma our then-flatmate was stranded in Thailand. She got back to NZ just fine, by the way, but still. Last year was our first Christmas dinner in our current flat and was also the day that I was on the cover of the Sunday Star-Times Sunday magazine (which meant a lot of “oh this? Oh I had no idea that was on the table there lookatmeeveryone“) This year was a pretty low-key happening, with just seven of us, but it was an amazingly happy day. Partly because of the awesome friends and whanau who were there, and partly because…my first ever Baked Alaska was not a disaster.

I’ve made this Involtini from Nigella Bites for the last three Christmas Dinners and it’s one of the best Christmassy vegetarian recipes I’ve ever found. Basically it is spoonfuls of herbed, nutty cooked bulghur wheat rolled up into parcels with long thin slices of fried eggplant, which are then tucked in to a casserole dish, covered with tomato puree and baked. It’s incredibly good and can be done ages in advance, and while Nigella’s original recipe contains lots of feta, it’s easy enough to make this dairy-free or completely vegan as I did. Pistachios are even prettier than feta anyway…
This year I had the idea that I could cook the eggplant slices quickly in a toasted sandwich press brushed with a little oil. It totally worked! Didn’t look as sexy as Nigella’s glistening griddle-striped slices, but since it’s all getting covered in tomato sauce anyway, I didn’t really care, and it saved me from sweating over a hot oily pan.
The roast chicken was the only thing in the whole damn day that had dairy products in it, and that’s because Ange, our very good friend and ex-flatmate, is vegetarian as well as dairy-free. I poured cream all over the chickens before roasting them, inspired by a recipe of Ruth Pretty’s I read in the 2005 Nov/Dec issue of Cuisine magazine. It felt like an amazingly extreme thing to be doing, plus it made the birds tender, golden and crisp. Notice in the background the boiled potatoes and roasted capsicums…I don’t have the energy to photograph and talk about them individually: just know that they were there too and they tasted great. I didn’t plan for gravy but quickly boiled up the roasting pan juices (there was heaps, was a shame to waste it) with a little flour and, without any white wine to hand, threw in some sake instead. It smelled amazing and tasted just fine too.
(Sorry to keep putting you on the spot Ange) For the first time my favourite stuffing (Cornbread and Cranberry from Nigella’s Feast) was dairy-free, made with rice bran oil (what, you thought margarine? Pffft) and soymilk. Even though I really love the bit where you crumble the already buttery cornbread into a pan of melted butter and cranberries, it was still delicious, and in fact the soymilk made it almost spookily puffy and light-textured. Except I ended up baking it for too long so instead of a soft, moist stuffing it was more like a large savoury biscuit. Eh, still tasted good.
The cranberry sauce! I have to co-sign with Nidge on this one, it really is as redder-than-red as she insists. I didn’t even up the saturation in this photo.
Anyway all that was cool, but The Baked Alaska. Oh my gosh. I always like to use this day as an excuse to try out a challenging new pudding but this one had an element of stage fright to it. (In case you’re wondering, 2006 was Nigella’s Rhubarb and Mascarpone Trifle, 2007 was her Rugelach, 2008 I made her White Chocolate Almond Torte, and last year I did her Chocolate Pavlova.) The cake and ice cream I made in advance but the last bit – whipping up meringue, spreading it over them and blasting it in the oven right before serving had humungous potential for wrongness.
I used a recipe from the Floridita’s cookbook for the base and invented my own coconut-blackberry ripple ice cream for the next layer, partly because I had some blackberries in the freezer already. I know it seems unfair to recommend making your own ice cream when it’s only going to be covered in meringue. But the good thing about it is that without the preservatives and who knows what else that goes into a lot of commercial ice cream it’s way more solid and therefore a bit more forgiving when you shunt it under a blazing oven. I’d argue that it’s much more fun to make your own but that’s just me. I like making ice cream.
The ice cream was made by whisking together 4 egg yolks (the egg whites I put in a plastic container and refrigerated to use, plus two more, for the meringue) and about 150g sugar. I then heated a can of coconut milk without letting it boil, and quickly whisked it into the egg yolk mixture. All of that got returned to the pan and gently heated, while constantly whisking, till it thickened like custard. I stirred in a can of coconut cream and then began to freeze it in a shallow dish (the same one I baked the cake in actually). Then I defrosted about 150g blackberries (you could use any berry really) mashed them with a couple of tablespoons of sugar and the juice of a lemon, and drizzled it into the still-softish ice cream.
Tim took this photo and also put the ice cream and cake on top of each other on the tray while I whisked up the meringue topping. For which I’m seriously grateful, because it only occured to me halfway through making the meringue that I still had to do all that.
I made sure to follow my Nana’s advice to make sure the meringue completely covered the cake and ice cream – it provides a thick blanket of protection which allows the ice cream to survive under the heat, but if it’s not uniformly covered, the ice cream can seep out and then you’ve got a small crisis on your hands. I also followed some last-minute tweeted advice from Martin Bosley about warming up the sugar first before its beaten into the egg whites. It’s not every day that this kind of interaction comes my way so I thought I might as well try it – sat the sugar in a shallow metal bowl in the oven while it was heating up, enough to make the crystals warm but not enough to melt them into syrup. Cannot deny that my meringue whisked up in minutes with more volume and shine than a shampoo commercial.
But it worked, it worked! I felt a rush of happiness and pride just looking at it. Baked Alaska are generally supposed to resemble mountains, mine was admittedly more of a plateau, like a Baked Cape Town Table Top Mountain.
Look at the jelly in the background somehow managing to steal the show with its ruby-glow.
So on top of looking spectacular – like a pudding from a Dr Seuss book, or a Graeme Base book, or let’s face it, a Barbie film adaptation of a classic fairytale – it tasted wonderful too. It’s like having three puddings at once, all compressed into a handy cube. The radicalness of hot meringue against still-frozen ice cream. The sweetness of the topping and the creamy berry-sharp coconut ice cream against the dark cocoa-y cake. Stunning. I may have high-fived myself.
Finally: Cakeballs! So satisfying to say, make and eat. They came about because when I made the cake for the Baked Alaska and tried to turn it out of its tin onto a tray it…broke. Not so much that it couldn’t be more or less patched up, but it did leave me with a significant pile of cake crumbs. I could have eaten the lot in despair, but then I remembered Nigella’s recipe in her Christmas book for “Christmas Puddini Bonbons” aka…cakeballs. Mine were pretty simple – the cake crumbs mixed with about 125g melted chocolate and 2 tablespoons golden syrup before being rolled into balls and drizzled with more dark chocolate. What gave them that superfunk-Christmas look and transformed them from “hastily covered-up mistake” to “incredible bonbons that I will fight you for” was the judicious sprinkling of edible glitter. I’ve walked past the cupcake lady at the City Market nearly every Sunday asking how much her edible glitter is. Finally I decided that it wasn’t even expensive at all especially considering it lasts forever, and bought a small vial of it. Ohhhh how I love it. Had to hold myself back from glittering up the roast chickens.
Tim and I have been living off the leftovers ever since, which I love. We’re going up to my place for Christmas this time next week so we’re trying not to buy too much new food…just using up what’s there. I tell you, there’s nothing like standing at the kitchen bench, wordlessly eating leftover jelly off a plate to bring you closer together. (I grabbed two spoons from the draw, and then was like “Well I’ve got my spoons” like I was going to have one in each hand. Yeah, I gave him one of the spoons. But I think he believed me…I think I believed me for a second.)

It was amazing – Norm Lewis (he of the faint-making voice), Lea Salonga, Ramin Karimloo, erm…Nick Jonas (he wasn’t awful per se, anyone would look useless next to Ramin). Matt Lucas of Little Britain was Thenardier, who knew the man could sing so well! I know Les Mis isn’t the height of pop culture awesomeness, especially in this post-Boyle, post-Glee time, but whatever, the music is still incredible, totally unashamed about the tears that appeared during Salonga’s I Dreamed A Dream and Lewis’ Stars.

i’m miss world watch me break

You just don’t see elaborate dishes created in people’s honour these days. I mean, there are those so established that you forget – Peach Melba, Fettuccine Alfredo, Margherita Pizza, Beef Stroganoff… but nothing like the “Souffle Bowes-Lyon” from the QEII recipe book I once bought from an op shop, very 1980s with its tales of how much champagne they go through weekly and chilled gazpacho and colour plates of extremely tanned people with large hair.

A couple of years back Mum sent me a Hudson and Halls cookbook, and then this year at the library book sale I picked up another of theirs – a plastic-wrapped cookbook called Favourite Recipes from Hudson and Halls. Published in 1985, its black, dustjacketed cover has H & H in tuxedoes gazing solemnly at the reader, positioned in front of various items on a bookshelf and dresser – a clock, a lamp, a trumpet, ‘A Woman of Substance‘. Inside, their forward foreword breaks formalities with its “we have cooked together for nigh on twenty years, some of it good…some of it not so good!” Inside I found a recipe for Chicken Salad Lorraine with Peanut Cream Sauce which they named for 1983’s Miss World, New Zealand’s Lorraine Downes. I love a recipe with a decent backstory like that and I also really love peanut sauce…win win.
An often quoted line of theirs is “are we gay? Well we’re certainly merry”. With hindsight there’s sadness in that while the studio audience of their TV show would drink their wine and laugh at their comic timing, some kind of societal necessity prevented any actual openness at how this was a TV show fronted by two men in love with each other. At the time of the cookbook itself being published, the problematically worded, but comparatively progressive Homosexual Law Reforms were only just coming into effect in New Zealand. We don’t exactly live in a liberal wonderland right now, and I’m no expert on the history of NZ’s gay rights, but certainly leaps and bounds have been made since. As I’m privileged to have the world I live in and the media I consume largely reflect my own life, I can only guess at what it would have been like for H&H back then. I do know they wouldn’t have been the only ones in their position.

I’m not sure if it’s a mid-eighties thing or what, but H&H specified melons (oh my!) in the salad and much as I’m fairly adventurous, I wasn’t quite ready for it covered in peanut sauce…I figured the easier-found cucumber was within the same gene pool and along with some capsicum, would provide colour and juicy crunch. As I switched the required egg noodles for a lighter-textured pile of slippery, soft rice noodles, there’s nothing stopping you swapping the chicken for slices of fresh, firm tofu. And the more I think about it, the more it feels like peanut sauce on melons would have worked just fine…if you try it yourself, let me know!
There is on youtube an opportunity to see H&H in action which, apart from their merry chemistry, is a joy in itself as a slice of New Zealand television at the time – the giant electric frypan, the grey animated opening titles, the pinkly lit background of the studio kitchen. They snap and banter with each other, and burst into laughter. As Hudson spoons ingredients into a pan, listing them aloud, Halls interrupts offscreen with “Garlic?” to which Hudson responds “I haven’t got there yet, could you just mind your own business?” But then Hudson throws out the aside of “very good for the wrist action” while grinding pepper, which, while not as camp as Halls’ crying “Isn’t he wonderful!” while throwing his hands joyfully in the air, is still the sort of thing that continues to raise eyebrows when Nigella says it over 20 years later. I could go on and recreate an entire transcript but you might as well watch it – it’s wonderful stuff.
Chicken Salad Lorraine with Peanut Cream Sauce

With thanks to Hudson and Halls

300g good, free-range chicken thighs
1 stick of carrot, a few peppercorns, a bay leaf, coriander seeds and sprig of thyme if you have it
1/2 a lemon
1/2 a cucumber
1 yellow (or red or orange) capsicum
Peanut or sesame oil
Spring onions (optional)

Dressing

3 heaped tablespoons smooth peanut butter
1/4 cup stock (from poaching the chicken)
2 teaspoons soy sauce
1 clove garlic, crushed
small piece of ginger, peeled and grated or finely minced
1 teaspoon sugar
Juice from the other 1/2 a lemon
Tobasco or other hot sauce
About 1/2 cup of cream or thick Greek yoghurt or sour cream.
Egg or rice noodles to serve.

Place chicken thighs in a pan and just cover with water. Add the carrot stick, bay leaf, peppercorns, seeds and thyme (I didn’t have any thyme but it still tasted all good) and turn on the heat, allowing the water to simmer and bubble away gently till the chicken is no longer pink and seems tender – around 15-20 minutes. Remove the chicken to a chopping board and get rid of the spices and things. Bring the remaining liquid to the boil and let it reduce somewhat. Shred the chicken or slice into bite-size chunks. Poached chicken thighs aren’t the sexiest to look at, but there’ll be plenty of distracting colour later on.

Set aside 1/4 cup of the stock for the peanut sauce, and top up the remaining stock in the pan with water, bring to the boil and cook your noodles in it according to packet instructions. Drain the noodles, toss with the peanut or sesame oil, and divide between two plates.
Slice the capsicum and the cucumber into sticks, and arrange on top of the noodles along with the chicken. Finally, whisk together the dressing ingredients (or you could blast them in a food processor) till very smooth. Drizzle the sauce over the two plates of salad, scatter with spring onions or coriander if using.

Note: I didn’t have a lemon or cream, but I did have some amazingly thick, tangy Zany Zeus Greek yoghurt which I figured would cover off both needs. It did, and how. Sour Cream would probably be great as well, or you could just leave out the dairy altogether and replace the stock with water (or vegetable stock).

Lorraine Downes’ name was not taken in vain here – this salad is stunning. Though, it was easier for me to arrange it between two plates rather than put it all in a bowl, so I’m not quite sure if it really even is a salad still. Oh well – the poached chicken is amazingly tender, the peanut sauce is thick but light, blanketing the crunchy vegetables and soft, deliciously bland noodles. I just love peanut sauce but even so, the mix of textures and tastes is wonderful and it’s a great dinner on one of those evenings that is hot, but not so hot that you only want to eat an ice cube for dinner.

There’s plenty to love in this book, especially the descriptions before each dish – some of it practical, some hilarious (“once met someone who was on a diet and was drinking rum essence in diet cola…it tasted abysmal.”) When you turn to the back cover, they’re on a farm, Hudson is wearing a bucket hat and sunglasses and leaning on a spade, while Halls wears tiny shorts and has a rifle casually swung over his shoulder while lunging against a fence – two large black dogs sit beside them. Hudson died of cancer in 1992 and Halls left pretty soon after him. Their books aren’t so easy to track down – while they might be due for a reprint sometime soon, it’s worth hunting next time you’re in an op shop or at a book fair. They’re a lesser known chapter of New Zealand history, not to mention there aren’t many other places these days you’ll find a salad named after a 1983 beauty queen.
Tim and I were at Wellington’s opening night of Rocky Horror Show at the St James tonight – it was an absolutely incredible show, I seriously recommend you go along if you’re even halfway curious. The staging, the quality of the acting and singing, and the sheer energy is all turned up to eleven and besides, watching an audience so joyfully receive music – it’s a beautiful thing. Obviously it was exciting to see the strangely ageless Richard O’Brien who created the show, star as narrator (the round of applause on his entrance brought the performance to a halt) and you gotta hand it to Kristian Lavercombe playing O’Brien’s original role of Riff Raff with such wicked aplomb. Special mention must go to Juan Jackson who played Frank’n’Furter; he barely needed acting ability with his charismatic muscle structure, but luckily he could emote realistically, sing like the great-grandchild of Paul Robeson, and skip carelessly in platform heels. Being a rock opera it maintains a cracking pace – it’s easy to forget just how many incredible songs are crammed into this one wonderful show.

honey to the bee that’s you for me

Note: As mentioned in my last blog post, I’ve been nominated for a Wellingtonista award, and while it’s seriously exciting and happiness-inducing to be amongst some distinctly high-profile nominees, it’s also quite nice to be voted for, so I can hype myself up into thinking I might win. I recently got sent some honey – two jars – from the astute folk at Airborne. I was caught off-guard when they contacted me, am not sure where I stand on “accepting then blogging about free stuff” because it hasn’t really happened till now. Some people are hardline about this, refusing to accept anything, and I suspect I’d want to avoid it too – this is my blog and I’ll talk about what I want when I want – but damnit, I liked the idea of free honey and was 99% sure it would taste good and not compromise some kind of policy I haven’t even got the kind of clout to be developing in the first place. To find out more about Airborne, by the way, their “Why Choose Us” page is a reassuring read – these people treat their bees and their honey well.
So, two jars arrived – a large jar of thick, creamy Kamahi and a smaller jar of liquid, clear Tawari. And, thought I, here’s the chance to try all those recipes with lots of honey in them! But for some reason I either couldn’t find anything, or the stuff I could find, I was all “eh” about, so I decided to just make up my own stuff instead. (That said, Mum, if get the time could you please email me the recipe for those honey buns we used to make? From that handwritten recipe book I think?) (Edit: Thanks heaps Mum!)
At the vege market down the road there’s this amazingly good tofu at $4 for a large block, scored into four ‘fillets’ as I call them. However no matter how much I try, I can never quite finish it before it starts to go all orange and creepy. There’s only so much dense, filling firm tofu I can get through in a couple of days. On top of that we somehow ended up with three heads of brocolli, because I forgot that we had it and then bought some more. I hate wasting food but I’m also very forgetful, so this just sometimes happens. This following recipe however takes some neglected brocolli, some teacher’s pet asparagus, and some tofu that was somewhat past its best (not at the ‘unsafe’ stage or anything, just not looking so happy to see me when I opened the fridge) and turns it into a feast.
Honey Miso Roast Vegetables

I used a square of firm tofu, a head of broccoli, and a handful of asparagus. Use what you have – the veges need to be able to withstand some roasting. Cauliflower and kumara would be pretty perfect here too.

Whisk together:
  • 2 teaspoons white miso paste

  • 1 tablespoon clear honey (I used Airbourne’s Tawari)

  • 1 teaspoon (or more) sambal oelek or other red chilli paste

  • 1 teaspoon sesame oil

  • 1 teaspoon wholegrain mustard

Set your oven to 200 C. Chop your vegetables and tofu into fairly similar sized smallish pieces. lay the chopped vegetables on a baking-paper lined tray and spoon over the miso-honey mixture. You could also pour the mixture into a big bowl and toss the veges through it, but I couldn’t be bothered with the extra dishes. Roast for about 20 minutes or until everything looks burnished and cooked through. Eat over rice or noodles or just as is.
Don’t be alarmed by the dark, miso-toffee bits that appear (strangely delicious too, I couldn’t help peeling it off the baking paper and eating it) as whatever clings to the vegetables and tofu will taste incredible – sticky, savoury and full of complex, fragrant flavour. The tightly clenched branches of brocolli stretch out under the heat and become deliciously crisp, while their stems remain juicy and tender. The flavour of the asparagus intensifies under the caramelly, hot honey and the tofu becomes…totally passable.
Obviously with honey some kind of pudding or baking attempt is only right. It was relatively recently that I learned about frangipane, a buttery, almondy mix for filling pies and tarts and so on. I had an idea that honey could be a good exchange for the sugar. So I did it.
Honey, Almond and Dried Apricot Tart

1 square of bought puff pastry (I guess you should try and get good quality all-butter stuff. The ingredients on my Edmond’s ready-rolled sheets said “butter” but I have heard terrifying rumours of some awful sounding substance called “baker’s margarine”.)
1 egg
2 tablespoons creamy honey – I used Airborne’s Kamahi
Heaped 1/3 cup ground almonds
40g butter, melted
About 20 soft dried apricots

Set your oven to 220 C, and place the square of pastry onto a baking paper-lined tray. Lightly score a 1cm border around the edge with a sharp knife (don’t cut right through). Once in the oven, this will puff up and look really pretty.

In a small bowl, whisk together the egg and the honey. Stir in the ground almonds and melted butter. This will make enough for the tart plus a generous amount for you to taste (it’s delicious!) Spoon carefully over the centre of the pastry, spreading a thin layer across to meet the edge of the margin you’ve scored (as per the picture.) Carefully pull or slice the apricots in half or – if you’ve got lots of apricots, just leave them whole – and arrange on top of the pastry. Paint a little melted butter or egg yolk round the margin if you like. Bake for about 15-20 minutes – as long as you can leave it in without burning.
The first time I made it, I was doing the dishes and forgot to check on the oven. All the sugars in the honey and apricots couldn’t take being ignored, and the tart was a blackened mess (did this stop us eating it? Erm, no). It was late at night, the kitchen was covered in frangipane-smeared implements (myself included), and the ingredients aren’t the cheapest, so I may have yelled “I’m never doing the dishes again! It’s a sign! I hate everything!” Or something to that effect.
The second time I made this tart earlier in the evening and with new enthusiasm, I watched it like I was judging gymnastics at the Olympics – focussed, scrutineering, coldly assessing for any stepping outside the lines. I can’t have eaten nearly enough delicious frangipane mixture though because there was too much on the pastry – it billowed up and spilled over. I quickly turned the oven off to halt the frangipane pilgrimage to the edge of the oven tray, but this meant that the centre of the pastry sheet didn’t have time to get light and flaky. It wasn’t uncooked, just sadly damp, floppy and uncrisp.

While this was happening Tim was watching footage of the Pike River chief executive Peter Whittall, who can’t have slept in the past week, showing a map of where the 29 miners were thought to be, deep in the stomach of the earth. The projector cast shadows across Whittall’s face, and I looked at the tart and thought “oh well”. So we ate it, and it was fine – delicious in fact, with what I considered a bonus breadth of cakey frangipane to pull off the tray contemplatively. Yes, the underside needed longer in the heat, but the soft dried apricots were warmed to an heady, jammy perfumedness, while the fruity, creamy Kamahi honey somehow amplified the fresh, Christmassy flavour of the often dull ground almonds.

While it may need some tweaking here and there, you can feel free to go ahead and make this recipe. Although, while I ended up with deliciousness I’ve only made this recipe twice and it was somewhat fail-y both times…don’t blame me if you get frangipane all over your oven/walls/hair.
For any international readers, the Pike River mine explosion last Friday caused the disappearance, followed by confirmed death after a second explosion on Wednesday, of 29 miners on the West Coast of New Zealand’s South Island. I was a bit naive and was saying “I hope they’re staying calm” to which people would reply, “if they’re alive”. The sickening sadness that their families, friends, colleagues and community went through, and continue to go through, makes the heart ache. If you read the newspaper (and it’s usually the narrow columns to the left and right of the page that relay the saddest stories in the briefest of paragraphs) you’ll see that tragedy happens everywhere and every day. The scale and public nature of this disaster means it has particular resonance across the country though. With that in mind – with anything in mind really – a burnt or awkward tart is something I can shrug at.
On Thursday morning, the Kamahi honey was spread thickly across hot toast, cut from a loaf of Rewena, the honey slowly filling the pools of butter that gathered in the bread’s crevices. The simplest solution of all, and it was so good. And, at a stretch, a kind of an early prototype version of the above tart. Actually I bet honey and apricot jam on toast (just spontaneously riffing here) would be amazing.
