and morning soup can be avoided If you take a route straight through what is known as parklife

It has been a bit of a time for ya girl of late, what with – she says vaguely – one thing and another. Notably I spent the weekend firmly swaddled in illness due to kidney problems, which came with bonus excruciating back ache and the admittedly interesting conundrum of being both hellaciously feverish and shiveringly cold simultaneously. I have no idea what it is or what caused it or what its deal is, but something very similar happened to me back in 2007 so I guess it’s just that my kidneys like to act the fool once every decade. Also, when it happened in 2007 it was misdiagnosed as a sprained rib, to which I was like “um, do you even know how unlikely that is and how sedentary I am”, to which the doctor was like “nope definitely a sprain”, henceforth giving me a lifelong suspicion of diagnoses.

Anyway, I read online that tomatoes are really good for your kidneys – on one of those websites that’s all “make a tincture of parsley and sorrel and then when that’s ready six weeks later make a rudimentary poultice and apply it to the hurty bit of you” (I had to spend an amount at the after-hours clinic that was so huge it almost made me cry in order to get a prescription for antibiotics, so you see why I was initially trying to cure it on my own using dirt and leaves and stuff.) The antibiotics have more or less swept away all the pain but I figured it couldn’t hurt to up the tomato quotient in my life, in an attempt to appease my truculent kidneys.

This Ottolenghi recipe for burnt aubergine soup had caught my eye, but I really wasn’t sure when I was going to make it, on account of my opportunities to cook for myself are few and rare. Luckily the hand of fate intervened! I had some appallingly bad nightmares which woke me up at 4.30am the other day, and could not go back to sleep no matter how firmly I squeezed my eyes shut and listened to soothing meditation videos telling me I’m a good person who’s definitely relaxed and sleepy. By 8am I realised I really wasn’t going back to sleep, and in the feverish grips of all that, decided I might as well be productive with all this time. Making soup suddenly felt like a really good use of my morning, so I hurtled to the supermarket, bought the ingredients (hurrah for having spontaneous cooking whims post-payday) and started making it, all before 9am.

I think I say this in every single post about soup that I’ve ever done, but…soup usually really doesn’t appeal to me that much. It’s just a bowl of wet stuff! There’s not nearly enough crispness and crunchiness! You can’t deep-fry soup! And so on. This soup is super excellent though; the smoky grilled eggplant against a backdrop of rich tomato; the fried cubes of eggplant on top providing proper texture and silky oiliness with every bite, the feta being delicious feta.

The recipe below looks horrifyingly long, and I shan’t candy-coat it for you: this recipe does take up quite a lot of time. But it’s so easy! And I just wanted to talk you through all the steps to make sure I had explained it all properly. Really all the instructions you need for this soup are grill, fry, heat, stir, blend, eat.

adapted from a recipe by Yotam Ottolenghi. I know we call them eggplants here in New Zealand but the recipe itself calls them aubergines and it sounds more poetic. So. 

three large eggplants
plenty of olive oil
salt
one large onion, finely diced
one and a half teaspoons ground cumin
a teaspoon of sugar
a tablespoon of lemon juice
one can of crushed tomatoes
a stock cube of your chosen persuasion
feta cheese

First, deal with your eggplants. Turn the grill on your oven to as high as it will go, stab two of the eggplants a few times with a knife, and then put them on a baking tray preeettty close to the grill. Leave them there for what will feel like hours, but is probably an hour maximum, turning them occasionally. Don’t worry if they’re all blistered and deflated looking, it’s what we’re going for here. Remove them from the oven, allow them to cool a little – or don’t, if you’re impatient like me – and remove the skin, which should be crunchy and fall away with a little encouragement. I ate the lot, discard it if you like. Place the frankly weird looking eggplant flesh into a sieve set over a bowl, and allow it to sit there weirdly while you get on with everything else. 

Take the remaining eggplant, dice it into small squares, and then in a saucepan that you’ll later make the rest of the soup in, heat up about an inch of olive oil till it’s sizzling. Fry the cubes of eggplant, in batches if necessary, letting them really just sit there in the hot oil so they get properly browned, before carefully turning them over so they darken on the other side. Add more oil before tipping the next batch of eggplant in if need be. Just deal with how much oil this uses. Carefully remove the browned crispy pieces to a sieve over a bowl and sprinkle with salt (this bit is honestly probably not that necessary? Unlike the earlier sieving bit.) And try really, really hard to not eat the lot. 

Okay now you’re finally done with all the damn prep stuff, and you can actually make soup. With the remaining oil in the pan (there should be around a tablespoon or so) gently fry the onion for five to ten minutes till it’s very soft. Add the cumin, the lemon juice, sugar, can of tomatoes, stock cube and then fill up the tomato can with water from the tap and tip that in. Add another can full of water if you like and want the soup to go further. Let all this simmer briskly till it has thickened and reduced a little and, you know, looks like the makings of some literal soup.

Finally! Add the eggplant flesh to the pan (the burnt stuff, not the fried stuff) and either puree it with a hand-held stick blender thingy, if you have one, or do the stressful thing and transfer it perilously to a food processor and blitz thoroughly. I did the latter, and it doesn’t make it entirely velvety but any texture is pleasing, so, whatever. It’s just so much more of a pain to clean and also it might fly everywhere and you might spill it while getting it in and out of the processor bowl, but anyway. You now have your soup. Ladle into bowls, top generously with the fried eggplant cubes and crumble over plenty of feta. 

Serves two-ish. You could add another can of tomatoes if you want it to go further. 

As well as changing some details I reduced the original recipe’s quantities, but if I were you making this I’d increase the quantities of the liquid and the eggplant just because if you’re going to that much damn time-consuming effort you might as well get a ton of soup out of it and feed an appreciatively gasping crowd. Is it worth it just to do all that for yourself though? Of course! There’s no one more important than me. Is what you should be saying to yourself. I know I hear it enough to occasionally believe it. For real though, this soup has such excellent depth of flavour and the fried eggplant bits are so compulsively good: it is so much more than just a bowl full of wet stuff.

A bright firework of light through all this is that today is the five year anniversary of my friend Kate and I meeting each other at Mighty Mighty in a breathless, hand-clasping fashion, and ALSO Lucy Liu’s birthday. We both love Lucy Liu with the fire of a thousand fires so let’s just say it is feeling auspicious up in here. I can’t believe my life has been this blessed for five years now and I also can’t believe I didn’t meet Kim, the third prong in our equilateral triangle of friendship, till halfway through the following year.

All of everything else aside, I know it’s a dull take but I CANNOT BELIEVE it’s literally December now. I’m not ready! Also December always makes me super introspective and I’m already feeling introspective so it’s all just a double helix of feelings. On the upside, the smell of pine sends me into catnip-esque conniptions and we have erected an enormous, splendidly bushy real Christmas tree at work, every time I pass it by I feel more and more seasons greetings-y. Thanks, Pavlov’s Christmas tree!

Honestly the song is ridiculous but I’m in it for the incredible dancing, especially from Donna McKechnie who blatantly has elastic where her bones should be. It’s hard to explain, but this is just weirdly important to me. The video, not the consistency of her bones, I mean.

One Direction, Hey Angel. I had very low expectations for these guys post-Zayn, but UGH this is such a good song. It is just so big and manipulative and I love it heartily.

For a while there I was feeling some sizable angst about turning 29, partly because I was like, I’ve blatantly achieved nothing in my life and am an elderly loser (I know neither of these things are true but when you’re already prone to hyperbole it’s amazing the distance that your brain will take the existing hyperbole when you’re being down on yourself) and I also was like, I’m blatantly too old to achieve anything ever, am no longer an ingenue, am a giant snore in a trenchcoat and hat with a fake mustache on pretending to be human. (Again: the hyperbole! It really goes places, doesn’t it?)

And then I reminded myself that Beyonce and Nicki Minaj are 33 and 32 respectively and have released the most fire music of their careers in the last couple of years, and that I have so much ahead of me and 29 is still really young and I should just drink some water and calm down a bit because the passage of time cannot be fought so you can either age yourself horribly by worrying about it or ignore it because it’s ultimately meaningless. I mean, Beyonce’s 2013 album is honestly life-changing, to put it casually. If she can do that at 32 with all her resources and brilliance, I can achieve something productive as a tired moderately broke but talented 29 year old.

So yes, I had a birthday recently, and it was honestly quite perfect. My boundlessly marvellous girlfriend cooked me a Full English Breakfast with about seventeen different kinds of protein (including black pudding – seems somewhat gothically appropriate to start one’s birthday consuming literal blood) and we sybaritically clinked glasses of whisky to go with it. I dyed my hair purple, I had a beauteous dinner and follow-up drink with my very best friends Kim and Kate, and then said girlfriend and I went to the St James theatre (above) to see the musical Singin’ In The Rain, which I swankily yet utterly serendipitously had scored free tickets to. It was just wonderful and I urge you to see it if you have even a passing interest in musicals, old movies, tap dancing, and singing in and/or rain. The costumes were spectacular, the dancing was brilliant, the singing was on point – Gene Kelly casts an unfairly long shadow but the guy playing his role was ideal – and it was just so joyful. The night finished with cocktails and fries at my work and some general reflection on how completely good my birthday had been (and on how funny it was that I had reflexively replied “Happy birthday!” several times that day when someone had said “Happy birthday” to me.)

Winding back to a couple of days before my birthday though, I made myself this Mediterranean-ish eggplant and beef dish. Since it was so simple and good I thought I might as well try to blog about it, and five million days later I’ve finally got around to it, with my usual efficiency and haste.

It’s vaguely Mediterranean insofar as it includes some flavours of that (vast, varied, unable to be generalised and yet here I am) area, but since I just made it up based on what was in my pantry I hesitate to label it anything more specific than that. What I can confidently tell you is that it’s rich yet sharp, with spiky sour sumac and lemon zest lifting up the crisply fried, melting cubes of eggplant and tomato-y beef, with thick, creamy spoonfuls of Greek Yoghurt dropped here and there adding to that rich-sharp contrast. I love thyme so much, so that’s what I scattered over this, but oregano or mint would also be splendid in their own way. The only real change I’d make is using pine nuts instead of sesame seeds – they’re just a bit more exciting and lush – but as long as you have something nut-like there it’s all good really. If you can’t find sumac – a beautiful sour, lemony powder from sumac berries – then just add more lemon zest or simply leave it out. I mean, I love its flavour but probably the main thing you’d lose is the way it somehow ties the dish together visually and stops it looking like “beef that yoghurt got tipped on”.

fried eggplant and beef with sumac and greek yoghurt

a recipe by myself, serves two 

one large eggplant
one red onion
one garlic clove
300g beef mince
half a cup tomato passata/puree
one lemon
to serve: 
thick Greek yoghurt
sumac
sesame seeds
thyme leaves

Dice the eggplant, and fry in plenty of olive oil (around three tablespoons) in a large pan. Allow to get properly browned and crisp as much as possible before setting aside, and in the same pan, fry the onion, garlic and beef until everything is thoroughly browned and cooked through. 


Grate the zest from the lemon, then squeeze the lemon juice into the beef along with the tomato passata and allow to come to a brisk simmer. After about five minutes return the eggplant to the pan to heat through, then transfer it to a serving dish (or serve straight from the pan), finishing with spoonfuls of Greek yoghurt spooned over at random, a generous blanket of sumac (she says, not having intended to put that much on but got a shaky hand, so we’re going with it) a scattering of dried thyme and toasted sesame seeds. I also add plenty of salt. Because I love salt.  

The yoghurt I use is Zany Zeus which is so thick, thicker than sour cream – if all you have is runny, slightly chalky stuff then I would not personally go putting it on this, but you do you. I do maintain though, that it’s the intensely thick, satiny texture of the yoghurt which makes this. I really haven’t cooked meat in forever but in the last two weeks I made ribs (for my girlfriend’s birthday, which also fell in April) and now this. I can go weeks without eating meat, even though I do love it, but I’m glad I dazedly purchased this mince in an overtired haze and then even gladder that I worked out something so completely delightful to make with it. If you want to though, you could just double or triple the eggplant and leave out the beef, since the vegetable’s buttery softness and golden brown crispness after being vigorously fried is entirely enough joy for your tastebuds on its own.

My birthday didn’t stop when the clock struck midnight on the 17th though, as my flatmate and dear friend Charlotte and I had a joint birthday party the following night. (Her birthday is a week or so before mine.) There was dancing and punch and disco lights and a noise control notification (less fun! Unimpressed tbh! But uh, it happened) and cake and candy and a little tequila and so many good people and very importantly: I had an incredible yellow shaggy fluffy cardigan.

So now that I’ve had a wonderful birthday and spent some time in solemn pious meditation on the achievements of Nicki/Beyonce, I’m completely ready to enter my 29th year full of thrive and bliss.

It’s got that perfect late 90s horn section going (I used to get it mixed up with Flagpole Sitta back in the days where you might hear your favourite song on the radio once every six weeks, so if you like that song you may well enjoy this.) Am a particular fan of the rollicking piano on this. 

Sia, Elastic Heart. This song is brutal and gorgeous and the dancing and storytelling in the video is utterly compelling. Thick skin and elastic heart, such imagery in those words! Oof. Also as one who would likely livetweet brushing their teeth if the notion took me, I admire Sia’s commitment to being mysterious and anonymous.

Ya girl is moving house again! 2014 was a year of four different addresses, so I’m tentatively hoping this time things are even marginally more settled, but if not, at least I’m used to it? I’m really looking forward to properly unpacking all my stuff when I slide into my new address in early February, and and am going to try sooo embarrassingly hard to make my room all dreamy and tumblr-ish (meaning fairy lights and sheer, draping fabrics. It will very likely be a tacky mess. But it’ll be my tacky mess.) I am less looking forward to trying to spatula together a bond payment from behind the couch pillows of my bank account, but hopefully it all comes together. And in what is a coup for my co-dependency (I guess I also have coup-dependency, now that I think about it) the new digs will be just around the corner from where I’m currently lodging with one of my best friends, so I can still visit all the time. And continue my mission to become best friends with their cat Ariel. We’re currently on a first name basis kind of thing, although over Christmas we did have a nap together and it was without exception the most amazing thing that has ever happened to me. 
I see red, I see red, I see red 

So, I am trying very hard to not spend any money that doesn’t urgently need to be spent in anticipation of all the costs involved in moving house. I immediately bought a pomegranate after deciding this, but at least I put it to good use in this amazing salad, rather than how I usually treat spontaneous luxurious food purchases: gaze at it reverently for days, not daring to actually eat it, until it is completely withered and decayed and implodes at the slightest touch. (I also bought myself a coffee today but I admitted it so you can’t scold me now.) Anyway, my dear flatmates had made this gorgeous tomato and pomegranate salad from Ottolenghi’s newish cookbook Plenty More, and generously shared it with me. It was the kind of perfect deliciousness where you know you’re going to try recreate it at the nearest possible opportunity, and so here we are.

This combination is glorious, so juicy and sweet and surprising and sunny, with the blissful crunch of pomegranate and the soft, juicy tomato and a tiny pinprick of smoky oregano and a dressing made with lip-smackingly sour pomegranate molasses and olive oil. And it looks like you’re eating a bowl of damn rubies, I swear – so glossy and red and glowing. It’s just the prettiest. While it causes me deep sighs to have to dice up all those tomatoes, keeping everything small means you can’t tell where one ingredient starts and another ends and makes the pomegranate just as much of a star as anything else, instead of a garnish. It’s just spectacular, okay. I love being surprised by food in the same way that I love being surprised by music – you know when you hear a new song and suddenly think yes, how did this song not exist in my life and I can’t believe someone brought it to life out of thin air just when I thought all the songs that could possibly exist had already been written. Food can be like that too.

tomato and pomegranate salad

a recipe by Yotam Ottolenghi, from his book Plenty More

I’ve left his recipe pretty much as is here, but like, the tomato selection at the supermarket was no fun, so I made do with some cherry tomatoes, vine tomatoes, and regular tomatoes. The dressing is so full of life that it’ll embiggen some fairly pale produce, but try to make sure at least some of the tomatoes that you’re using taste like tomatoes. Oh also I left out the red onion but whatever. 

200g red cherry tomatoes, cut into ½cm dice
200g yellow cherry tomatoes, cut into ½cm dice (or, sigh, just more normal cherry tomatoes)
200g tiger (or plum) tomatoes, cut into ½cm dice
four medium vine tomatoes, cut into ½cm dice 
one red capsicum, cut into ½ cm dice 
one small red onion, finely diced 
two cloves garlic, crushed 
half a teaspoon ground allspice (or cinnamon)
two teaspoons white wine vinegar (you could use almost any other vinegar here instead – balsamic, red wine, etc)
1 1/2 tablespoons pomegranate molasses (this stuff is sublime, but replace with lime or lemon juice if you can’t find it)
60ml olive oil, plus a little extra to drizzle at the end
the seeds from one pomegranate
one tablespoon fresh oregano leaves

salt and pepper


Mix the diced tomatoes, capsicum, and onion together in a bowl. In another bowl mix the garlic, vinegar, pomegranate molasses, allspice and olive oil and stir this into everything. Either transfer everything to a big flat plate, which is Ottolenghi’s recommendation, or leave it in the bowl, which is what I did, and then sprinkle over the pomegranate seeds and oregano. Drizzle over some more olive oil. This benefits from plenty of salt, so do some stirring and sprinkling and tasting till you’re satisfied. That’s it! 

red, the blood of angry men, tea, a drink with jam and bread (oh wait.)

This is almost ludicrously nourishing and vitamin-rich, which is a pretty cool side-effect of eating something so massively delicious and beautiful. It’s the full package. I ended up eating 90% of it just as is by the bowlful, but it’s obviously going to make anything else amazing if you serve them up together – halloumi springs to mind, but then, halloumi always does.

As well as being frugal, planning to move house, and smugly eating vegetables, ya girl is also dying her hair. This is of course something that people do all the time, since the beginning of time, but I’ve made it 28 years without a single drop of dye touching my hair and so it was kind of a big deal for me. While there were slight “what have I dooooone” vibes to start off with I’ve had a ton of fun bleaching and toning and tinting and generally wreaking havoc upon my poor mop of hair, and have ended up reaching more or less what I was aiming for, what I call Sunset Hair. (It also might look like a sunrise of the tequila kind, according to Kate, but I’m cool with that. Tequila is delicious. I do hate the Eagles song of that same name though.)

The colour is a little mellower than this in person. Oh, and I love it! It’s funny how as soon as you modify your appearance in some way it’s suddenly no big deal and just the appearance you have and it doesn’t seem like things have ever been any different, you know? And it’s just hair. It grows back. Mine grows at a suspiciously fast rate, so a total do-over is not implausible.

Less mellow were the weird and whiny “I’ve achieved nothingggggg” thoughts that occasionally haunt me, although I then looked at the date today and like, it’s only January 12. But still. Time to get moving on some ambitions and agendas and stuff. Not least because doing that will be an excellent way to procrastinate from packing for moving house!

she takes your voice and she leaves you howling at the moon

I started writing this trying to compare my approach to food with Alice in Wonderland’s love of pretending and supposing and imagining and the comparison didn’t quite fit and so I deleted it and started again and deleted it and started again, along the way learning a valuable lesson: I subconsciously just wanted to show that I could use the word “adumbrated” confidently in a sentence (as in, I was going to say that I had adumbrated Alice’s words since I couldn’t remember where I had actually packed my copies of the books in order to quote them directly.) Long story short, I am pretty annoying and I have lots of ideas about food. 
Long hair short: this also happened. I may be pretty annoying, but am also pretty, comma, annoying.

My hair has never been shorter than shoulder length, and even that was only once. Many years ago. So: the smaller the hair, the bigger the deal, really. And I like it! It was terrifying having it happen, especially when it was really only spurred on by a vague sense of needing a change and also one time I tied my hair into a low bun and thought I looked alright without much hair going on, but I remain all or nothing and so was not going to settle for a mere bob or even an aggressive trim. I’m very happy with the results. It’s a whole new Laura! I now have so many new looks! Like “meanest girl in the 1960s boarding school” and “girl in a 1990 edition of Dolly having the time of her life” and “trying very hard to look like Edie Sedgewick” and “Justin Bieber”. In case you’re wondering, yes, I did keep the ponytail. I plan to plant it under a tree which I imagine will quickly flourish and bloom and grant wishes to passers-by who are true of heart. 

So yes, this salad came about because of an Alice-esque flight of fancy of mine – supposing there was a salad that was mostly made up of the sort of things that normally garnish a salad? As opposed to stupid vegetables? Lettuce leaves and cherry tomatoes were thus combined with the following good things: very buttery croutons, homemade basil almond pesto, fried sage leaves, toasted pumpkin seeds, crumbled feta, and pea shoots. I would’ve added avocado but none were ripe, but just know that it is supposed to be there also. I mean, this is essentially just “a salad”, really, but it’s fun to think of it as being comprised almost entirely of garnishes. So that’s how I’m going to pretend it is.

I know this is the same dish I used in the photographs for the last blog post, I understand if you never want to read this blog ever again now. 

garnish salad

a recipe by myself. Serves two with seconds, or four one time. 

one or two heads cos lettuce, roughly torn
a handful of cherry tomatoes, halved (sorry to be a monster, but they do go further this way) 
a third of a cup of pumpkin seeds
three pieces of slightly old white bread
lots of butter
a cup of fresh basil leaves
half a cup of sliced almonds
about 25g parmesan cheese
olive oil
a handful of sage leaves
about 50g feta
a handful of pea shoots
Make the croutons first, and while they’re cooking, get onto the pesto. Tear the bread into chunks around an inch wide, although it really doesn’t matter. Throw them into a baking dish with about 25g butter (or more) diced and dotted over the top, and bake at 160 C till browned and crisp. 

Meanwhile, using a large knife, roughly chop the basil, almonds, and parmesan till it forms a herbaciously fragrant rubble. Transfer all this into a bowl and stir in enough olive oil to make it a kind of pesto-resembling paste. Set aside. Melt a knob of butter in a heavy frying pan, and once it’s sizzling, throw in the sage leaves, removing and setting aside once they’re darkened and crisp. Finally, in the same pan, toast the pumpkin seeds until lightly browned. 

Now: put your lettuce leaves, croutons, most of the pesto, the feta, oh my gosh literally everything okay just put it all in a salad bowl and stir carefully so that it’s mixed together but not flung out of the bowl. Add a little extra olive oil to what remains of the bowl of pesto and spoon it over the top, and then serve.

It’s easy to make fun of salad, especially since the Simpsons gave us the truism that you don’t win friends with it, but when it’s as aggressively loaded up with as many good things as this it would be silly to deny its complete and utter deliciousness. Crunchy seeds and nuts, marvelous cheese and other cheese, sweet bursts of cherry tomato and dissolvingly buttery sage leaves. The lettuce has its place too, much as I’d happily eat a bowl of croutons on their own the fresh crispness of it helps bolster everything else and bring it all together. This is one of those things where you could make changes depending on what you have to hand or can find – use sunflower seeds instead of pumpkin, use walnuts instead of almonds (or use actual pine nuts but they’re monstrously expensive), use parsley instead of basil, increase or ignore quantities that sort of thing. Salad! It’s SO good. Or at least, this one is. 
So, I made another episode of Bedtime with Hungryandfrozen! This time about my love of grapefruit popsicles. I also obviously but totally recommend the first two videos, about cornflakes with chocolate milk and steak, respectively. I do get a little stressed about like, good grief, what am I doing with my life, shouldn’t I be doing something super successful in the field of being seen to be talking about food in a media capacity and instead I’m in bed making grainy videos about cornflakes, but…they are pretty fun.

look what happens when you move to the suburbs: brunch!
 
Ah, the suburbs! I say, with arms wide open like Maria Von Trapp on top of a mountain doing an impression of Scott Stapp from Creed in their song With Arms Wide Open. It has been a true rollercoaster ride of being ignored by the neighbour’s cat, taking slightly longer to walk to work, and picking fresh herbs from the garden to use as garnish. For real though, I’ve been cooking so much more than I have done in a long time, and it is good for that soul of mine. And also for inter-flatmate relations, since there’s nothing like being plied with brunch. On some recent morning (I forget which, I’ve been working day shifts as well as night shifts at work and it completely messes with my sense of what day or time it is at any given day or time) I made this for Kate and I  – a kind of improvisational thing vaguely based upon the Middle Eastern dish Shakshuka, using what I could find around me. Those things being tomatoes, a can of ‘Moroccan-style’ chickpeas, and some eggs.

Pulling it all together was some impossibly thick Zany Zeus Greek yoghurt (seriously, it has the texture of buttercream icing) mixed with sumac, dried thyme and sesame oil, with olive oil pooling on top along with torn mint leaves.

If Marmite on toast is the most adventurous you get for breakfast (and that’s cool, because oh man marmite and butter and toast together are sublime) then this might sound a little dubious, but obviously it’s going to taste amazing, so deal with it and expand your horizons. On the other hand, if you’re used to actual proper Shakshuka, this is a not-bad variation on that theme, I guess. Either way, it’s thoroughly delicious, with the softly baked eggs melting into the buttery tomatoes and spiced, grainy chickpeas. The tart yoghurt lifts up all these flavours and stops it being too, too rich, but also kind of adds to the luxuriant feel of it at the same time. If you’re only inclined to get hold of one herb then mint is what I’d recommend – its icy fresh-sweetness is perfect. But spicy basil and adorable pea shoots also help, if you happen to have some to hand like I did.

baked eggs with roasted tomatoes and chickpeas, also yoghurt with sumac and olive oil

a recipe by myself, but it’s not overly original, serves two to three people

four tomatoes
butter
olive oil
a pinch of ground cinnamon
a pinch of smoked paprika
about a tablespoon of brown sugar
one can of Moroccan style chickpeas, or just one can of regular chickpeas and about half a cup of tomato puree
one teaspoon ground cumin
three eggs
basil, mint, fancy pea shoots if you’ve got them

half a cup or so thick plain Greek yoghurt
one teaspoon sumac
one teaspoon dried thyme
one teaspoon sesame oil
olive oil 
a pinch of salt
more mint

Set your oven to 200 C/400 F. Halve the tomatoes and arrange snugly in a roasting dish. Sprinkle over a little cinnamon, smoked paprika, and the brown sugar, and put like, a teaspoon/small square of butter on each tomato half. Finally, drizzle with a little olive oil and then roast for about 20 minutes, then tip in the chickpeas and the ground cumin and return to the oven for another ten minutes. Crack the eggs one at a time into a small cup or bowl and then carefully tip them into the roasting dish (or just crack them straight in but it’s a little easier this way. Return to the oven and lower the heat to 180 C/350 F, and bake for another ten to fifteen minutes until the eggs are juuuust cooked. Remove from the oven and scatter with your herbs and then serve. Oh wait, the yoghurt: mix the yoghurt, sesame oil, thyme and sumac together. Sprinkle over some more sumac, drizzle over some olive oil – a couple of teaspoons – and sprinkle with some torn up mint.

It makes you broke), how do you be a human without making it look as though you’ve read a book called How To Be A Human, will I ever get another cookbook, what’s the deal with self-esteem, that kind of thing. But I’m reeeeally well fed. And making progress with the cat!

It was a full moon in Pisces this week, so I don’t need to tell you that this particular horoscope stirred up some intense emotions. Luckily for me I was coolly prepared by already maintaining a lifestyle of nonstop emotional intensity! Also luckily there were lots of nice things going on, like eating a giant pretzel Momofuku cake for my girl Kate’s birthday, dressing up as Columbia for a special screening of Rocky Horror at work, more pats with Percy the corgi, and discovering and then watching the entirety of in one evening, the truly heart-wrenchingly delightful TV show Faking It. It was also the excellent Tim’s birthday, and I made him this peach balsamic barbecue sauce as a present. I had a half tin of peaches in the fridge and many spices and condiments in the pantry and a budget that stretched to one small red onion. This recipe that I found appealed to me because of all these reasons, but also there’s something oddly pleasing about making your own preserves and sauces and such, and I thought the peachiness might add a sweet, summery Americana vibe to something already so very American. (Also…I had half a can of peaches in the fridge.)

Apologies for including a fiddly specialty ingredient like liquid smoke, but it’s not that hard to get hold of a bottle of it in fancy food shops or online, and if you like things to taste smokey then you can either find some or sigh perpetually about how nothing tastes smokey. (That’s as much tough love as I can possibly muster: buy this thing if you like, but only maybe, and either way I’m sorry.) If you can’t find it you’ll still have a deliciously peachy sweet-sour sauce, but as soon as the liquid smoke is stirred in it suddenly becomes like sunshine on your shoulders and protein seared on magma-hot metal (said protein could be tofu, I’m easy) and your hair being scented like woodchips for days and being ravenous and everything taking so, so long to be cooked through so you have to drink a lot of beer while you wait. So like, you might want to get some.

peach balsamic barbecue sauce

adapted from this recipe on damndelicious.net, makes around 250ml

  • one tablespoon olive oil
  • one red onion, diced
  • one tablespoon chilli sauce (or to taste, I used sriracha which is kinda mild, hence a tablespoon)
  • one teaspoon cumin seeds
  • two large ripe peaches, diced, or the equivalent of canned peaches
  • two tablespoons maple syrup (or golden syrup or honey – maple is smokier though)
  • 1/3 cup balsamic vinegar
  • one tablespoon dijon mustard
  • one tablespoon tomato sauce/paste/similar
  • about half a teaspoon of liquid smoke
  • salt and brown sugar to taste – it definitely needs salt, sugar though? Depends on you.

Heat the oil in a pan and gently fry the red onion till it’s soft but not browned. Throw everything else in, except the liquid smoke, and allow to come to the boil while stirring constantly. Simmer for about ten minutes, then either blend it till smooth in a food processor or use one of those stick things that you use for pureeing soup (they’re genius! So little washing up to do!) (my new flat has one, I’ve never used them before) (anyway) and pour it into a small jar/small jars or directly into a bowl to serve alongside/on top of your dinner.

This sauce is so delicious. And I’m not entirely a heathen, I didn’t go eating Tim’s birthday present, there was in fact enough to fill a jar for him and a small ramekin leftover for me. I intended to pour it over rice or something but I just ended up eating the lot with a spoon. The aggressive throat-pinching sourness of the vinegar and heat of the chilli sauce is mellowed by the sweet, sweet peaches, and the spices give it depth and, well, spice. And as I’ve already iterated at feverish length, liquid smoke is also good. It doesn’t make an awful lot but then at least you don’t have to stress about desperately pressing bottles of it onto visitors forevermore, and if it’s really not to your tastes then at least all you wasted was a couple of tablespoons of this and that. Conversely, if you really love it, the recipe is very easy to double or triple. Barbecue sauce for all! I always thought I hated barbecue sauce actually, but it just turns out that I dislike the particular overly sweet nothingness-paste that gets swirled onto certain takeaway pizzas, which tastes like neither barbecue nor sauce. And it certainly doesn’t taste like going on for paragraph after paragraph about sunshine on one’s shoulders, etc.

I’m flying up home this afternoon for the first time since Christmas, so that’s something. Am looking forward to seeing my family and the cats (the cats are family but you might not pick up on my implications unless I spell it out for you) and spending time knitting and reading.

Finally: It’s election time in New Zealand! Can’t wait for it to be over so that I don’t have to see billboards everywhere, but am looking forward to voting. It’s completely appalling that prisoners can’t vote, but hopefully my own small vote and my right to do it can help be a snowflake in an ever-rolling snowball of good change. Your politics are your own business, but what you do with them affects everyone, you know?

Which is exciting because ya girl remains flat broke, and unlike when it was sold in stores, every dollar from books sold through me goes straight to me. Yay though, right? Ya girl is back. Or at least, ya girl is trying her best to be back. I’m still nowhere near being unpacked (my room somehow gets more embarrassingly messy the harder I try to clean? I dropped out of science early in high school but I’m pretty sure there’s nothing in all academic teachings that could explain this phenomenon) but I’m cooking more and attempting to get back on the freelancing stallion and am generally determined to recapture my ambition. For something. I mean, I never lost my ambition of being outstanding in the field of excellence, I just lost my drive due to Extenuating Circumstances and if I’m being scrutinisingly harsh, which I don’t enjoy, I probably got a bit exhaustedly complacent in that position of, well, not even trying to try. I’m not sure I’m quite approaching my old burn-all-candles-at-all-ends level, but I am rewatching a lot of Parks and Recreation to re-absorb all of Leslie Knope’s power (“there’s nothing we can’t do if we work hard, never sleep, and shirk all other responsibilities”) and I am trying to write more and I am going to start doing my chocolate cookie dough pretzel thing deliveries again!

Because ya girl is also somewhat broke. Moving house and being too busy/tired to maintain several sources of incoming cash is an expensive pastime. But also I miss scooting around town and dropping off parcels of deliciousness, like some kind of no-strings-attached moderately profitable fairy godmother. So if you’re in the Wellington CBD region and want some of the good stuff for yourself or for your secret admiree, all the information you need is here.

As I said in my last post, I have started watching The Sopranos, and despite my immediate misgivings at the violence and boring wife-is-a-thankless-harpy outlawish-schlub-husband-is-horrible-and-also-the-beloved-hero tropes, it’s so compelling. And it makes me crave Italian food something fierce. Initially I wanted to make meatballs but mine tend to fall apart and I didn’t have it in me on this particular day to bounce back from that kind of failure, so instead I went for something very easy – pasta all’amatriciana. I was hoping that it would translate to something to do with matriarchy, but it gets its name from being a dish from the region of Amatrice. Which is nice in its own way – this is just pasta with bacon and tomatoes, but calling it by its proper name gives it a more official, elegant vibe, like, oh I’m just casually making myself this traditional recipe from a beautiful town in the Lazio region of Italy, how bout you?

It really is very simple though, and therein lies its charm – gloriously saucy enough to feel like you’re doing yourself a favour, fast enough to not be stressful, familiar enough to serve up to fusspots. I feel like I’ve had several bad versions of this in my time at cafes that weren’t trying very hard, but home made it’s highly glorious. Thick tomato sauce, salty-sweet bacon, barely-melting parmesan – all twirled around ribbons of thick, comforting pasta. (Well, I for one find pasta comforting, it’s probably my favourite food.)

I slightly adapted a recipe from the Scotto Family, whose book Italian Comfort Food I own and adore. Half a cup of olive oil may sound terrifying in these austere times, but it becomes part of the sauce, making it rich and deeply flavoured and delicious and more than otherwise just a can of tomatoes. However, I understand you using less. Olive oil is expensive. Their recipe called for bucatini pasta but I am a heathen and adore pappardelle, and it was on special at the supermarket – however if you can’t find it, my sneaky and ingenious trick is to get sheets of fresh lasagne and slice them into wide lengths. Or use whatever pasta you fancy.

pasta all’amatriciana  

adapted slightly from a recipe by the Scotto family, serves two (or one with leftovers for lunch the next day, aw yeah) 

half a cup olive oil (or less, whatever)
100g pancetta or streaky bacon, diced (I used bacon but pancetta is superior if you can get it)
one onion, diced
one can chopped tomatoes
150g pappardelle pasta (or other pasta)
parmesan cheese, grated

Bring a large pot of salted water to the boil and cook the pasta according to the packet instructions, or until preeetty tender. 

Meanwhile, heat the oil in a saucepan, and fry the bacon in it till crisp and sizzling. Remove the bacon and set aside – I just put it on the plate I served the pasta on – and tip the onions into the still-hot pan, stirring them and allowing to cook until softened, but not browned. Basically until that harsh onion taste has been cooked out. At this stage, tip in the tomatoes and stir over a high heat till the sauce is thickened somewhat – maybe ten minutes – then tip in the bacon and stir again for another five minutes or so. Drain the pasta and stir it into the sauce, still over a high heat, and then remove from the heat, add as much parmesan as your heart desires, and serve. 

I haven’t bought parmesan in forever, because every time I pass it in the supermarket I passively-aggressively sigh at myself like some kind of lazily-written thankless shrew wife in nearly any TV show and say “oh…no, no I shouldn’t, that’s expensive,” even though the price is never going to change and I could pay a lot more for something else and have a lot less fun. I really should’ve bought some sooner, a fresh grating of it makes so many pastas and risottos more wonderful, and a little bit goes a long way. As I said a lot when I learned the phrase false economy: that’s not false economy!

and after that, we can ketchup like tomato

Nothing makes me feel like I’m smugly going to avoid scurvy (she says, having only eaten pizza, Nerds, and beer all day) than eating a vegetable one time. Despite my wayward ways, I do actually love vegetables not simply because they keep me more or less alive, but because they’re delicious and abundant and almost all of them taste incredible when they have heat applied to them followed by lots of olive oil. 
I’m one week in back at work, and without casting aspersions on my work ethic (why cast aspersions when you can be frank: my work ethic is usually in the category of “reluctant yet non-existent, at best”) it should be obvious enough that I’d much rather be on holiday. Who among us can say, etc etc. However, as with the chocolate brownies last week, I’m doing my best to improve upon last year’s trend of bleak lunches, month in and out. From days of pot noodles, to seemingly endless bowls of plain couscous with butter and salt, to microwaved cheese sandwich (we’re not allowed a toaster in the work kitchen. Oh, I know) I’ve decided I deserve better. By “better” I guess I mean “not having scurvy” but it’s all part of life’s rich tapestry, or something. 

Simple though the concept is, I’m not always good at remembering to make a large enough dinner to allow for lunch leftovers the following day. That’s where this Ottolenghi recipe for Mejadra, from his book Jerusalem, is useful – it uses such unstressfully-priced ingredients as lentils, rice, and onions, it’s all cooked in one pan, and it makes a metric butt-ton. I hear you, that those ingredients aren’t the first to spring to mind as examples of “whoa, alluring”, but there’s something in the crunchy-crisp fried onions, and the spices which find their way into the earthy lentils and rice, that is really rather wonderful.  

I’m just going to link to Ottolenghi’s recipe for Mejadra rather than write it out in full, because…oh, I’m very lazy. That’s it, really. I told you my work ethic was found wanting.

I shall, however, heroically type out another Ottolenghi recipe that I made to go with the Mejadra – this is properly simple, both of ingredients list and execution, and while it doesn’t sound like much it’s super excellent. Fried slices of tomato, bursting at the seams with sweet ripeness, a little garlic and chili for, well, the flavour of garlic and chili, and plenty of soft, buttery olive oil…when we have tomatoes at such peak being-in-season-ness, there’s not a lot that needs to be done to them. When they’re at their most prolific, I kinda like to eat them like apples. For now, this fast recipe can help bolster up anything from toast, to scrambled eggs, to…to rice and lentils and onions.

fried tomatoes with garlic

from Yotam Ottolenghi’s book Jerusalem.

three garlic cloves, crushed
1/2 a small hot chilli, finely sliced (I just used some sriracha as I was lacking a small hot chilli, or indeed a chilli of any size)
two tablespoons chopped flat-leaf parsley
three large, ripe, firm tomatoes
two tablespoons olive oil
salt and pepper to taste

Mix the garlic, chilli, and parsley together in a small bowl, and set aside. Top and tail the tomatoes and slice thickly vertically – about 1.5cm thick, but like, whatever. Heat the olive oil in a pan and then fry the tomato slices, turning over after a minute or two. I used an enamel roasting dish that can be used on a stove top, but I suppose it’s better the more surface area you have. It’s just that my saucepan was being used for the Mejadra, and…enamel is cute. Add the garlic mixture, fry a little longer, and then serve. 

It’s the sort of thing that you could – and in fact probably already have – come up with yourself quite easily, but nevertheless, sometimes it’s pleasingly comforting to be told what to do when cooking.  

And straightforward as it is, this recipe is pretty spectacular. All sweet and spicy and rich, yet very simple and plain and unfancy.

And very fitting on a table full of potluck brunch. I’m trying something called luxterity (luxe + austerity) this year, where there’s more care with spending (necessarily so) but in as elegant/dramatic/sybaritic a manner as we can manage (also necessarily so, because I like those things.) Having friends over for brunch saves a lot of money, is super fun, and there’s nothing like an air of “pants are barely required because I’m in my own damn house” to add a frisson to your morning repast.

That’s about it, really. This week has been very long yet very fast. Full of hangings-out (out-hangings?) and knitting (a hat) and reading (The Character of Rain/Amelie Nothomb; Are You My Mother?/Alison Bechdel) and watching (Pretty Little Liars and Practical Magic and all the new Beyonce videos again and again) and eating (endless Mejadra – that recipe really makes a lot; plus as many seasonal berries as I can find) and small but joyful things like that.

Also, I got a new beanie that I adore.

This isn’t going to make my knitted hat any less fun of a project, for one thing, I intend to put a pom pom on top of that one. Wellington’s weather has been monumentally horrible lately, so weird as it sounds to be thinking about warm hats in the middle of summer, that’s what we’re dealing with. I couldn’t care less. As long as tomatoes continue being cheap for a while longer…so if nothing else, I can pre-load on vitamins to cover me during my next inevitable stretch of candy and sodium chloride.

you like tomato and i like tomahto

It’s nice to have a happy little rut of recipes that are easy enough that you can make them while mentally and emotionally exhausted, not to mention physically exhausted (for example: from merely existing, or from watching the latest Game of Thrones, amiright? Spoiler alert: omg.) But they’re also adjustable and reliably versatile, like an old comfortable bra, that you can really throw them into anything and you’ll feel like you’ve done something nice for yourself of an evening. Somehow, this Tomato, Almond and Smoked Paprika sauce has become that to me. I think it’s based on a sauce I saw on a cooking show one time – seriously, those are the only details that I can remember – and occasionally I add other things to it. But it manages to be utterly simple, vaguely nutrient-adjacent (considering the nutritional value of my lunchtime pot noodles is akin to that of their polystyrene containers) and yet a little flashy and sexy and interesting. One of my very favourite things to do with it is to very slowly fry eggs in about five tablespoons of olive oil, then use that olive oil in the sauce itself, then serve all of that over couscous. But on Monday – Queen’s birthday, oh that joyous occasion…of a Monday off! – I made it to have roasted vegetables dipped into it or blanketed under it, while my friend Kim and I watched The Craft

I was curious to see if The Craft was still the piece of important, flawless filmmaking that it seemed to be to me in 1996. It um, wasn’t quite. But it was also still really fantastic in some ways, most of them fashion-related, and I still appreciate what it meant to me back in the day. A film about women, into witchcraft, who said “we are the weirdos, mister?” Thumbs up.

(The red candle in front melted rapidly and spilled over onto the floor. Which we only noticed after the movie finished. I admit, at first my brain thought “gasp! It’s an evil thing like the thing from the thing in the movie!” But really…it was just spilled wax. Phew.)

This sauce is just ridiculously delicious, although frankly I think the batch I made for myself and Kim was my weakest so far. Possibly because I used multigrain bread, which meant the sauce had linseeds dispersed through it, which…yeah. Not quite what I was going for. Generally though, this sauce is rich and luscious and a little smoky from the paprika and brilliant with all sorts of things – the aforementioned fried eggs, stirred through pasta, poured over cubed roasted potatoes for a patatas bravas effect, tipped onto polenta…it just goes with all things. Particularly these crisp, collapsing and slightly charred vegetables.

Roast Cauliflower and Parsnip with Tomato, Almond and Smoked Paprika Sauce

A recipe by myself.

As much cauliflower and as many parsnips as you please. I found about half of the former and two of the latter fit comfortably on one oven tray and will feed 2-3.
Olive oil
2 slices thick white bread (I used seeded this time round. Uh…don’t.)
1/2 cup whole almonds
1 can tomatoes
1 heaped teaspoon smoked paprika
Salt

Set your oven to 220 C and line a baking tray with baking paper. Slice the parsnip and cauliflower up however you like, but the more flat/thin you go, the better likelihood of crisp-ity there is. Arrange in one layer on the tray, drizzle with olive oil, sprinkle with salt, and roast for about 20 minutes.

Meanwhile, blast the bread and almonds together in the food processor till the almonds are good and nubbly and small. This may take some time. If your bread is quite stale, soak it in a little cold water for a while. Then drain the can of tomatoes of its liquid – I know, this seems kind of wasteful. I don’t know, drink the liquid if you feel bad about it (actually don’t, it’s weird and metallic and horrible on its own from the tin) and tip the tomatoes into the food processor with the bread-almond stuff and continue to process till it looks saucy and incorporated. Finally, add the paprika, a good pinch of salt, and plenty of olive oil – about three tablespoons – and process again. Taste to see if it wants any more salt or paprika, then either serve cold or heated gently in a saucepan in a bowl on the side of the vegetables. 

Dip the vegetables in the sauce or pile them into small bowls and spoon the sauce over. 

In case you’re wondering, the reason these are sitting on a cardboard box is because our one small table has our projector sitting on a chair on top of it. It’s kind of an awkward fixture to have in the house, but then we keep wanting to use the projector, so perhaps this is our life now. It’s not a bad life, considering how fun it is watching things projected in large scale onto the wall. 

What else happened on the long weekend? Why, plenty.

We went to our friend Craig’s 30th. It was a very fun night (less fun the next morning) especially bedizening ourselves with fake tattoos of Craig’s face (tattoo locations of Craig’s face include Tim’s actual face) and “Tattoos are for losers”.

First new duvet cover since 2006. As per, “is it instagrammable” guilelessly affected the decision-making process. It’s so crisp and clean and whenever I wake up I feel like I’ve been sleeping inside a bed of white chocolate ganache, I love it.

Amazing burritos occurred.

And finally I got an email telling me an advance copy of my cookbook (which isn’t due out till September so don’t try asking your bookstore about it yet, unless you think it will build up major h y p e) which I received in the mail today and nearly cried and threw up everywhere when I saw it because every emotion in the world suddenly played out in my brain. I mean, I’m really happy with it of course, but there was just such a rush of feelings when I held it in my hands for the first time, so much more intense than just seeing the printouts of the design and the manuscript and so on. I will have to work on this so I don’t black out every time I walk into a bookshop in September. It’s just very exciting and terrifying and strange and happy all at the same time. Cookbook!

Mariah Carey feat Miguel, Beautiful. This dreamy, warm song feels like a return to form for my favourite singer ever who’s non-returns to form I’d totally justify anyway. Have listened to it many, many, many times. 

The final few episodes of Nashville just slew me. I shed human tears and couldn’t move for half an hour after the season finale. A joyful highlight though, was Clare Bowen as Scarlett O’Conner, singing the hugely pretty Looking For A Place To Shine.

is this the comfort of being afraid

 

 

I believe comfort food is subjective, and what brings solace to me might leave others completely unmoved. Also, all food is comforting in some way, really. But I do love curling up with a significant quantity of the food which warms my soul – generally anything yielding and hot and salty, like very buttery mashed potatoes, or spaghetti with lots of butter and nutmeg, or cheese on toast, or really creamy risotto. Or this thing: pasta, covered in sauce made from minced beef and canned tomatoes, covered in white sauce made with milk and cream, covered in cheese. (PS: I deleted this way enormous preamble about anxiety and the difference between comfort food we seek in times of crisis compared to just eating it because we feel like it and wow are you lucky I edited it out, it because it went on for miles.)

Something I got to thinking about recently is comfort food for the mind: feel-better, everything’s-going-to-be-alright pop culture. Food can only do so much, and sometimes you want to take your nervous brain and transport it somewhere else for a while. If your brain is processing something soothing while your stomach is eating something particularly heartwarming? So much the better. In that way that similarities occasionally cluster in your life to make it feel like you’re in a TV show with an overarching theme in each week’s episode, I’d ended up explaining on several different occasions why I loved a particular thing so much: because when I watched/listened/read etc it, it felt like everything was going to be okay. Since that’s not a feeling any of us can take for granted, I decided to investigate it further. (Weirdly, I also had FOUR separate occasions last week of getting frustrated at not being able to find something because it was written on paper rather than being in my inbox. Bet Ray Bradbury’s out there somewhere smugly nodding.)

Here’s my (whim-based, non-exhaustive, non-alphabetical) list of comfort food pop culture.

Pop Culture Happy Hour, the nicest, happiest, snappiest podcast I’ve ever, ever heard. And it’s about pop culture, which I evidently have a general thing for.

The Hour

– Nashville (Connie Britton’s mere existence is weirdly comforting, I don’t know how she does it.)

Parks and Recreation (I want to say “you don’t understand” but that’s unfair. It’s just that it’s possibly bordering on concerning how much this show means to me.)

NewsRadio (Caveat: Actor Phil Hartman was murdered between the fourth and fifth season and I cannot physically bring myself to watch anything past the penultimate episode of season four. Just can’t do it. Luckily the previous episodes all stand up to being rewatched a million times.)

– Maeve Binchy’s book Circle of Friends. (I’ve never been moved by anything else written by The Binch, but I reread this book every summer and couldn’t be happier while it’s happening.)

– Marty Robbins’ record Gunfighter Ballads and Trail Songs. Mmmhmm. Also more or less anything by the Rat Pack. Frankly, if it’s from a time where singers were likely to have praised the rich smooth tar of their cigarette company sponsors for keeping their crooning voices shipshape (lookin’ at you, Nat King Cole), I’ll probably be hugging myself while listening to it.

– Wikipedia. Okay. I mean, it can be a little bleak (especially if you’re aimlessly searching along the lines of “whatever happened to…”) but there’s not much I love more than reading about the minutia of various TV shows or one-hit wonders or people’s lives or finding out how many towns are called Taft, or just looking up things like “kissing”.

There’ll be more that I haven’t mentioned, there’ll indubitably be things that look really good on paper that I’ve completely forgotten, but if you’re feeling all tense and twisty and in need of something to take your mind off bad things and zoom it to a land of delightful, I recommend all and any of the above. The list may look long, but it’s carefully chosen – it’s not just a case of something being really, really good. I predictably exult The Wire, I do not find it comforting. I am obsessed with many musicals, but listening to, say, Wicked or Grey Gardens will usually leave me more emotionally drained than at ease with life. No, to fall within the soft, inflatable bouncy castle walls of comforting pop culture it has to really make my heart kind of clench and release with happiness at the very thought of consuming it, and give you that rain-on-the-roof, snuggled in a blanket feeling that everything’s okay, even if the material itself isn’t that uplifting (I see you, Leonard Cohen.) (Admittedly, wikipedia is more what I read when I can’t sleep rather than like, a joyous occasion, but I stand by my inclusion.)

On Monday night I made this layered up, just-bordering-on lasagne dish for dinner and Tim and I ate it while sitting on the couch watching The Hour. Comfort food plus comfort pop culture? I nearly dissolved from contentedness. Even if it’s only a relatively quick fix, it’s a delicious one on all levels while it lasts. I’m not saying this recipe is particularly impressive, or even original – in the same way that various brands will assure you that one of their product is sold every seven seconds worldwide, I’m pretty sure recipes resembling this one are made every single night somewhere. But still, that doesn’t mean it’s not worth your time.

To clarify some things about the recipe: Yeah, I like my white sauce that buttery, although I can’t even tell anymore what is a reasonable amount of butter to the average person, since I eat so much of it. I didn’t specify any particular herbs because something about this reminded me of when I was first learning to cook, and adding any dried herbs at all – including those generic Dried Mixed Herbs packets – felt really knowledgeable and sophisticated. Plus, after a certain point on your shelf, most dried herbs start to lose their flavour anyway, so marjoram is just as friendly as basil or oregano or whatever. Finally, I really like adding a little cream or milk to a tomato-beef pasta sauce. It just rounds it out and lusciouses it up stops it just being a recently-frozen lump of mince and an ancient can of tomatoes.

Demi-lasagne (Aw c’mon, let me have that cute name. I know it’s still fairly inaccurate. But I hate any recipe that sounds like “pasta bake” and listing the main components fancy cafe-style – Pasta, Mince, Cheese Sauce – won’t do this any favours. And it is kinda lasagna-y.)

A recipe by myself. Serves two with leftovers for at least one lucky person the next day. The recipe looks long and complicated but it’s just me being talky, promise.


250g short pasta of some kind. Penne would look better in photos, but spirals is what I had.
1 tablespoon olive oil or butter
300g beef mince
1 tin of tomatoes
2 teaspoons dried herbs of some kind (I went for dried oregano, so old you had to actually plunge your nose inside the package to detect any scent!
2 tablespoons cream
50g butter
3 tablespoons flour
1 cup milk
1/2 cup cream, extra
As much cheese as you can deal with grating in whatever state you’re in while making this

Bring a pot of salted water to the boil and cook the pasta according to packet instructions – usually 10-12 minutes makes it edible. Tip the cooked, drained pasta into the base of an oven dish, you know the kind, like big enough that a cat would attempt to fall asleep in it but small enough to stack neatly in your cupboard. Just a typical oven dish.

While the pasta is boiling, heat the oil in a saucepan and fry the beef mince. Once it’s getting to the more-brown-than-pink stage, tip in the canned tomatoes (breaking them up with your wooden spoon if they’re the whole variety) and sprinkle over your herbs of choice. Allow it to bubble away merrily over a medium heat till the tomato liquid is reduced slightly, then tip in the cream, allow it to come to the boil again, and spatula the lot evenly over the pasta in the oven dish.

At this point, set your oven to 200 C. Finally, in the same pan (don’t bother washing it out, but at least make sure you gave it a decent spatula-ing) melt the butter, tip in the flour, and continue to stir constantly till it forms a thick, magically delicious paste. Once very thick, and a little darkened, slowly tip in half the milk, stirring continuously. Don’t worry about lumps – the milk will absorb into the flour and butter eventually. Slowly add the remaining milk, and then the cream, continuing to stir. Stir the lot for a bit longer over a low heat till thick and smooth, then pour this evenly over the tomato-beef mixture in the oven dish. Then, sprinkle grated cheese over evenly, and bake the lot for ten minutes. If you like, flick the oven over to grill for a few minutes to allow the cheese to get all bubbling and amazing.

It’s almost willfully unimpressive, but also tastes so good and needs nothing more. The joy of eating it is twofold – first of all the texture, in that you barely have to exert yourself, hardly need move your jaw, to eat this layering of the soft and the minced, and secondly in the unthreatening, familiar-to-me, sustaining and rich flavours of the beef and tomatoes with the melted cheese and bubbling sauce. Plus it’s all – well, some – of the fun of lasagne without most of the faffing around.

Last Wednesday night the Marriage Equality Bill passed its second reading. By a sound, impressive, prouder-than-I-thought-I’d-be majority. I had a good feeling about it but I also tend to quietly expect the worst as a kind of emotional safeguard. Perhaps related, I occasionally unhelpfully troll myself by reading the letters to the editor of local nationwide newspapers, and gee, will they ever give you a sad outlook on the world. But I won’t give any further time to such odium, because it did get voted to the next stage, and there were some incredible, hope-spurring speeches from all sides of the political spectrum.

Which means, amongst so many things, that Tim and I are one step closer to being able to marry! This isn’t the only reason this is incredibly important to us, but immediately after getting engaged we gave ourselves this goal – of not marrying unless Marriage Equality went through – and it’s pretty thrillsy to be a little nearer to it happening. I’m not quite sure when the next, possibly final reading is. But am cautiously allowing myself to continue to have good feelings about it.

A few of us went to see Rodriguez on Saturday night. I most definitely recommend Searching for Sugarman, the beautiful documentary about him (although, spoiler alert: reports of his death were greatly exaggerated.) Seeing him in person was astounding. Seventy years old, being helped up to the stage, and yet playing with all the vigor in the world and his voice sounding just as it does on his 1970 record. This Is Not a Song, It’s an Outburst, or: Establishment Blues sounded like it could’ve been written yesterday.
