Well well well, if it isn’t 2019, waltzing in bang on time. To start the year off with perhaps unearned but nevertheless ebullient ebullience I have two recipes for you, one via my mother and one via my father.

But first: I have a suspicion about the momentousness of the New Year that I also carry for weddings – everyone’s all, “we’ve got to have the time of our life! It’s New Year’s Eve! The party of the year! New Year New Me! This year will be different!” But where is that energy on like, March 3rd? Where is that energy every time someone complains about Monday looming unwelcomely on the horizon? Why are we so pressed about this one particular day that we otherwise would regard with indifference at best? That’s right, the New Year is but another calendar day. (How, if you’re wondering, this relates to weddings is: at said weddings we are all “love’s purest incarnation stands before us! I can’t believe these two love each other! I’ve never experienced anything like this! Not since the last wedding I attended!” And then two years down the line, if we see the same couple doing their groceries or whatever, well, what then of the flower petals and glad tidings? Why do we not cry and do poetry readings right there in the cat food aisle? How is it that their love is super interesting on the day of the wedding and then super mundane for the foreseeable future?)

THAT SAID! Any nudge in the direction of reflection and self-improvement is not the entire worst, and if you can use the turning of the year as motivation to do literally anything slightly better then well done, you. Indeed, as I shall demonstrate, I myself am not above such nudging! Despite my strong yet wilfully simplistic feelings about weddings, I am not anti-New Years sentiment at all. It’s just, something I have learned in this rich and storied life of mine is that every day can be a fresh start, a tiny new year, and relentless self-pressure once a year is not, in fact, the same as clear-headed motivation.

With all that in mind I have some cautious yet hope-filled intentions for the year, about which I’m just going to see what happens but also, y’know, put in some effort, and they are as follows: I’d like to save money so I can go somewhere, perhaps on holiday, as befits an adult of my age yet eludes me entirely; I like the idea of getting kind of jacked upper arms; I wish to resume knitting again but for real; I intend to maintain a bullet journal and use it to help me in turn maintain healthy choices (it’s working so far, I’ve already cleaned my teeth every single day this year); I’d simply love, come December, to look back on the year and not regret any time wasted although that’s obviously fairly abstract and difficult to control, but most specifically and above all: I will prioritise my writing this year. I spent a lot of 2018 feeling paralysed by various factors but in 2019 I want to create more recipes, plan a cookbook, pitch more things, do fiction or fiction-ish writing, work out if I’m any good at poetry, I’m sure I am, get literally anyone to read my excellent Frasier food blog, make this blog absolutely shine, embark on projects with confidence and just really sincerely believe in myself and to not let any bad mood or sad mood or person or rejection or fear or tiredness stop me from that. (When I went home for Christmas, Mum was like “when your lease ends in February you could always just move back here and pretend it’s a writers retreat” and I was like “honestly, you know, that like, for real, could like, you know?”)

Speaking of, going home for Christmas was the inspiration for the double-feature of recipes that you get today! First of all, on Christmas Eve while I was drinking port and enthusiastically re-watching The Crown with Dad, Mum whipped up this batch of immensely wholesome crackers held together only with goodwill and the gluey properties of chia seeds. It’s a recipe she absorbed, chia-like, from her best friend Vivienne (hence the name: Viv’s Crackers) and I honestly could not get enough of them. Because they’re comprised entirely of seeds, cooked long and slow, there’s this incredible toasty crunch yet utter lightness to them, and they’re just fantastically addictive as well as undoubtedly putting a shine on your coat with each one consumed. Mum and Viv drove me up to the airport on the day I flew back to Wellington to go to work and I pressed them for the recipe and their response was pretty vague – it’s just one of those recipes where you squint at the mixing bowl and make choices in the moment, the sort of thing that Aunt Daisy with all her instinctive wisdom and lively brevity would cook if she were around today. What I’ve written above is a kind of amalgam of what they told me, and obviously you can add many other things – Mum’s batch had cashews and pistachios in it, and Viv recommends adding a little chilli to the mixture. Either way, you’re only minimal effort and admittedly several hours’ slow baking away from nutty, softly crunchy deliciousness.

The Pkhali, which is a Georgian spinach and walnut dip, comes from a recipe in a cookbook that I got from Dad for Christmas, called Eat Your Greens. Thanks Dad! I adapted the recipe a little to suit my own tastes but it’s pretty close to what’s in the book, and what you end up with is this intensely leafy, herbal mixture, nubbly with walnuts and fragrant with spices, with juicy sour crunchy bursts of light-catching pomegranate seeds scattered over. Upon initial tasting it was a little worrisomely spinachy and spinachy alone, but after it sat in the fridge for a while it mellowed and developed and was in fact extremely compulsive stuff. Far be it from me to say what you can and can’t do to a Georgian recipe but I imagine you can play around with the components of this somewhat, based on what you have to hand. The spices all worked beautifully though and I wouldn’t personally change a thing, and the difference between the taste of the mixture before and after I added the citrus was astonishing – I know we’re all watching Salt Fat Acid Heat on Netflix but like, it really livened it up immensely. I find that packaged pomegranate seeds tend to taste a little like nail-polish remover, so if you can’t get a real pomegranate to deseed, I would consider perhaps some lemon or lime zest over the top or maybe some chopped up cherry tomatoes? Anything that makes you be all “damn, that’s fresh.”

Viv’s Crackers

  • 1/3 cup chia seeds
  • 1/3 cup sunflower seeds
  • 1/3 cup pumpkin seeds
  • 1/3 cup flaxseeds
  • a pinch of ground cumin (optional)
  • sea salt

Set your oven to 130C/260F and line a baking tray with baking paper.

Place the chia seeds in a mixing bowl and cover, by about a centimetre, with water. Use a spatula to scrape any seeds that have scooted up the side of the bowl to make sure as much of the chia is submerged as possible. Set the bowl aside for ten or so minutes until the chia seeds have absorbed most of the water and the mixture is all gluey and almost gelatinous.

Stir in the sunflower seeds, pumpkin seeds, and flaxseeds, which should transform it into a thickly seeded paste. Add a splash more water if it seems not paste-y enough, and add more seeds if it seems to need that instead. Tip this unlikely looking mixture onto the baking tray and using your spatula or the back of a spoon, press it down evenly to a thickness of about just under a centimetre. It doesn’t matter what shape you make, as you’re just going to break it all up into pieces anyway, but a uniform thickness is pretty important. Sprinkle with sea salt and the cumin.

Bake for 1 – 2 hours – I know it’s vague, but it all depends on your oven and the curve of the earth and so on. It’s ready when the mixture is dry all the way into the centre and underneath when you lift it up, and the edges are raised slightly. If you can’t seem to be able to get the centre to dry out after an hour or so, try carefully flipping it over (it should be solid enough to do so at this point, by which I mean, I did it) so that the underside gets more heat.

Allow to cool completely, then break into pieces and store in an airtight container.

Pkhali (Georgian Spinach and Walnut Dip)

Adapted from a recipe from Eat Your Greens by Pete Evans

  • 1 large bunch of young spinach leaves or 2 bags of baby spinach leaves
  • a handful of coriander leaves, stalks attached is fine
  • a handful of parsley, stalks attached is also fine
  • 80g walnuts
  • 1 garlic clove
  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground fenugreek
  • 1/4 teaspoon turmeric
  • a pinch of cayenne pepper or chilli powder
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons lime juice (or lemon juice)
  • sea salt and pepper, lots, to taste
  • pomegranate seeds, to serve

Bring a large pan of salted water to the boil. While this is happening, thoroughly wash your spinach (if it’s from a supermarket packet you should be fine but the fresh stuff in bunches is full of crevices for dirt to hide in) and then throw it into the pan of water, along with the coriander and parsley, for thirty seconds. Then, remove it from the heat, drain it, and run it under lots of cold water. Put all these wet leaves into a food processor and blend into a thoroughly chopped grassy mulch, then scrape into a bowl and set aside. You’re going to be putting it back in though, so you don’t have to like clean the processor or anything.

Now place the walnuts, garlic, spices, vinegar, lime juice, olive oil, and a decent amount of salt and pepper into the processor and give it a few good blitzes, so that the walnuts are moderately obliterated but not rendered into nut butter or anything. Tip the spinach and herb mixture back in and pulse to combine the lot, then spatula – with some effort this time – the whole lot into a serving bowl. Taste to see if it needs more salt – and it probably will – and consider adding another good drizzle of olive oil. Cover and refrigerate for at least an hour, which will allow the flavours to develop, and sprinkle generously with freshly shucked pomegranate seeds when you’re ready to serve.

On January 1st I had a picnic with my two best friends Kim and Kate and we revelled in the glorious nothing-to-do-ness of it all. There’s something quite beautiful about the first day of the year, not knowing what’s up ahead, none of the events that will inevitably tarnish your view of the year have happened yet, all your intentions sing of potential and not of cowardice or time lost or avoidance, it’s like a safe little bubble. We ate these crackers and this dip and some other treats and talked each other up and it was really lovely. (New Years Eve itself I was just working, by the way, which is fine with me as it neatly solves any anxiety about what to do in order to have the time of one’s life, but I also managed cunningly to sign off at midnight and so did what anyone in my shoes – by which I mean me – might do: I danced for three hours. And then got my leg sliced by the contents of the glass bin which I’m choosing magnanimously to not see as a bad sign or anything.)

So, happy new year everyone! This is, I say with all the unearned ebullience of someone who has only yet experienced two and a half days’ worth of it: definitely our year.

Whilst I have listened to the song a squillion times I hadn’t actually seen the video for Mitski’s frantically lonely song Nobody and though I can guarantee every person has already said this, may I just say – it’s so Bjork-y! (By which I guess I mean, it’s so Michele Gondry-y!) In a wonderful way!

Next time: I made some “cheese” sauce with roasted carrots and other stuff and plan to turn it into mac and cheese at some point, however the weather is SO HOT at the moment that I might have to postpone that in order to favour something colder.

daylight, see the dew on the sunflower

I admit, I held some concerns that this recipe was a little insubstantial, especially after the (a) pomp and (b) circumstance of the last blog post’s layer cake, but in a long long work week this felt, and was, manageable. On top of which, as I reasoned with myself: people always need dip. A pile of various crunch-adjacent foods and a bowl of something pliant into which to plunge them is 100% an ideal meal for me, there’s just something so abundant and yet casual, organised yet constraint-free about it.

And in case you were worried that it was all going to be too effortless, be assured that there are no less than two time-consuming steps involved in this, firstly the soaking of the sunflower seeds and then the roasting of the garlic. But nothing is required of you while both these things are happening!

I found this recipe while scooting around online and as you can see, if you click through, my recipe here is quite directly influenced by it. I made some distinct changes though based on interest and availability: the two main ones being I toasted the sunflower seeds before soaking to intensify their flavour, and because I couldn’t find the required black garlic I used regular stuff instead. Naturally I was all, “I feel like this calls for an entire bulb of garlic” – I’m at the point where my perception of garlic has shifted so much that I’m probably going to start treating bulbs of garlic as though they’re individual cloves, but we’ll cross that pungent bridge when we come to it. Honestly though once you roast the hell out of garlic like I did here the flavour is so sweetly mellow, if anything I wanted more of it but appreciate that it would be somewhat ridiculous.

(I also appreciate that it’s wantonly wasteful to turn an oven on for half an hour just for one lone garlic bulb, indeed, with guilt in my heart I also made a loaf of Irish Soda Bread to bake at the same time. It turned out to be absolutely disgusting somehow, completely inedible and I had to remorsefully throw the entire thing in the bin, with the best of intentions creating even more waste. Lesson learned: blameless garlic deserves to take up space.)

This dip (I cannot bring myself to call it hummus as per the recipe it’s based on since it doesn’t contain chickpeas but I grant you: the texture is similar) is just wonderful, buttery and fulsome with an intense nuttiness, with the earthy cumin and sharp lime keeping it from being too formless. Using sunflower seeds as the base was a bit of a revelation for me – they give gorgeous creamy texture and substance and incredible flavour, and delightfully, they cost hardly anything. I happily and willingly ate a whole plateful of vegetables simply because I had this dip to drag them through: against the sweetness of carrots the lime and cumin really sang, while the richness of the olive oil was a magnificent pairing with the surprisingly buttery baby turnips.

Toasted Sunflower Seed and Garlic Dip

A recipe inspired by this one

  • 1 cup sunflower seeds
  • 1 whole garlic bulb
  • 3 tablespoons extra virgin olive oil
  • 1/4 teaspoon ground cumin
  • 1 tablespoon lime juice
  • 1 tablespoon tahini (I only had black tahini leftover from this salted caramel ice cream recipe hence the murky colour of the finished dip btw)
  • salt and ground pepper, to taste

Toast the sunflower seeds in a dry saucepan (that is, no oil in it or anything) over a medium heat, stirring and keeping an eye on them till they’re all more or less lightly browned. Tip them into a bowl or small jug, cover with water and refrigerate for around six hours, or overnight if that’s easier.

At this point, set your oven to 180C/350F, wrap the garlic bulb loosely in tinfoil and pop it in the oven for about half an hour.

Now it can all come together: Drain the sunflower seeds and tip them into a high speed blender (or a regular food processor, the finished result won’t be quite as smooth though.) Remove the garlic from the tinfoil and carefully disrobe each clove from its papery casing and add them to the blender. The garlic will (obviously) be very hot, but the softened cloves should pop out easily enough. Add the cumin, oil, lime juice, tahini, and plenty of salt and pepper, and blitz the lot together till it has become a smooth, slightly nubbly paste.

Add a little fresh water to thin it if need be, and taste for whether it needs anything more – whether it needs the sharpness of more lime, a little extra body from the oil, depth from the cumin or the old fashioned helping hand of more salt and pepper. Spatula into a bowl or container and refrigerate till you need it, and festoon with mint leaves, more olive oil, and sesame seeds (or of course: more sunflower seeds) to serve, if you wish.

And finally, its salinity helped replenish my depleted vital electrolytes after watching the remake of A Star Is Born, that monumentally melodramatic movie that I consumed with predictable breathlessness. I have many thoughts about it which I wrote and then deleted (on the one hand, there’s a lot of “I see you, Brunette Girl” as a trope, on the other hand, at last: a movie where Bradley Cooper is handsome) and literally whenever I even think about the bit in the trailer where Lady Gaga walks towards the mic and starts howling I get tearful and frantic like a fretful infant, but I also can’t stop rewatching the trailer just so I can see that bit again.

I thought I’d heard this song so many times that its power was entirely diluted but her singing it makes me cry every time including right now. The emphatic h’s that she throws in at the start of words (“all alone h-with h-my memory”); the gentle vibrato rumbling on “enter innnnnn”; the slight youthful creak to her voice that’s just so appealing, (reminiscent of Glynis Johns or perhaps even Alma Cogan); the way she belts so hard while looking like she’s barely getting started yet and you’re looking around like where did that voice come from? Just watch her.

The Sacred Harp Singers, Soar Away. Yeah, I don’t know, I’ve just been listening to a lot of this particular kind of old-timey church music. This one though: a stern and ominous banger, I have played it back easily 100 times in the last week without exaggeration. There are stirring enough versions of modern sacred harp groups performing it on youtube but to my ears, the definitive rendition (on spotify only unfortunately) is this, a decades-old recording which has a kind of shouty, nasal, rough-and-ready vibe that renders modern interpretations too soft and polished and frankly unfearsome.

Wedding Bell Blues, by Laura Nyro. Man, she was just not afraid to be sad and haunting, even, if not especially, in the middle of what sounds deceptively like just a classic sixties-girl-group song.

Will You Smile Again For Me, by …And You Will Know Us by the Trail of Dead. It’s very good!

Over on my Frasier food blog I talk about tropes a lot – a trope is, loosely, a recurring theme or motif – and I feel like I’ve hit a vegan trope with this week’s recipe: tofu. Let us face it, there’s no food more generically symbolising the vegan life as a whole than tofu, (perhaps other than lentils) the implication being that in its meatless blandness it represents not only all that you are missing out on and have left behind but also the miserable and sepia-flavoured journey ahead that you’ve chosen. (There are those who say “how do you know someone is a vegan? Because they’ll tell you at any opportunity” and there are those who say that people pre-emptively berating vegans outweighs any levels of militance from the vegan camp, and then there’s me, and I say guess what: everyone has the capacity to be really annoying.)

Rest assured, no one is forcing anyone to eat tofu. You can quite happily live your entire life without touching the stuff. I myself actually really like the taste of it – which is admittedly fortunate – and always have. It’s often said of tofu that peoples’ main mistake is not giving it enough flavour – but like, why would you want to make anything that doesn’t have flavour to it? If you cook something blandly, it’s going to be bland. A plainly-cooked chicken breast has no liveliness, it is at best tantamount to a dry flannel.

Anyway, if you are going to consume tofu, you might consider doing so in the form of this week’s recipe, since it’s monumentally delicious. I actually had the idea for the sauce first and worked backwards from there to fill in the blanks for how I could use it (other than just drinking the sauce in its entirety, I suppose) but it all worked so well that both the tofu and the sauce are the double-billing stars of the show.

The golden crust on the tofu is made from a glorious mixture of coconut, sunflower seeds and breadcrumbs – light, nutty, buttery, crunchy, with anything that doesn’t stick to the tofu toasted in the oven and scattered over your salad leaves. I’m all about contrast in texture and the intensely crisp exterior giving way to bouncingly tender interior is marvellous. And the sauce! How it shines! Wasabi has this particular, sharp, mustardy, sinus-scritching heat to it, which is balanced perfectly against the cool hit of mint, the sour, fresh lime, and the richness of the oil. All of which is then further tied together by the power of an entire bulb of garlic, roasted into mellow sweetness. The resolute mildness of the tofu is the ideal backdrop for all this action, but this sauce would be wonderful on pretty much anything, I imagine. If you don’t have wasabi or can’t find it then horseradish or indeed mustard would surely be a fine substitute, since all three are part of the same family.

Coconut-Crusted Tofu with Wasabi, Mint and Roasted Garlic Sauce

A recipe by myself

1 block of firm or extra firm tofu
2 tablespoons shredded coconut
2 tablespoons sunflower seeds
2 tablespoons panko breadcrumbs (leave them out to make this gluten-free and up the coconut and sunflower seeds)
Salt and black pepper, to taste
2 tablespoons olive oil
1 tablespoon of cornflour
salad leaves, to serve

Wasabi, Mint and Roasted Garlic Sauce

1 bulb garlic
2 teaspoons wasabi paste, or add more to taste
3 tablespoons water
4 tablespoons olive oil
2 tablespoons lime juice
4 mint leaves
A pinch each of salt and pepper
Set your oven to 180C/350F.

Slice the very base off the garlic bulb – the knotty bit holding it all together – and wrap the garlic itself loosely in tinfoil and roast it for twenty minutes in a small dish that you’ve drizzled the two tablespoons of olive oil into.

While this is happening, slice the tofu in half horizontally so that you’ve got two flatter rectangles, and either reserve one of them for later or add some more coconut and sunflower seeds to your coating and make two.

Blitz the coconut and sunflower seeds in a blender till they resemble breadcrumbs, and tip into a small bowl. Stir in the panko breadcrumbs, and a pinch of salt and pepper.

In another small bowl, mix the cornflour with a tablespoon of cold water.

Spoon some of the cornflour mixture over the tofu and then sit it, cornflour-spooned side down, in the bowl of coconut breadcrumbs. Spoon more cornflour mixture over the side facing you and turn it over. Continue spooning more cornflour over and pressing more breadcrumbs into it so it’s as thickly coated as possible.

Remove the roasting dish from the oven and carefully lift the coated tofu into it, sitting it beside the garlic. Return to the oven for another ten minutes. Reserve any remaining breadcrumb mixture.

Once the ten minutes is up, turn the tofu over and remove the garlic. Put the tofu back in for another five to ten minutes.

Unwrap the garlic and carefully – it will be hot as hell – squeeze the garlic cloves from their paper casings into a small blender or food processor. Add the remaining sauce ingredients and blend it into a lime green sauce.

At this point – you’re almost there – remove the tofu to a serving plate, sitting it on a bed of salad leaves or kale or something and tip any remaining breadcrumbs into the roasting dish. Put the dish back into the oven for a minute or two until the breadcrumb mixture starts to brown and the scatter them over the salad, then pour over as much of the sauce as you want. Finally, eat.

So my usual plan is to send these blog posts out on a Sunday night to all the email subscribers (and sign up here if you want this to be you) but instead on Sunday gone I was too hyped up watching the Khabib vs McGregor fight before work to write (reacting to my livestream cutting in and out alone provided ample adrenaline) and then after work I accidentally got on the go from having several birthday shots given to me (not my birthday, I might add, I was merely collateral damage.) Not drunk, but precisely enough consumed to immediately and heavily fall asleep when I got home instead of diligently writing as planned.

I don’t know if it was my addle-headedness either just in general or post-shots but no matter how hard I revised, this recipe came out sounding monstrously complicated. It’s literally just sticking some stuff in an oven and then sticking some stuff into other stuff and then sticking that in an oven and blending yet further stuff but trying to explain it was oddly difficult; should you have glanced over the recipe and felt a quickening in your heart at how many steps are involved rest assured it’s just 1000% me talking myself into a corner. This is easy as. And so cheerfully resigned to a life of tofu am I, that the next day I made myself some tofu scramble, for the express purpose of (a) writing about it on my next Frasier food blog post and (b) eating. For, you see, the only thing I’m even more cheerfully resigned to is a life of self-promotion.

Fiona Apple, Hot Knife. “If I’m butter then he’s a hot knife” is such a perfect and simple metaphor to build this light, chatty and intoxicating song around.

Alice Coltrane, Om Rama. This song just drops you head-first into it and keeps it frenetically high-paced until the middle section where it dramatically changes tempo and gets all woozy and dreamy and just when you start to relax it speeds up again. I love this song so much.

Next time: GUESS WHAT, next time you read this my blog will have officially turned eleven years old, I don’t know quite what to cook to acknowledge this level of momentousness and indeed, welcome any thoughts and feelings you might have.

So this weekend a group of us (eight to eleven people altogether I think, there’s no real way of knowing) stayed in a fancy house in Waikenae to celebrate the dear Kate’s birthday. Kate is one of my very best friends, from here on she’ll be referred to as just “Kate” for simplicity but know that I’m hyperventilating every time I mention her name.

Not only was the weekend itself really rewarding in terms of friendship and relaxation and real joyfulness, I also got such Instagram material out of the whole gambit. The entire place was just so aesthetic: pink magnolia leaves floating like bodies in a bright blue swimming pool at dusk; a blonde wood dining table laden with fairy lights; multitudes of tui birds, glossy thick boys calling flirtatiously from the tree branches; a cool clear river striding purposefully over flat, smooth rocks; no less than sixteen doors to the outside world; hand towels that we all initially thought were actually elegant scarves because they were so lovely looking. Like even just the bathrooms themselves were gorgeous, with this particular golden-hour warm lighting that made you look perpetually well-rested and cleverly made-up. I didn’t even care that the toilet was in the background of my mirror selfies, if anything it was an honour to include such an exemplary example of that facility in a photo of myself.

I did barely anything useful the entire time I was there which was unquantifiably wonderful coming out of a nine-day week of shifts at work. I read a girthy novel (House of Leaves by Mark Z Danielewski); I prowled judgementally through the lush cookbook collection of the owners (I find myself fairly judgemental of cookbooks, in case you’re wondering why I used that adverb); I took selfies; I snuggled with Charlotte, a dear friend who we all hadn’t seen in two years who was back from London (for good, not just for the weekend as I initially and stupidly assumed) and that was about it; but the one thing I can say confidently that I contributed was that I made Aperol Spritzes for whoever wanted them. Actually, to be fair, lots of people ended up making them over the course of the weekend. But I definitely stumped up for the creation of at least one round. And then took one that I made for myself all around the house photographing it in various pleasing tableaux.

If you haven’t had Aperol before, you might at least recognise its distinct orange colour and sassy logo design. It’s an Italian aperitif that has been kicking around since roughly 1919, and while the parent company is super cagey about what’s in it, there’s definitely some gently bitter herbs and sweet orange. It’s not unlike its altogether stronger and more bitter cousin Campari, which is even more tight-lipped about its ingredients – somewhat hilariously, the official website will reluctantly concede that there’s water and alcohol involved, but like, that’s all they’re gonna tell you. The Aperol Spritz is a fantastically sophisticated yet casual drink, combining Aperol, Prosecco and soda water – gorgeously orange like distilled sunset, mellowly herbal and sweet yet convivially refreshing, and low-alcohol enough that you can drink a case of it and still be on your feet. It was Kate’s idea to make them and it was honestly perfect and easy and delicious and I thoroughly recommend it if you’ve got a crowd to ease into gentle afternoon post-30s tipsiness.

Aperol Spritz

30ml Aperol (or: 1 shot, 1 oz, 2 tablespoons)
90ml Prosecco
30ml sparkling water
Orange wedge, for garnish

Fill a wine glass or fancy tumbler with ice. Measure all the ingredients straight into the glass, give a stir with a teaspoon or chopstick or breadknife or your finger, whatever is within reach and more or less non-porous, really. Throw in the orange wedge – honestly pretty optional if you’re having a bunch and not selling them to anyone – and you’re ready to drink.

Or consider the 3-2-1 proportions: 75ml Prosecco, 50ml Aperol, 25ml sparkling water. This recipe I hasten to add is also based on the concept of A Shot being 25ml instead of 30ml as it is here in New Zealand, which I simply cannot even start getting into because it’s so confusing (“it’s tearing us apart!” is my usual response every time international Standard Drinks Measurements come up.) (Don’t even get me started on how you shouldn’t get me started on what constitutes “a double”.)

Now! The recipe I give is roughly what I was making or advising people to make – because the more you consume and the more you make the more you just become one with the drink and pour until it feels right to stop (I say this as someone actually quite genuinely confident with free-pouring accurately.) It’s also a little lower in Aperol than the generally accepted recipe, this was mostly to make the expensive title ingredient stretch further, but also the fact that I feel like it benefits from being less sweet and more fizzy. The Wikipedia page for Aperol Spritz notes in an archly withering way that “perhaps not surprisingly” the official Aperol website calls for a lot more of their own product in the drink. You: well, you suit yourself.

It was a magical time that was so good for the soul, especially getting to spend so much concentrated time with my bests, Kim and Kate, and I feel really lucky that I got to partake in it considering how relatively un-conducive to having any personal time my work schedule is. I cannot actually fathom what it would be like to live in a house like that permanently, I mean like, getting to the point where your hand towels honestly resemble a chic neck accessory, with central heating vents in the floors and slab-sized books about interior design curated by Kinfolk magazine and spoons made from unwieldy rustic wood and ceramic that you can’t actually comprehend for what their use could possibly be, including ruling out decoration alone because they were in the spoon section of the cutlery draw implying some kind of practical application; but it seems like it’d be nice. I’ll tell you something though, it felt good to use the phrase “it’s a little lavish, but I call it home” in such a rightful setting. (That’s a quote from a 1940s noir film called Laura, it’s a really good film, because it’s called Laura, but I believe it’s actually widely-regarded as good based on other merits as well.)

I also recommend my broadway idol Julia Murney’s take on the title role: don’t let the sight of her stiff wig, somehow giving an air of reluctance at having to do its job despite being entirely insentient, put you off, because her voice and acting is splendid (did you know her vocal cords vibrate at two different speeds, actually – I’ll shut up now.)

She sounds so in charge and confidently relaxed and I love how the cadence and chord progressions have this really early 90s Janet Jackson sound. I’m also a huge fan of tempo changes in a song. Which No Tears Left To Cry has, I wasn’t just stating that about myself for no reason.

Idina Menzel, Not A Day Goes By. My other Broadway idol, absolutely trampling all over Sondheim’s intensely delicate and sorrowful song during a live show in 2002, by all accounts (that is, the youtube comments) her pop arrangement is an insult to the song, but! While, I grant you, her take on it is melodramatic, I adore it. The metallic rasp of her voice, the way she BELTS lines that are supposed to be almost whispered, the utter lack of subtlety is its own kind of vulnerability. She even says at the start (in another bootlegged version I have, not the one I link to) “I’ll probably get thrown into prison for this.” THAT SAID, you literally cannot go past Bernadette Peter’s definitive porcelain-about-to-shatter interpretation. Every decision – the pause before “and dying”, the way she folds her arms in “day after day after day” – is quietly devastating and not to be mistaken for weakness – “the full length velvet glove hides the fist”, as another Broadway song cautions us.

Blood Orange, You’re Not Good Enough. This 2013 song keeps sounding like it was released like, last week.

i imagine that it’s there on a plate, your whole rendezvous rate

So the deal with this week’s blog post is, there are no photos and I don’t even want to talk about the recipe. Because I made it – crispy rice with preserved lime, almonds and cardamom- three days in a row and now I’m so sick of it and can’t even think about it without feeling uneasy, bordering on queasy. Let’s try and go back in time though, to the middle of those heady days, where I simply couldn’t get enough of this incredible dish and ate it with such rapidity that, though thrice did I make it (THRICE! Threefold!) not once did I pause to record the moment. Let’s periodically pause while reading this blog post and pretend there is a photo of a plate of rice with some stuff on it in between every other paragraph. Let’s pretend it’s not today but Wednesday and I’m snarfing bowlful after bowlful of tender basmati rice that has turned crunchy and golden with olive oil and made aromatic by the lemony-gingery breath of cardamom and the warm earthiness of cinnamon and cumin, that has the buttery crunch of a tumble of almonds and sesame seeds and bursts of sharp, salty preserved lime slices.

I’m genuinely super annoyed at myself for not taking any photos and did contemplate long and hard for like nine minutes about whether or not to even write this but I concluded pragmatically that my photos are deeply hit and miss anyway and it’s the writing that’s the real juicy prize here.

I spent Sunday night at my best friend Kate’s house, doing what I love best: sitting on the floor by the warmth and white noise of her fireplace, quietly pottering about reading her cookbooks for inspiration while her husband brought me dinner and her dog scooted about scootily. The recipe below evolved from one in either A Modern Way To Cook or A Modern Way To Eat by Anna Jones, both lovely books filled with lovely recipes (sometimes too lovely, for example she has a recipe called “my bright root mash” and I’m like…can you hear yourself here.) Mine is a much more pared down and simplified version of her recipe largely because, honestly, I was pretty broke this week, but you can see how you could extrapolate this out wildly to make it more elaborate, with added herbs, fancier nuts, roasted things to strew across the top, and so on. The preserved limes are just there because I had some following my friend Jen giving me a bag of limes from her tree, but preserved lemons are pretty easy to get hold of and make a chill substitute. The best thing about this recipe is how high reward it is for how simple it is to make. Don’t be tempted to hold back on the final step of pouring more oil onto the rice and turning up the heat – the golden, crunchy base that forms where the rice hits the saucepan is magical. Well it was, till I ate too much of it.

crispy rice with preserved lime, almonds and cardamom

  • one cup basmati rice
  • three tablespoons olive oil  
  • one teaspoon ground cumin
  • half a teaspoon ground cinnamon  
  • two cardamom pods
  • three tablespoons sesame seeds
  • half a cup of almonds, roughly chopped 
  • four slices of preserved lime or preserved lemon   
  • sea salt, to serve

Rinse the rice in a sieve. Heat one tablespoon olive oil in a saucepan and tip in the rice, stirring it so that the grains get lightly toasted. Tip in two cups of water, the cinnamon, cumin, and cardamom pods. Before you throw in the cardamom pods, lean on them with the side of a knife to crush them slightly. Put a lid on the saucepan and let it cook away until the rice is tender and cooked, which should take around ten minutes. At this point, use the handle of a wooden spoon to push some holes in the cooked rice, and pour the remaining olive oil into the holes. Turn the heat up as high as it will go and let the rice cook away for another five or so minutes, creating a crispy crust on the base. 

Meanwhile, toast the sesame seeds and almonds in a dry frying pan until they’re lightly browned. Roughly chop up the preserved lime slices, or lemon if you’re using it, and mix in with the sesame seeds and almonds. Divide the rice between bowls and spoon over the lime and almond mixture, and then add plenty of salt to taste. 

This recipe serves two very generously and aside from me feeding some to my friend Emily during a floor picnic on the third day, I actually ate all of it every single time which is probably why I’m so wholeheartedly sick of it now, but also, I daresay, does speak to its singular deliciousness. That’s right, I’ll link to myself all! day! long! I will never run out of energy for drawing your attention from me, to further-me, and yet-still-more-me!

I’ve been listening to Eyedea and Abilities’ album By The Throat which I love, I guess if I was going to pick a starting point I’d go with Junk or Smile?

Janet Jackson, Rhythm Nation . She is such a LEGEND it’s unreal. I’ve been listening to heaps of her older music and having this one in particular on loop, the chorus is so addictive the way the back up singers’ voices rise up like bubbles in lemonade and the music video is honestly kind of stressful to watch because the level of discipline and work ethic is so laid bare in her incredible and highly technical and NONSTOP dancing.

three, that’s the magic number

For the last week or so I’ve been sick with a really rough cold that I’m juuuust coming out the other side of, mostly due to a drinking game that I call “take lemon honey ginger every time you cough”, a game with a sub-rule of “strawpedo Robitussin at any and all opportunities” which is curiously followed by “the floor is now lava.” I’m well aware that my last blog post was essentially a bowl of nuts and the blog post prior to that was pasta and now, what is this blog post about but a bowl of PASTA AND NUTS but as I said – I was sick! An unfailingly watertight excuse! I’m sorry I bailed on you, I was sick! I’m sorry I stole your car in the middle of the conversation we were having and then drove it into your other car, I was sick!

My tastebuds have been woefully muffled from having a blocked nose, but I woke up this morning not only feeling a lot better, but also thinking, “what if pesto, but with three different kinds of nut instead of just one” and decided, as I do with most of my thoughts regardless of content or consequence, to act upon it immediately. I feel that pesto was to 2003 what halloumi was to like, 2013, I remember being absolutely obsessed with it and having it feel hugely unattainable, and so I’d try and incorporate it into as many of my cooking class modules in high school as I could get away with (I really didn’t do well in cooking in high school but I think that’s because being a freewheeling spoon-licking pre-ADHD diagnosed idiot didn’t mesh well with teachers trying to get to grips with the assessment regime and a minimal budget that didn’t allow for just like, snorting mounds of pesto.)

But wait, who am I to think I can improve upon pesto? Well I’m me, but this isn’t a one-up so much as a side-step; I’ve subtracted the cheese and instead added knotty, sinuous walnuts and buttery pistachios to the original pine nuts. Which means yes, this fairly plain dish of pasta will cost you roughly $90 dollars, on top of which, even though the quantities of the recipe look huge it really doesn’t make that much pesto because it all reduces down to nothing in the blender, but in spite of all of these red flags may I offer you this one counterpoint! Here it is: it’s really, really delicious.

Walnuts give the mixture body and a bitter smokiness, pistachios give creamy richness and added green, the pine nuts are all…you know, they’re pine-nutty? And when thrown through glassy olive oil and basil leaves at great speed it produces the most incredibly wonderful-tasting freshly-mown-grass-looking paste to stir through pasta or to be consumed however feels right.

a recipe by myself

  • one third of a cup of shelled pistachios
  • one heaped half cup of walnuts
  • one third of a cup of pine nuts
  • one garlic clove
  • a squeeze of lemon juice (roughly a tablespoon) 
  • sea salt
  • the leaves from one of those supermarket basil plants, roughly three loose handfuls of leaves I guess? But seriously, use all the leaves, you know that no matter how diligently you try to water the plant the it’s gonna die immediately and like, how is it that they can stay alive in the supermarket but die so fast once you take them home? What’s going on there?)
  • three quarters of a cup of extra virgin olive oil
  • 100g dried spaghetti or similar

Bring a large pan of water to the boil, add plenty of salt, then cook the pasta for about ten minutes or until it’s like, cooked, then drain the pasta and set aside. I always use the water from a freshly boiled kettle in the pan because it goes way faster than just boiling it on the stovetop. 

In a large frying pan, gently toast the nuts over a high heat, stirring often, until the pine nuts are lightly browned (they’re the easiest to see the color on.) Tip the nuts into a food processor or high speed blender along with the garlic clove, lemon juice, a large pinch of salt, the basil leaves and the oil, and process until it’s a thick, dark green paste. Stir a couple of spoonfuls through the drained pasta and put the rest in an airtight container in the fridge.

Honestly, this stuff is just spectacularly good and makes the simplest pile of pasta feel like a monumental treat. You can do millions of things with pesto though – stir it through roasted vegetables, spread it on toast, thin it with olive oil and drizzle it over fried halloumi for a real galaxy-brain type combination, add a spoonful as a garnish to brighten up almost any soup, whatever your tastebuds decide, follow them in the direction they’re heading.

It was probably the Robitussin in my system but as the sun streamed through my window this morning I swear this song was literally playing and I don’t know, it’s just kind of magical and soaring and you too should listen to it really loud while lying down in a dark room where the light is starting to creep in.

next time: my friend Jen gave me a bunch of limes from her tree so I’m gonna do something with them. I don’t know what yet though but having that many limes, in this economy, is very exciting! 

rye whiskey makes the band sound better, makes your baby cuter, makes itself taste sweeter, oh boy

I would be filled with consternation and a rage as hot as the fire of a thousand French fries about the monogamous relationship I’ve drifted into with my concussion if doing so didn’t require so much energy. Previously, on the TV show that I self-absorbedly regard my life to be (and please read this in the solemn tone of the “Previously, on” voice over artist of your choice) I relayed the tale of how I fainted and whacked my head and as such have not been up to much at all other than sleeping and going to work, well guess what, I have nothing new to report!

But I refuse to let this slow me down, achieving such (topically!) Olympian feats as walking two blocks to the chemist to get my passport photos taken before having to go back home for a nap.

Even previously-er, I mentioned that I was the proud recipient of a place in the finals of the Perfect Blend cocktail competition, held by Beam Suntory; this week I’ve had my cocktail available at work and it’s like…really fun! I mean I love anything where I get the opportunity to draw attention to myself, it’s not often that the opportunity is fairly legitimate and not just me being all, with neither context nor requisition, “look at me!”

Anyway I’ve cooked precisely one (1) thing this week and that was a coffee cake for my Frasier food blog, and yeah you should definitely go read it, but delicious as it was I couldn’t exactly double up on the recipe here, that would be a move lazier than even I could countenance (I was not so lazy that I didn’t end up looking up “the shortest distance between two points is called what” to illustrate this, uh, point, and found an Archimedes quote being all “it’s a straight line”, like COOL STORY Archimedes, of course it’s a straight line, this is not a compelling quote, stick to excitedly getting in the bath, mate.)

As such I thought I would, since I occasionally foray into drink recipes on here, cocktails being one of my true loves in this life (unlike my frosty and passionless relationship with my concussion!) share the recipe for my competition cocktail – the Wry Aside – with you all. You can now, should you choose, make it yourself at home or indeed, in any location. Yes, it involves some significant legwork and the procurement of several alcohols, but if nothing else I’m hoping this will give a little insight into the building of a cocktail and the process I took to achieve this drink of mine. Plus, having a recipe with multiple sub-recipes nestled within it makes me feel extremely Dominique Crenn-esque, a feeling that can’t be had enough, quite frankly.

Wry Aside

Beetroot purée: 

  • three large, fresh beetroot
  • a dash of olive oil
  • roughly a quarter cup of lime juice 

Set your oven to 180C/350F. Trim the tops and tails off the beetroot, slice them roughly into quarters, and place in a roasting dish. Drizzle with the scantest amount of olive oil and bake for around 40 minutes, although check them occasionally, until they are slightly crisp and wrinkled without and extremely tender within. Using a high speed blender or whatever similar appliance you have on your person, blitz the beetroot with the lime juice (mostly there so that the motor doesn’t stress out completely. Transfer this into a jar and refrigerate till needed. 

 Blackberry and Pink Peppercorn Liqueur 

This is really more of a highly alcoholic syrup, if you want to actually drink it on its own I would add sugar to taste, rather than to my specs.  

  • Two cups frozen blackberries (I mean, I assume this is how you’re going to get them, fresh is A-ok) 
  • Two tablespoons pink peppercorns
  • 600ml overproof Jamaican rum  
  • white sugar 
  • two tablespoons citric acid

Put the blackberries, pink peppercorns, and rum in a non-reactive mixing bowl or jug. Cover and leave for at least six hours or overnight. At this point, give it a good stir, mashing up some of the berries to release as much juice and color as possible; then strain it into another jug. Weigh this liquid and add the same weight of white sugar, plus the citric acid, stirring to dissolve it. Refrigerate till needed.

 Beetroot Garnish

  • one small, fresh beetroot

Slice the beetroot into thin discs. Roast slowly in a hot oven or better yet, place them in a dehydrator until crisp enough to hold their shape. If you’re going to dehydrate them, cut a slit halfway through each slice, if you’re roasting the slices you can cut them when you need them. Either way, this slit then slots onto the coupe glass that you serve the drink in, a bit like a lime wheel or something, y’know?  

To make the cocktail: 

  • 50ml Jim Beam Rye
  • 15ml sweet vermouth (not one that’s too sweet, mind) 
  • 30ml blackberry and pink peppercorn liqueur
  • two heaped barspoons of beetroot purée  
  • 25ml freshly squeezed orange juice
  • 5ml lime juice

Shake everything hard in an ice-filled cocktail shaker or jam jar or whatever sealable vessel you have to hand (I’ve used a biscuit tin once when things were really desperate) and double strain (that is, use a small sieve held over the serving glass to make the texture silky smooth and to remove any bits of beetroot and such) into a coupe glass. Stick a wheel of dehydrated beetroot on the lip of the glass by way of garnish.

That’s ALL you have to do!

So yeah, there’s a lot of prep involved to get to the moment where you actually get to drink the damn thing, but I wanted a drink that was thoughtful and that didn’t have any chance of being replicated previously, as opposed to pedantry for the sake of it. I adore rye – the Sazerac is my favourite cocktail of all time – and I wanted the dry, slight spiciness of the Jim Beam Rye to be met with sweetness and earthiness: the beetroot thing was more about trying to capture the nutty caramelised flavour of roasted beetroot rather than just willfully flinging vegetables at random into a cocktail shaker. I love the gentle warmth of pink peppercorns and the juicy tartness of blackberries, I also liked the dovetailing of similar colours even though obviously the peppercorns don’t actually lend any tint to the liqueur. But anyway! There’s a mighty decent number of finalists from Wellington, I’m super proud to be part of it all alongside so many friends. The finals themselves are on April 16th, and yes, I hear you gasp, that is the day before my birthday! Whilst I’m like, deeply competitive and winning stuff is definitely a hobby of mine, I also really extremely love public speaking and so like, getting a microphone and an audience? Best birthday ever already.

After mentioning that I was going up to Auckland to see Fall Out Boy this March, a customer at work gave me a list of bands I should listen to and like, they were all such good recommendations! To pluck but one from this list I’m going to recommend in turn that you listen to American Football and their song I’ll See You When We’re Both Not So Emotional, which like…lol.

It was Rihanna’s birthday recently and on social media at least it felt like the whole world was celebrating, as well they might be! Love on the Brain is just one of the most beautiful songs on earth.

That’s right, it’s another classic “Laura is tired and braindead and has been too busy with work to do a blog post” blog post! But because I’ve got like an hour until I start my next shift I’m going to dispense with the usual self-disapproval posturing and crack on with the post itself, as I’m determined to not let yet another day of October go by without me getting anything done on here. Besides, though work has occupied all my spare time lately, it’s also work stuff that gave me the content for the following recipes, so like, when one door closes you fall out a window or however the saying goes.

Ya girl is majorly into her sustainability these days. Let’s face it, the world is absolutely completely garbage currently and attempting to recycle like, one small thing a week is my tiny way of doing some good and reducing my impact on this crumbling trash earth. As a bartender it pains me how much stuff we throw out – straws, plastic bottles, fruit offcuts – but also when it gets to 3.30am and you just want to go to bed (or to the next bar that’s open slightly later than yours) you don’t necessarily have the energy to suddenly start seventeen different craft projects. So I’m doing little things here and there. One of my more successful missions was taking all the soaked almonds I’d used to make orgeat (almond syrup) and turning them into vegan feta. Last time I took them home I made this almond brittle that I blogged about a few weeks back, but feta has a more practical application, let’s face it. 

There is some work involved here – some soaking, some straining, some waiting, but you end up with a vast tray of rather wonderfully delicious feta-like stuff – creamy, slightly crumbly, tangy, basically everything you could want from something without dairy in it that’s trying its best to convince you that it is what it’s not. On top of that I can only but speculate wildly at how good it is for you to be eating this much condensed almond, they’re absolutely stacked with vitamins and minerals and will give you a glossy coat and supple fetlocks, or something.  

The recipe below is pretty closely modelled on this one here, and there’s nothing stopping you clicking through to their site and following their clear and useful instructions and ignoring my extremely general and vague ones.

a general recipe inspired directly by this one. 

  • blanched almonds
  • olive oil
  • lemon juice
  • garlic cloves
  • sea salt

Cover your almonds in water overnight, or for at least six hours. Keep them refrigerated while you’re doing this. 

Drain the almonds (retain the water if you have any particular purpose for it) and blitz said almonds, in batches if you need to, in a blender with olive oil, lemon juice, garlic cloves, water, and a generous pinch of sea salt, till it forms a smooth, thick mixture. As far as quantities go, for every, say, cup of almonds, you want to add a tablespoon of olive oil, a tablespoon of lemon juice, and half a cup of water. Use your instincts though and add more of anything as you go if you feel you need it. 

The next bit requires some creativity. You want to take this thick white almond mixture and pour it into a cheesecloth lined sieve, and then place that sieve over a bowl of some sort and leave it overnight so that the excess liquid in the almond mixture can slowly drip out. 

After this – you’re so close – press the drained almost-feta into a baking paper lined baking dish and put it in an oven that you’ve set to 160C/325F for about 30 minutes until it’s firm and a little golden on top. Allow it to cool, and you’ve got yourself a ton of vegan cheese. 

Now that you’ve got all this damn stuff, what are you going to do with it? Why, anything you like! I first had it, as photographed above, simply crumbled in a bowl, drizzled with olive oil and balsamic vinegar and sprinkled with smoked paprika, rosemary, salt and pepper. I roasted potatoes and sprinkled the feta over for the last ten minutes in the oven. I also, as you can see from the picture at the top of this post, did the following recipe with it, which was honestly pretty wonderful. Obviously you can also extremely make this with regular feta, either way, please accept this extra recipe as a peace offering to make up for my lack of, well, literally anything lately.

  • three large red chilis
  • 100g vegan feta (or, again, regular feta) 
  • one garlic clove, chopped
  • one tablespoon dijon mustard
  • one small floury potato
  • sea salt and freshly ground black pepper
  • olive oil

Set your oven to 220C/450F, generously drizzle a roasting tray with olive oil and pop it in to heat up while you get on with everything else. Slice an incision along the length of the chilis, using your finger to prise it open gently, and pull out as many of the seeds and membranes as you can. Giving the insides of the chilis a quick rinse in cold water helps with this process. 

Mix together the feta, garlic, and mustard in a small bowl and pack as much as you can into the now empty chilis till they’re nicely bulging. 

Carefully, using a peeler, create long ribbons of potato by peeling around and around the potato for as long as you can without breaking said ribbon of peel. Once you have three, wrap them carefully around the stuffed chillis, tucking the ends underneath. The starch in the potato should act as a kind of glue to keep it in place but it really doesn’t matter if it slides around a bit.

Gently place the stuffed, wrapped chilis onto the hot oven tray and roast for about 20 minutes or until the potato is crisp and the chilis are softened and slightly blistered. Turn them over and roast for another five or ten minutes, then remove from the oven and sprinkle over salt and pepper. 

This recipe is admittedly fiddly but it looks fairly spectacular and tasted wonderful – the kettle-chip crispness of the potato against the soft, sweetly hot chili and the creamy salty feta. You want to eat them as soon as possible so that the potato stays crisp, but having wolfed one down several hours later there is a certain charm to a soggy room temperature stuffed chilli as well, however unappealing that might sound. 

My other forays into reducing, reusing and recycling have had mixed results – I made a fantastically tasty fermented Mexican drink called Tepache out of leftover pineapple skins and cores, and some intensely bland cordial out of fruit offcuts. It’s fun though. Really the only hard part is, as I said, not locking myself into seventeen million different projects at the end of a long night – eg, picking my battles – and not getting the Captain Planet song stuck in my head interminably.

next time: My blog turns TEN ACTUAL YEARS OLD this month which is somewhat unreal to me but I want to do something celebratory about it – maybe an enormous cake? I don’t know.

Unfortunately my one personality trait right now is “teeth” (wait: “tired bartender” is the sole other facet to this diamond) so this salad that I made was inevitably tooth-related: devised in anticipation of my wisdom teeth being from my mouth untimely ripp’d next Monday (that’s like, a reference to MacBeth there). I know all I’ll be consuming next week is broth, pureed foods, painkillers and my own drool, so I wanted to make myself something crunchy, salty, spicy and acidic – everything my tender mouth will be shunning mere days from now. 

That vision ended up taking the form of this blackened corn and tortilla salad – crunchy toasted peanuts, juicy charred corn, shards of tortilla, crisp cos lettuce and plenty of sourness and heat in the form of lime, chilli, salt and cumin. Plus some fairly blameless cherry tomatoes. 

Being my generally idiotic heedless self it will come as no surprise when I tell you that I broke my SD card for my camera somehow and so had to instead take the photos of this salad on my phone (other things I’ve broken this week: my Laura necklace, a large glass jar of hot sugar syrup, the will and resilience of everyone around me) so as such the effect is a liiiittle more grainy than I’d like. Also my flatmate of the past year moved out and had the temerity to take his own property with him so I no longer have his immensely sexy slab of a coffee table to take my photos on, and as the next logical place for me to eat is in bed that’s why everything here is pictured against my duvet, giving it something of an eighties glamour shot vibe.

Fortunately I displayed competency in one area at least: this salad is fantastically delicious. The corn is deliciously sweet and charred and chewy, and the textures of the peanuts, fried tortilla, and lettuce – each crunchy in their own way, the peanuts all soft and (duh) nutty, the tortillas crisp and oily, the lettuce super fresh – is extremely delightful. The chilli and lime gives it a great big high kick of flavour and on top of that it couldn’t be easier to make. By the way you really only need one large tortilla but they taste so good when they’re all fried up that I allowed an extra one to account for you eating them all as you make the salad. Maybe you’re more restrained than me, who knows. That aside, the quantities of each ingredient are pretty much up to you and your personal tastes. If avocados are not housing-market-preventatively-expensive in your neighbourhood they they would be a delicious addition and there’s also nothing stopping you adding some meat, but as it is it’s pretty perfect.

a recipe by myself

  • one small cos lettuce
  • two flour or corn tortillas
  • a handful of peanuts
  • one punnet cherry tomatoes
  • two cups of frozen corn kernels
  • olive oil
  • a teaspoon or so of chilli flakes
  • a pinch of cumin
  • sea salt
  • a lime

Heat up a large frying pan over a high heat. Toast the peanuts till they’re lightly browned and tip them into a big mixing bowl. Heat up some butter or olive oil and tear the tortillas into small pieces and fry them in the hot pan till they’re crisp and golden. Add them to the bowl with the peanuts. Next, tip the corn into the pan and let it sit without stirring too much so that it gets slightly charred and browned as it cooks.

While this is happening, wash and tear up the lettuce leaves and add them, with the cherry tomatoes, into the mixing bowl. Once the corn is where it needs to be tip that into the mixing bowl. Squeeze in the juice of a lime, add the chilli flakes and cumin, some sea salt and plenty of olive oil. Give it a good stir and then divide between two bowls. Sprinkle over some more cumin and chilli if ya like. 

This honestly makes what I would consider to be two servings, but I ate the entirety in bed (as pictured!) before falling immediately into a deep sleep, I’m not sure if that was related to the ingredients or more to my generally being tired, but I can heartily recommend the two activities together. 

As I said in the last blog post, I’m actually really nervous about getting these teeth out – something about the sedation process and the potential recovery time and oh, the IMMENSE PAIN and BRUTAL PRICE TAG but I am going to be taken under the wing of my dear friends Kate and Jason who will be looking after me and making sure I don’t like, run naked through the town while coming out of sedation (or indeed, at any time, no one should rule it out completely.)

Before I get into this, let me tell you a small story. 

On Wednesday morning I got out of bed and thought- I should make my bed now, so it’ll be ready for me when I get back in later.

I’ve never had this thought in my life. I do not make my bed. I barely ever made my bed as a child. In fact the only beds I make are the kind you have to metaphorically lie in because you’ve done something more or less irrevocable. So I made my bed. And I was like, “wow this Ritalin is GOOD”. 

I told you it was a small story.

So to back up a bit, let me tell you my friends: ya girl has been given the joyous gift of an official ADHD diagnosis. Just like that! And all it took was six months, an unspeakably hellish prolonged period of depression and anxiety, several fruitless GP appointments that led me nowhere, literally five thousand phone calls and emails, a small quantity of self-gaslighting about how I was imagining all of this and I was just a stupid idiot for life, constantly being picked up and dusted off by my friends, a butt-tonne of crying, stacks on stacks on stacks of paperwork, one highly revealing and personal article on Medium, an astonishing amount of crowdfunding from kind friends and strangers, several sessions with a truly nice trainee psychologist, and dropping $1000 on roughly two and a half hours of time from a psychiatrist to get there!  

As I said during a conversation with a four year old yesterday, “it sounds like I’m exaggerating for comic effect! If only I were!” (I was at a wedding.) (There were lots of kids there.)

So now I’m a few days in on Ritalin and I can’t impress upon you enough how much it’s helping already. Without going into the minutiae of my life, it helps me get on with the minutiae of my life. That’s all. It’s made my internal monologue all able to put tasks in order and fix small things that would otherwise cause me mental paralysis. Like deciding what socks to wear. Again: being super literal here. You very don’t want to know how many sock-related meltdowns I’ve had.

Am I fixed? No! However, AS I HYPOTHESISED ALL ALONG, the ability to scoot around and get stuff done in a calm manner has already given me a lot more brainspace to deal with my anxiety and depression and is starting to alleviate some of the symptoms that were making everything more difficult than it already was. It’s like my mental health was all overheated and while the room it’s in is still really warm I’ve at least been able to kick the blankets off it and sit it next to an oscillating fan. IDK about that metaphor, I’m just kind of overheated right now so it’s the first thing that sprang to mind. 

Anyway, oh my god, let’s talk about food. I am trying to get back into that whole thing, since I apparently love it so much and all. 

One extremely shiny, silvery bright spot during the difficult start to this year was that my friend Hannah came over to visit New Zealand from Australia. We’ve known each other online since about 2010 where we became mutual admirers of each others food blogs, our travels coincided for one beautiful day in 2012 in New York where we got to meet each other, and we’ve been extremely in touch ever since throughout each other’s various Life Stuff. Her brain and my brain are like twins over so many things and her writing was always an entrancing mermaid in a sea of dull, copycat, forgettable food blogs. So yeah, you could say I kinda like this gal. We talked and talked and talked over Chow takeout on the floor, we went to see Swan Lake and got super emotional over it, I made her fancy chartreuse-based cocktails when she came to visit me at work, we had fancy brunch. And then we were like, man it seems kind of illegal for two food bloggers to come together and for there to not be cooking involved.

So I made her dinner. Now: I will self-deprecate until I’m nothing but a pile of dust that says “lol don’t fight over me all at once, handsome suitors” to no-one in particular. But I am really, really good at making dinner out of pasta and whatever the heck is in my pantry. Admittedly: I had some good stuff on me this time around. Half a bag of frozen prawns. Half a bag of frozen peas. Some small jars of preserved lemons which were party favours from a wedding in November. But still! I’m a pasta whisperer. And this was the result of such whisperings: 

one-pot prawn, pea and preserved lemon spaghetti

  • 200g spaghetti or dried pasta of your choice
  • 150g or so of frozen raw prawns
  • 100g or so frozen peas
  • two pieces of preserved lemon, rinsed with the flesh sliced off
  • 25g butter
  • lots of olive oil
  • lots of dried chilli flakes
  • lots of nice salt and freshly ground black pepper
  • a handful of fresh thyme leaves

Get a large pan of salted water on to boil, and then once it’s like, boiling, drop in the spaghetti. Once it’s almost tender – about ten minutes in – add the prawns and peas, letting it return to the boil. Continue to cook until the grey frozen prawns have turned all pink. Drain the lot, and return to the pan (off the heat) and stir through the butter till it’s melted. 

Meanwhile! Finely slice the lemon peel and mix in a small bowl with about three tablespoons of olive oil, as many dried chilli flakes as you fancy, some salt and pepper and most of the thyme leaves. Stir this through the buttery cooked pasta, prawns, and peas, and upend the lot into a serving dish (or just serve straight from the pan.) Top with more thyme, olive oil, salt and pepper as you wish. 

Serves 2.

What’s great about this recipe is right there in the title – it’s all done in one pot, so you barely have to think or clean – two of my least favourite activities – and the ingredients are simple but bring plenty to the table. Prawns and peas are both mild and sweet, but then the fiercely salty lemon and hot chilli flakes do their thing and pull it all together. You can leave out the butter and just pour over more olive oil if you’re not feeling dairy, but it gives juuust a little richness and of course, the delicious flavour of butter. 

During a week when everything was so very hard, making food for a darling person and then sitting on the floor and hooning into it with them while talking about everything in our lives up until this very minute was honestly the nicest, nicest thing.

I know it has been a long time since I last wrote here, but near the top of the list of things I don’t want to give up on is this blog, and now that I have the friendly horse that is Ritalin to gallop about on (note to self: def give up on metaphors tho) I hope it will be easier to both cook and write and care about them again too. 

And seriously: I am so, so happy about this diagnosis. “Sarah”, I said, when the psychiatrist told me, “Sarah, I really feel like I should crack out some champagne with you right now.”  Once again, said with utmost sincerity.

And yeah, I get that this is weird but I can’t stop listening to it.
