(It’s not pretty, I grant you, but I was like “maybe a lil bow will distract”)

I had a dream about this corn and chilli relish and then upon reflection realised that it already existed more or less in a recipe from Nigella Lawson’s Christmas cookbook, aptly named Nigella Christmas. All I’ve done to her recipe is halve the quantities, add some red chilli, use date syrup instead of honey (I am kind of on the fence on honey consumption vis a vis veganism but for simplicity decided to not use it here) and used ground cumin instead of celery salt because I didn’t have the latter and felt like the former, while different in flavour, brought some of the same energy.

This doesn’t come out like the chow chow you might see in the supermarket, it’s not thick and gluey but more like … bits of vegetable submerged in vinegar, neither of which sound massively appealing but my god! This stuff is addictive, I haven’t actually even used it in anything yet but I’ve already finished off an entire jar just by standing at the open fridge, eating it by the spoonful. Fortunately it makes two jars full.

As I said, you could ostensibly just go to the supermarket and buy a jar of this or something similar but there’s something in the act of making a recipe that then goes into a jar, preserving and putting away, which pleases. This is based on – as I’ve said before – both the sheer resourcefulness of it and the fact that you’re investing in your own future existence and, hopefully, happiness.

The finished result isn’t particularly attractive but it tastes incredible – the sweet crunch of corn and capsicum against the bursts of burn from the chilli and the sinus-scritching mustard, the sour-sweet sugary vinegar balanced by all the salt I poured in (this can handle a LOT of salt.) It’s also so easy to make, and indeed, you could totally make a ton more if you go with Nigella’s original proportions.

As for what to do with it other than eat it by the spoonful; I think it would be ideal piled into a baked potato, layered on top of a burger, or stirred into a pile of peppery crunchy rocket and iceberg leaves.

Corn and Chilli Relish

Adapted from a recipe by Nigella Lawson from her book Nigella Christmas

  • 500g frozen corn kernels, defrosted
  • 1 red capsicum, seeded and finely diced
  • 2 spring onions, finely sliced
  • 1 large red chilli, seeded and diced
  • 1 cup/250ml apple cider vinegar
  • 1/3 cup date syrup, agave syrup, rice malt syrup or honey
  • 1/3 cup caster sugar
  • 3 teaspoons sea salt (or more to taste)
  • 1/4 teaspoon ground cumin
  • 4 teaspoons English mustard (or more to taste)

Have two 300ml glass jars at the ready, and sterilise them if you like, can be bothered.

Mix all the vegetables together in a good-sized bowl. Wash your hands thoroughly and be careful to not touch your eyes after handling the chilli or it’ll sting like hell.

Bring the vinegar, syrup, sugar, cumin, salt, and mustard to the boil in a saucepan and allow to bubble away for about five minutes, stirring occasionally. It might bubble up and look like it’s about to overflow, in which case remove it from the heat and give it a good stir or – my usual trick – drop an ice cube into it.

At this point, pour the syrup over the corn mixture and give it a stir. Carefully divide between the two jars – the easiest way is to spoon the corn out of the syrup into the jars followed by the remaining syrup, which should be completely submerging all the vegetables. Screw the lids on and refrigerate. This tastes better the longer you leave it and will last for around a month in the fridge after opening.

(And then I was like okay what about a new location)

I’m not sure if this is a confession that’s going to elicit gasps of muffled horror or conspiratorial acknowledgement that I’m not alone in this (as long as it’s not greeted with indifference tbh) but any time a recipe is all “sterilise your jars thoroughly” I’m like “you will be FORTUNATE if I give it a rinse of the most CURSORY nature in soapy LUKEWARM water”, and you have my full permission to do the same. If the jar smells too strongly of what it previously contained (tomato in particular seems to linger) a quick slosh of water and vinegar or lemon juice seems to do the trick.

I was able to go to a bunch of LitCrawl (a local literary festival) events this weekend and left feeling replete with inspiration and goodwill towards all those who shift words from their brain onto some more tangible surface. And I met so many nice people! Some were even like “oh you’re Hungry and Frozen” and I was like yes! These words are sweeter than any writing I’ve heard this entire festival! But, to that end, after seeing him perform his poetry on Friday night I read the entirety of Kaveh Akbar’s book Calling a Wolf A Wolf; it’s very beautiful and he has this incredible way of saying things with a sense of authority where they almost sound idiomatic but you’ve also never heard those words in that order before. Even his titles are blissful – My Kingdom for a Murmur of Fanfare. I recommend it sincerely. Positively frothing with inspiration and spurred on with the lazy insolence of tramadol and having watched a movie (Outlaw King) that I genuinely the entire time thought was the pilot episode of a Game of Thrones style prestige TV show because prestige TV has melted my brain; I myself put pen to paper to write a poem: for rough context, imagine a Game of Thrones style prestige TV situation but…with…pigs. All present found it highly amusing, I assume without verification.

A pig shall rise

Over on my Frasier food blog I talk about tropes a lot – a trope is, loosely, a recurring theme or motif – and I feel like I’ve hit a vegan trope with this week’s recipe: tofu. Let us face it, there’s no food more generically symbolising the vegan life as a whole than tofu, (perhaps other than lentils) the implication being that in its meatless blandness it represents not only all that you are missing out on and have left behind but also the miserable and sepia-flavoured journey ahead that you’ve chosen. (There are those who say “how do you know someone is a vegan? Because they’ll tell you at any opportunity” and there are those who say that people pre-emptively berating vegans outweighs any levels of militance from the vegan camp, and then there’s me, and I say guess what: everyone has the capacity to be really annoying.)

Rest assured, no one is forcing anyone to eat tofu. You can quite happily live your entire life without touching the stuff. I myself actually really like the taste of it – which is admittedly fortunate – and always have. It’s often said of tofu that peoples’ main mistake is not giving it enough flavour – but like, why would you want to make anything that doesn’t have flavour to it? If you cook something blandly, it’s going to be bland. A plainly-cooked chicken breast has no liveliness, it is at best tantamount to a dry flannel.

Anyway, if you are going to consume tofu, you might consider doing so in the form of this week’s recipe, since it’s monumentally delicious. I actually had the idea for the sauce first and worked backwards from there to fill in the blanks for how I could use it (other than just drinking the sauce in its entirety, I suppose) but it all worked so well that both the tofu and the sauce are the double-billing stars of the show.

The golden crust on the tofu is made from a glorious mixture of coconut, sunflower seeds and breadcrumbs – light, nutty, buttery, crunchy, with anything that doesn’t stick to the tofu toasted in the oven and scattered over your salad leaves. I’m all about contrast in texture and the intensely crisp exterior giving way to bouncingly tender interior is marvellous. And the sauce! How it shines! Wasabi has this particular, sharp, mustardy, sinus-scritching heat to it, which is balanced perfectly against the cool hit of mint, the sour, fresh lime, and the richness of the oil. All of which is then further tied together by the power of an entire bulb of garlic, roasted into mellow sweetness. The resolute mildness of the tofu is the ideal backdrop for all this action, but this sauce would be wonderful on pretty much anything, I imagine. If you don’t have wasabi or can’t find it then horseradish or indeed mustard would surely be a fine substitute, since all three are part of the same family.

Coconut-Crusted Tofu with Wasabi, Mint and Roasted Garlic Sauce

A recipe by myself

1 block of firm or extra firm tofu
2 tablespoons shredded coconut
2 tablespoons sunflower seeds
2 tablespoons panko breadcrumbs (leave them out to make this gluten-free and up the coconut and sunflower seeds)
Salt and black pepper, to taste
2 tablespoons olive oil
1 tablespoon of cornflour
salad leaves, to serve

Wasabi, Mint and Roasted Garlic Sauce

1 bulb garlic
2 teaspoons wasabi paste, or add more to taste
3 tablespoons water
4 tablespoons olive oil
2 tablespoons lime juice
4 mint leaves
A pinch each of salt and pepper
Set your oven to 180C/350F.

Slice the very base off the garlic bulb – the knotty bit holding it all together – and wrap the garlic itself loosely in tinfoil and roast it for twenty minutes in a small dish that you’ve drizzled the two tablespoons of olive oil into.

While this is happening, slice the tofu in half horizontally so that you’ve got two flatter rectangles, and either reserve one of them for later or add some more coconut and sunflower seeds to your coating and make two.

Blitz the coconut and sunflower seeds in a blender till they resemble breadcrumbs, and tip into a small bowl. Stir in the panko breadcrumbs, and a pinch of salt and pepper.

In another small bowl, mix the cornflour with a tablespoon of cold water.

Spoon some of the cornflour mixture over the tofu and then sit it, cornflour-spooned side down, in the bowl of coconut breadcrumbs. Spoon more cornflour mixture over the side facing you and turn it over. Continue spooning more cornflour over and pressing more breadcrumbs into it so it’s as thickly coated as possible.

Remove the roasting dish from the oven and carefully lift the coated tofu into it, sitting it beside the garlic. Return to the oven for another ten minutes. Reserve any remaining breadcrumb mixture.

Once the ten minutes is up, turn the tofu over and remove the garlic. Put the tofu back in for another five to ten minutes.

Unwrap the garlic and carefully – it will be hot as hell – squeeze the garlic cloves from their paper casings into a small blender or food processor. Add the remaining sauce ingredients and blend it into a lime green sauce.

At this point – you’re almost there – remove the tofu to a serving plate, sitting it on a bed of salad leaves or kale or something and tip any remaining breadcrumbs into the roasting dish. Put the dish back into the oven for a minute or two until the breadcrumb mixture starts to brown and the scatter them over the salad, then pour over as much of the sauce as you want. Finally, eat.

So my usual plan is to send these blog posts out on a Sunday night to all the email subscribers (and sign up here if you want this to be you) but instead on Sunday gone I was too hyped up watching the Khabib vs McGregor fight before work to write (reacting to my livestream cutting in and out alone provided ample adrenaline) and then after work I accidentally got on the go from having several birthday shots given to me (not my birthday, I might add, I was merely collateral damage.) Not drunk, but precisely enough consumed to immediately and heavily fall asleep when I got home instead of diligently writing as planned.

I don’t know if it was my addle-headedness either just in general or post-shots but no matter how hard I revised, this recipe came out sounding monstrously complicated. It’s literally just sticking some stuff in an oven and then sticking some stuff into other stuff and then sticking that in an oven and blending yet further stuff but trying to explain it was oddly difficult; should you have glanced over the recipe and felt a quickening in your heart at how many steps are involved rest assured it’s just 1000% me talking myself into a corner. This is easy as. And so cheerfully resigned to a life of tofu am I, that the next day I made myself some tofu scramble, for the express purpose of (a) writing about it on my next Frasier food blog post and (b) eating. For, you see, the only thing I’m even more cheerfully resigned to is a life of self-promotion.

Alice Coltrane, Om Rama. This song just drops you head-first into it and keeps it frenetically high-paced until the middle section where it dramatically changes tempo and gets all woozy and dreamy and just when you start to relax it speeds up again. I love this song so much.

In the time between my last blog post in mid-June and right this very second, I’ve been, with modest effectiveness, working on getting this site to a point where, to use a metaphor to briefly illustrate a much larger point while also weighing it down by explaining my use of metaphor in a belaboured, some might say deeply unnecessary way: the romance is rekindled in the relationship. I’ve loved writing this blog for almost eleven years now and damn it, I’ll love it again.

Part of that includes the added dimension of encouraging you strenuously to subscribe to this blog so you can receive the posts, before anyone else sees them, in your inbox each week! I just thought it would be fun!  What you’re reading now is the post, (edited lightly for context), that I already sent out, because of course this is still a functioning blog and I don’t want to make you sign up to get these posts sent to you. But it’s like, aren’t we all conspiratorial and cosy and secret, and isn’t this easy, just me landing in your inbox without the unspeakable drudgery of having to go manually find my blog yourself. It’s a little like the pilot episode of a TV show where I’m seeing what works, things might get moved around without explanation in further episodes, but if I didn’t actually post this now, unpolished and unprepared as it is, it might never happen. But also like, imagine me being polished and prepared ever. It’s good to laugh!

I realise the last blog post I did back in June is VERY heavy on this same kind of talk about, you know, where am I going and what am I doing and is it just that I’m too tired all the time or is it that I’m scared that if I had the time to create I still wouldn’t achieve anything, so I’m going to try to not double down on that. I will concede that the last few weeks have been massively busy at work with the Wellington on a Plate food festival going on and what I’ve lacked in spare time I’ve made up for in lack of spare time.

But here’s what I’ve actually done. While the layout of the new-not-new hungryandfrozen.com isn’t perfect and there’s broken links everywhere and strange formatting from the blog being uprooted from format to format like an army brat; I feel like this latest home has a warmth that the last one was lacking a little, and that made me feel distanced from what I was creating. My dear friend Jason patiently walked me through the entire process and did a lot of fiddly code work, and even more heroically, a lot of answering my endless emails. (Did you know he moved 640 blog posts over to WordPress for me? “What a dick” I said, upon discovering I’d written that many.) My wonderful friend Matt made me a beautiful new logo – scroll up and look at it! – which I feel kind of encompasses everywhere that the blog and I have been. And finally I, Laura Vincent, wrote this post. What a hero.

Because I love to not be able to see the woods for the trees, I naturally got incredibly stuck on just what recipe to don’t-call-it-a-come-back with. Whether it’s ADHD or I’m just a slatternly genius, I genuinely cannot achieve a single thing during the allotted, logical achievement time. No, not for me: I instead must wait till the very last minute and then do it all at once, heart pounding and words falling over themselves. That’s what happened here. After tapping my foot impatiently for days and days this black salted caramel ripple ice cream came about in my head very suddenly, and thank goodness: it’s incredible. And ice cream being one of my very favourite foods: it’s appropriate.

Tahini has this rich, fudge-like texture and while I was sold on the blackness of the colour alone, for vague goth reasons unrelated to being even the slightest bit goth and more about simply enjoying ascribing the word goth to things willy-nilly in a doubtless irritating way – the actual flavour is a little sweeter and more mellow than regular tahini. If that’s all you can find though, it’s extremely sweet as. The other major component is simply golden syrup, which has this buxom sweetness, all mouth-fillingly caramelly and sticky and almost buttery once you add the salt to it.

And almost is the crucial word there, because I guess the other thing of note since I last posted is that I’ve decided to go a bit vegan. I hesitate to actually label myself as such with any fanfare since that would seem to set me up for failure, but it’s just something that I’m doing and I am enjoying it. Initially I was all, “restrictions make creativity flourish!” but now it’s less about the absence of animal products and more about the abundance of literally everything else. I wouldn’t say I don’t want to talk about it per se, since all I want to do is talk about myself, but it’s just something I’m trying and it’s been very low key and do-able so far.

So it helps if you think of this salted caramel sauce as not just good in comparison to what it’s not, but in fact how good it is on its own terms: salty-sweet, slow-movingly thick as it slides off a spoon into your mouth, buttery and butterscotchy and rich. Freezing amplifies the fudgey texture which contrasts deliciously with the icy, clean swirls of delicately flavoured coconut cream wrapped around it. On top of which, this ice cream is – as I intend for all my recipes to be – really, really easy to make.

Black Salted Caramel Sauce

  • 125ml/half a cup black tahini
  • 125ml/half a cup golden syrup
  • 3 tablespoons coconut cream
  • Sea salt, to taste, but at least a teaspoon

Get a jar ready to tip the sauce into. Warm the ingredients together over a low heat in a saucepan, stirring constantly, till it forms a thick, shiny black sauce. Remove from the heat and spatula into the jar.

Black Salted Caramel Ripple Ice Cream

  • 125ml/half a cup black salted caramel sauce
  • 2 x 425ml cans coconut cream (forgot to say this in the email, but absolutely use the remainder of the can from which you took the small amount of coconut cream for the sauce, as opposed to opening a whole other one) 
  • two tablespoons golden syrup

Empty the cans of coconut cream into a large bowl and whisk in the golden syrup. Continue whisking briskly until the coconut cream thickens somewhat, like, it’s not going to look like whipped cream but it’s going to have some body to it, you know?

Pour the coconut cream into a container and freeze for at least an hour, until it’s partially solid. At this point, drop spoonfuls of the caramel sauce into the semi-frozen coconut cream and use a skewer or chopstick or similar to swirl ripple patterns into them. Try to use as few movements as possible or the whole thing will end up grey, and the point is to have dollops of caramel sauce amongst the frozen coconut as opposed to blending it all together.

Freeze for about six hours, or until completely solid, then take it out of the freezer about twenty minutes before you want to eat it to let it soften a little.

Whoever did the arrangements for the vocals in this particular production and decided to have Simon Zealotes slide upwards on “ought to call a halt”, thus adding extra drama and anguish: thank you. Margaret Urlich was so beautiful as Mary Magdalene and I stand by my 1994 assertion that her voice sounds like two silver coins being rubbed together.

Mitski has been casually, effortlessly ruining me. I’ve been listening to Thursday Girl over and over and over, it has this mellow early 90s singer songwriter Natalie Merchant Sophie B Hawkins ache that I genuinely cannot get enough of.

I’ve been watching a lot of this show Kingdom about MMA fighters and initially I thought the soundtrack was amazing but occasionally it’s more that no, the snippet of this song just sounded amazing while these handsome men were doing some high-stakes beating up of each other. I Got Skills by Mozes and the Firstborn though, is appealing in or out of diegesis.

three, that’s the magic number

For the last week or so I’ve been sick with a really rough cold that I’m juuuust coming out the other side of, mostly due to a drinking game that I call “take lemon honey ginger every time you cough”, a game with a sub-rule of “strawpedo Robitussin at any and all opportunities” which is curiously followed by “the floor is now lava.” I’m well aware that my last blog post was essentially a bowl of nuts and the blog post prior to that was pasta and now, what is this blog post about but a bowl of PASTA AND NUTS but as I said – I was sick! An unfailingly watertight excuse! I’m sorry I bailed on you, I was sick! I’m sorry I stole your car in the middle of the conversation we were having and then drove it into your other car, I was sick!

My tastebuds have been woefully muffled from having a blocked nose, but I woke up this morning not only feeling a lot better, but also thinking, “what if pesto, but with three different kinds of nut instead of just one” and decided, as I do with most of my thoughts regardless of content or consequence, to act upon it immediately. I feel that pesto was to 2003 what halloumi was to like, 2013, I remember being absolutely obsessed with it and having it feel hugely unattainable, and so I’d try and incorporate it into as many of my cooking class modules in high school as I could get away with (I really didn’t do well in cooking in high school but I think that’s because being a freewheeling spoon-licking pre-ADHD diagnosed idiot didn’t mesh well with teachers trying to get to grips with the assessment regime and a minimal budget that didn’t allow for just like, snorting mounds of pesto.)

But wait, who am I to think I can improve upon pesto? Well I’m me, but this isn’t a one-up so much as a side-step; I’ve subtracted the cheese and instead added knotty, sinuous walnuts and buttery pistachios to the original pine nuts. Which means yes, this fairly plain dish of pasta will cost you roughly $90 dollars, on top of which, even though the quantities of the recipe look huge it really doesn’t make that much pesto because it all reduces down to nothing in the blender, but in spite of all of these red flags may I offer you this one counterpoint! Here it is: it’s really, really delicious.

Walnuts give the mixture body and a bitter smokiness, pistachios give creamy richness and added green, the pine nuts are all…you know, they’re pine-nutty? And when thrown through glassy olive oil and basil leaves at great speed it produces the most incredibly wonderful-tasting freshly-mown-grass-looking paste to stir through pasta or to be consumed however feels right.

a recipe by myself

  • one third of a cup of shelled pistachios
  • one heaped half cup of walnuts
  • one third of a cup of pine nuts
  • one garlic clove
  • a squeeze of lemon juice (roughly a tablespoon) 
  • sea salt
  • the leaves from one of those supermarket basil plants, roughly three loose handfuls of leaves I guess? But seriously, use all the leaves, you know that no matter how diligently you try to water the plant the it’s gonna die immediately and like, how is it that they can stay alive in the supermarket but die so fast once you take them home? What’s going on there?)
  • three quarters of a cup of extra virgin olive oil
  • 100g dried spaghetti or similar

Bring a large pan of water to the boil, add plenty of salt, then cook the pasta for about ten minutes or until it’s like, cooked, then drain the pasta and set aside. I always use the water from a freshly boiled kettle in the pan because it goes way faster than just boiling it on the stovetop. 

In a large frying pan, gently toast the nuts over a high heat, stirring often, until the pine nuts are lightly browned (they’re the easiest to see the color on.) Tip the nuts into a food processor or high speed blender along with the garlic clove, lemon juice, a large pinch of salt, the basil leaves and the oil, and process until it’s a thick, dark green paste. Stir a couple of spoonfuls through the drained pasta and put the rest in an airtight container in the fridge.

Honestly, this stuff is just spectacularly good and makes the simplest pile of pasta feel like a monumental treat. You can do millions of things with pesto though – stir it through roasted vegetables, spread it on toast, thin it with olive oil and drizzle it over fried halloumi for a real galaxy-brain type combination, add a spoonful as a garnish to brighten up almost any soup, whatever your tastebuds decide, follow them in the direction they’re heading.

Me: new year, new me! Anything could happEn!!

Also me: sets my alarm really early in the morning to make a birthday cake for someone dear to me, goes and buys ingredients, makes a ton of buttercream, puts the cake layers in the oven, realises the oven is broken, because OF COURSE, eats a not insignificant quantity of the buttercream, accepts own fate of being inescapably unable to escape own fate.

Luckily the birthday person in question found this hugely amusing.

Despite largely failing without fail, one thing I did without failing this week was make myself a small, serene jar of pickled radishes. There’s something about preserving things that’s so soothing and self-care-y; I guess maybe because you’re literally investing in your own future? The world cannot end if you have to allow for some vinegar-soaked thing quietly maturing in the fridge for not-quite-yet consumption, yeah? It’s also an act of resourcefulness (would it be more resourceful to not spend my scarce money on radishes in the first place, probably, but whatever) which feels good, and things twinkling away in jars are pleasing to the eye, and therefore, the soul.

Plus, these pickled radishes taste completely fantastic. I used Nigella’s easy recipe for quick-pickled carrots in her book Simply Nigella as a starting point. Indeed, I used Nigella’s enthusiasm for pickling things altogether as even more of a starting point, even though the tone of Simply seems a little more muted and subdued compared to her previous entries, her delight in this particular area of cooking cannot help but be infectious. On the other hand, I’ve always been all “how high” to her “jump”, so who really knows, the point is: I made some pickled radishes and it was easy and good.

I decided it might be fun to replace the water in the pickling liquid with sake, as in, Japanese rice wine, feeling that its clean, granular flavour would complement the clean, icy-peppery flavour of the radishes. I used plain old apple cider vinegar because that’s what I had, but next time around – and there will be a next time – I reckon I’d also spring for rice vinegar. The sake itself is not expensive stuff, I literally just was like, which one is cheapest and good for cooking and got pointed in the direction of a modest bottle for a mere $9.

a recipe by myself, inspired by a recipe of Nigella’s. 

  • Like…six? radishes? Enough to fill a small jar once sliced? How is anyone supposed to know this
  • 125ml/half a cup of apple cider vinegar
  • 125ml/half a cup of sake
  • two teaspoons sea salt flakes
  • two teaspoons sugar
  • one bay leaf
  • a few coriander seeds

Thinly slice the radishes into coins, and pack them into a small, clean jar of about 300ml. Put the rest of the ingredients into a small pan and heat till just boiling. Remove the bay leaf from the pan and then carefully tip the liquid over the radishes in the jar, put the lid on, and refrigerate them till cold. 

The fuchsia-coloured skin of the radishes merges into their icy white flesh once they’ve been sitting in the jar for a while, giving you sour-sweet crunchy disks of breathtaking millennial pink. Use them to adorn sandwiches, salads, tacos, bowls of rice (my preference), as part of a cheeseboard or charcuterie platter, whatever you fancy. The bright pink pickling liquid is nice used in a dressing with some soy sauce and sesame oil, nothing need go to waste.

It’s obnoxiously humid currently in Wellington and honestly I wish I could submerge myself in liquid and store myself in the fridge; till the technology comes to make that viable I’m stuck eating cold things instead to try and regulate my soaring temperature, for which these pickles will do quite, quite nicely.

I first read this book well over ten years ago but only just decided to actually look up the song. My verdict: it’s a banger!

So Alive, a 1989 song by Love and Rockets that is far more sultry than it has any business to be.

Nobody Needs To Know, sung by Norbert Leo Butz from the cast recording for 2002 off-Broadway musical The Last Five Years, filed under “songs I can only listen to occasionally due to the ensuing feelings!” The slow build and the squalling violins (or whatever it is) and the mood of what I once read somewhere described as “regret bordering on horror” makes for intense listening, and Norbert and his rich “r” pronunciation are right there to carry you through it all.

Tis the season to flop dramatically facedown onto your pie-crumb scattered bed, yeah?

Every year around this time I do a blog post rounding up links back to my own blog posts of recipes that make ideal edible Christmas presents, or indeed edible presents to be consumed for any occasion. This year I am making a small concession towards my own medication-induced exhaustion and simply linking to last year’s blog post rather than doing a whole ‘nother one. This is also due to the fact that I re-read last year’s post and was like…wow. this is so well-written and I’m not sure I could manage to be more entertaining about the same content than I was at that precise moment? Could anyone else be this damnably self-congratulatory while admitting extreme shortcomings?

It’s true though, as I covered in my last blog post my new medication is making life a lot easier but the mental wading-through-treacle vibes are still yet to level out and as such it’s been a lot harder to sit and write without genuinely needing a lie down. I’m annoyed that I can’t quiiite rise above the fog yet, but I am amused in a small way at linking to a blog post that is itself a list of links to my own blog posts, like an artisinal mille-feuille of self-absorption (putting the “me” in mille-feuille, amiright?)

I’m not leaving you entirely in the lurch you didn’t even know that you were in, though, as I’ve got another recipe to add to the list: a wonderfully easy one, at that. For me it’s just not Christmas without consuming a vast quantity of Nigella Lawson content (I mean, it’s also not like, a Tuesday without consuming a vast quantity of Nigella Lawson content either, but your experiences may vary.)

Putting some stuff in a jar is the universe’s gift to gift-giving. It’s simple, it looks pretty, it’s practical. I’m not talking about the modern nightmarish extrapolation-via-pinterest of overnight doughnut paleo ramen in a M*son J*r. All I’m saying here is like, if you’re in the mood to cook stuff in the first place anyway, making some easy jam or a simple chutney or sauce or Pickled Thing makes a lovely heartfelt gift that’s just as applicable to give to a colleage whom you had a frosty yet professional working relationship with as it is to give to your crush, your kindly neighbour, or your grandma. You can talk it down – oh, I made five kilos of this chutney and thought you might like a jar, it’s great with turkey – or you can talk it up, like, I heard you liked cherries so I macerated them in this liqueur which evokes the perfume you were wearing on the night that we first met – and here you reeeeally wanna make sure you read the room before launching into such talk or indeed, actions – OR you can just keep it all for yourself and have twinkling jars of pastes and emulsions ready to enliven your leftovers, embiggen your sandwiches, and en-sauce your un-sauced.

I, myself, brought the peaches to the table for a Christmas Dinner (which was actually consumed as a late lunch but for some reason no matter what time of day Christmas-related food is eaten I call it dinner) with my two very best friends and twin lights of my life, Kim and Kate. We ate roasted chicken with herbed Greek yoghurt, cornbread and cranberry stuffing, potato-wrapped roasted asparagus, Potato Dish (you know the one) and roasted beetroot and feta spiced filo tart. We watched Imagine Me And You (“you’re a wanker number niiiiiiiine!”) and drank wine and negronis and just had a really beautiful lovely day. The peaches in all honesty would not have been missed if I hadn’t brought them along, but because the day itself was so wonderful they are inextricably associated in my head now with Good Times.

nigella lawson’s spiced peaches

a recipe by myself. Lol no it’s from her book Nigella Express. It’s my wording of her recipe though? Let’s just back away from this whole hornet’s nest and proceed with the recipe. 

  • 800g canned peach halves in syrup
  • one tablespoon rice wine vinegar, or similar
  • two cinnamon sticks
  • an inch or so of fresh ginger root, peeled and sliced into coins
  • half a teaspoon dried chilli flakes
  • half a teaspoon sea salt flakes
  • half a teaspoon black peppercorns
  • three whole cloves

Get a couple of jars ready to store the peaches in, and sterilise them using your chosen method (which may or may not include “giving them a quick rinse and hoping for the best”.) 

Empty the peaches and their syrup into a saucepan with the rest of the ingredients. Bring to the boil, let simmer for a few minutes, remove from the heat, and tip into the jars. Refrigerate till you need them. That’s IT. 

These peaches are excellent, truly excellent, with cold meat and/or cheese, and they look absolutely super on the table with all your other dishes. I also have a suspicion that the spiced syrup would be amazing as a shot alongside a shot of nice tequila, like a kind of peachy pickleback.

I’ve been aggressively feeling 80s indie lately. Whisper to a Scream by Icicle Works is so, so good, like, makes you want to run down the street in a directionless yet purposefully-coming-of-age-film type way. The massive drums and “we are, we are, we are” refrain give it a kind of early pop-punk vibe which is naturally very pleasing. Listen to it!

I have a personal tradition whereby every year I make myself wait until December 1 to rewatch the spine-chillingly ludicrous performance of Turkey Lurkey Time from the musical Promises, Promises, at the 1969 Tony Awards. It’s SO STUPID and yet a geniuine feat of physical engineering and the perfect marriage of choreographer and medium, the medium being Donna McKechnie’s illegally rubber-jointed limbs. If none of this makes any sense, watching the video is really…not going to enlighten you any further, but you either get it or you don’t.

good year for hunters and christmas parties

It’s suddenly December which is really interesting because this year has actually been twelve years long instead of twelve months long! Please don’t try to argue with me on this, there’s literally no evidence to the contrary that you can present me to make me think otherwise. Anyway, so I made some majorly delicious vegan pasta on Sunday night but then on Monday night I was incredibly nauseous and throw-uppy and blamed it, with rather horribly specific evidence, on the leftovers of said pasta that I’d eaten that day. Unable to face thinking about the pasta any time soon and rather desperately running out of cute metaphors for my life; I suddenly remembered! Every year I do a round up of my own blog posts featuring recipes which I think would make good edible Christmas presents. Or indeed, presents for any time or persuasion; I certainly don’t expect all of you to be celebrating or even acknowledging Christmas but nevertheless, tis the season for presents to be in season and I shall not be left behind.

There’s this video on youtube where it’s Bee Movie but it speeds up every time someone says “Bee” and honestly that’s what Christmas is like every year (okay I guess I have some cute metaphors left up my stylish yet affordable sleeves.) I don’t intend for this list of stuff to put any pressure on anyone – just do what you can, if Christmas makes you feel all meaningful and stuff then act on it or don’t; it’s just another day but if there’s someone you feel like you want to do something for then gosh, there’s not much nicer than presenting them with something they can eat. Yes, capitalism is everything and greed is good but a small, homemade item, that you took time and effort to create with your own two hands (look at them! Those two hands!) is rather unbeatable. That said, if you were already planning to give me personally like, a crate of champagne or the princely sum of forty dollars, don’t let my starry-eyed pronouncements change your mind.

It’s all very overwhelming and there’s nothing I like more than holding your hand throughout it all and assuring you it’s going to be chill and fine and as long as your banter is good and your personality isn’t entirely awful people really won’t remember or mind about the food. On the other hand, they definitely will remember the food like, in the moment, as they’re eating it, so to ensure a good good time may I suggest some of the following – these recipes all look like a big deal and are super delicious and crowd-pleaser-y but won’t be immensely taxing upon your time, wallet, or eggnog-covered bod. It’s my small tradition to watch this every year but only once December 1st hits; it’s the most ludicrous song but something about the adorably deranged and yet technically ferocious dancing and Donna McKechnie’s rubber-limbed movements, like she has no regard for her bones whatsoever, and Baayork Lee being a total delight, and the third woman who is also great, and the way the ending comes together somehow makes me COMPLETELY emotional.

Peach Kelli Castle, Sailor Moon. Surfy music plus TV is very my sweet spot, I’m afraid to say.

So it has come to this: ya girl made what is basically a salad and when writing the recipe, called it a bowl instead.

Compelling, no?

But yeah, while bowl food carries with it an oddly smug, insistent attitude, it would be equally insistent and smug of me to deny how good it is; I love that you can really just put anything on top of rice and call it A Bowl, how it contains so many different tastes and textures, and really makes you feel like someone who is a Pinterest star under the name of She Wears Striped Boatneck Tshirts or My Glowing Clean Natural Kitchen or Oh! Dream a Dream, You Wanderer rather than just being an achingly tired rat-human making fun of blog names on Pinterest.

Over the last few days my body has been doing this thing where my sinuses are suddenly made of concrete and I’m even dopier than usual which is honestly something to behold and I cannot, simply cannot, stop sneezing. I decided to put a whole lot of rudely healthy ingredients into a bowl in the hopes of it having some effect on me (the woman who served me at the supermarket: “you should put some ice on your sinuses, your face is all puffy.” me, internally: “I feel like there’s some kind of code you just violated.”) The crowning jewel of it all is the matcha mayonnaise, pairing matcha powder’s intense, oh-wow-I-accidentally-swallowed-grass flavour with equally green olive oil and a little apple cider vinegar, the effect of it all is surprisingly wonderful. If you don’t have matcha powder or feel weary at the thought of making your own mayonnaise, simply spoon over aioli or some other condimenty-paste thing.

Similarly, you can substitute any number of things for any number of things here, but this is the recipe I made and it is so, so very good – a ton of texture and crunch, with earthy turmeric and oily, charred broccoflower and sweet baby carrot and salty, creamy feta and magical walnuts.

I cannot lie, this actually takes a ton of effort to put together and uses so many dishes, especially if you haven’t made the mayonnaise ahead of time, but it is so delicious and has the decency to produce a fair amount of leftovers. And importantly, it’s full of health-making ingredients to make your immune system remember who the boss is here (I mean, I’m still massively sick the following day after eating it but I’m sure I’d be way worse without it, right?)

aggressively healthy bowl with matcha mayonnaise

a recipe by myself. 

  • half a cup of quinoa
  • one teaspoon ground turmeric
  • two tablespoons extra virgin olive oil, plus more for roasting the vegetables
  • half a head of broccoflower (or broccoli or cauliflower, obviously) 
  • four or so baby carrots
  • a few cloves of garlic, left whole and unpeeled
  • a handful each of walnut kernels and pumpkin seeds
  • half a bunch of cavolo nero leaves
  • 100g or so feta (optional, I suppose)

Cook the quinoa in a large pan of boiling water until it’s fluffy and expanded and, well, cooked. Drain and rinse in a sieve under cold water, then place in your serving bowl and stir in the olive oil and turmeric, plus sea salt to taste. 

Meanwhile, set your oven to 220C/450F and slice the broccoflower into halved and quartered florets. Leave the carrots whole but trim the frondy tops off. Place the florets and carrots plus the garlic cloves on a baking tray, drizzle generously with olive oil, and roast until a bit charred and browned on the edges – around fifteen minutes or so.

Arrange the roasted vegetables and garlic cloves (pop them out of their papery casings first) on top of the quinoa. Place the feta, cubed or crumbled with your own hands, in the bowl. Scatter over the walnuts and pumpkin seeds – I put them on the baking tray that the vegetables were on and used the remaining heat from the oven that I’d just turned off to toast them a bit first – and tuck cavolo nero leaves around the edges of everything. I tried to put everything in neat lines, but it doesn’t really matter! Spoon over the matcha mayonnaise and add more salt if you feel like you need it.

  • one large, fresh, organic, free range, bla bla bla egg
  • one heaped teaspoon of matcha powder, or more if you like
  • one teaspoon dijon mustard
  • one tablespoon boiling water
  • around half a cup rice brain oil, or similarly plain oil
  • a third to one half of a cup of extra virgin olive oil
  • two tablespoons apple cider vinegar
  • sea salt, to taste

Crack the egg into a bowl, and add the matcha powder and mustard. Whisk briskly just to get everything incorporated, then add the boiling water while continuing to whisk. Continue whisking for what will feel like forever, while slowly adding the oil in a slow drizzle, around a tablespoonful at a time, continually whisking between additions. Does this make sense? Whisk hard, add oil slowly, that’s all. Once you’ve added all the oil, whip in the apple cider vinegar and salt. 

Now, by this point, either it will have thickened significantly and look like mayonnaise, or it will have thickened a bit at resemble a kind of green milkshake. Not to worry: put it in the fridge for an hour and it should turn lusciously thick. Give it a stir before using. Keep for a week or two. 

I’m not going to go down the line and list all the good vitamins and minerals that you get from everything in here but suffice to say, turmeric is powerful stuff and it’s my understanding that a tablespoon of matcha powder is the equivalent of replacing your entire bloodstream with green tea, plus all that olive oil and the nuts and seeds will make you shiny, and garlic and cider vinegar are all germ-fighty and quinoa is, y’know, quinoa, and I haven’t even got started on the green vegetables.

The matcha mayonnaise recipe makes an awful lot but it’s a charming way to take in that green powder – the vinegar and the oil plus the silky, aerated texture sort of encases any harshness of flavour and lifts it up and glides it right to the parts of your tastebuds that enjoy that sort of bitter vibe without dropping it too hard. Uh, it tastes nice, is what I’m saying. Don’t be afraid of how much oil goes into it – you can use less extra virgin olive oil and more plain if you’re worried about the expense – but use some, even just a couple of tablespoons, please, because the green-on-green flavours are so perfect together. Use leftovers as a spread for sandwiches, to rakishly dip truffle fries in for some kind of intensely pastoral experience, to accompany pickled vegetables (it’s 2016, I know you have pickled vegetables on your agenda), however you please.

I KNOW. Anyway the last song, Goodbye Until Tomorrow/I Could Never Rescue You is my absolute favourite and brings me to my knees and if you’re feeling fragile you probably definitely should listen to it because why not, the sheer optimism from her colliding with his resigned it’s-over self and then-her is unaware of now-him and now-her and it’s awful! But! Such a beautiful, beautiful song, listen to it, watch the whole thing, do it.

everyone is waiting, waiting on you and you’ve got thyme

A Season For Peaches, a novel by Henri Michel

In case you are all, “damn that Laura is the epitome of perfection I really love what she does I just wish she’d sometimes display some kind of minor flaw to humanise her more” – and I have zero reason to believe this isn’t what people are thinking all the time – then have I got a relatable and relatively dull anecdote for you about how I made a terrible dinner.

On Monday I was exceptionally tired and not really thinking and as a result, I made the most aggressively bland, horrible pasta of my life, and the more I tried to fix it the worse it got. I started off wanting to make some kind of dairy-free cauliflower sauce, where you puree an entire head of cooked cauliflower and it turns out all creamy and delicious. Why? Honestly, I don’t know, but I’ve been reading too much pinterest but also if I can effortlessly conjure up a dope vegan pasta bake then that’s a pleasing outcome. However it turned into the equivalent of mashed potato and refused to puree and also tasted of absolutely nothing so in a panicked state I … upended an entire bottle of cream into it. It still wouldn’t liquefy, so with mounting panic I mixed this mashed potato-esque stuff into cooked rigatoni along with some eggplant I’d roasted, so it was like…this weird billowy mass studded with the occasional piece of eggplant. How did I think this was going to turn into an awesome pasta bake? I topped it with parsley. That made it even less good. I shoved it in the oven to grill, which, as there was nothing in it to melt, just made it more warm and didn’t change it miraculously on the cellular level that I’d been hoping for.

It might sound “insufferable” or like “not a real problem” or “good god shut up Laura” but like I said, I was super tired and making dinner is a thing I’m always good at when all else crumbles around me and honestly, just the waste of money and ingredients was incredibly disheartening. However, I did manage to avoid panic-eating the lot, and dealt with it by going for a nap and searching youtube for ASMR videos specifically featuring someone telling you repeatedly in a very gentle voice that you’re actually a good cook. (A later cursory prod of the abandoned pasta bake revealed that it had not improved with time but I made myself eat some anyway, because I was both hungry and miserably stubborn about the aforementioned waste of money and ingredients.)

This is all completely unimportant and not terribly interesting, it’s just every time I do something stupid I feel pathologically compelled to tell the entire internet about it. An incident of totally sucking shared is an incident of totally sucking halved, I say.

Having since made a few things that mercifully turned out deliciously, I am safely back in the mindset that I love cooking and it loves me. For example, these honey and thyme roasted peaches. I went to brunch at Flight Coffee Hangar with one of my dearest friends Charlotte for her birthday and had brioche covered in vanilla mascarpone and said peaches. (It’s one of those places where the menu is so good that it’s actually inconvenient, because I can never choose what to get.) I was so taken with my brunch that I bought peaches on the way home and immediately tried to recreate what they’d done.

I don’t know how similar my method is to what the cafe does, but it worked incredibly well for me. Before you even get to taste them, the slowly roasting peaches fill your house with their heady perfume, so rich and intoxicating that you want to float through the air with hearts for eyes like some kind of amorous cartoon animal from a bygone era.

There’s something oddly lovely and lazily sensual about drizzling sticky, slow-moving honey over soft freshly cut peaches before scattering them with fragrant herbs, like you have no cares in the world apart from getting weirdly skittish over ripe stone fruit.

Cooked, they have this floral depth of sweetness from the slick of honey and the caramelising heat of the oven, and the smoky herbal thyme cuts through this and makes it more than just merely sugary. With very little effort suddenly you have yourself this gorgeous quantity of fruit that you can tuck around scoops of ice cream, stir through muesli, arrange on top of a cake, or indeed, add to toasted brioche with mascarpone as they did at the cafe.

honey thyme roasted peaches

a recipe by myself, but inspired directly by my brunch at Flight Coffee Hangar

four large ripe peaches
two teaspoons runny honey
one teaspoon olive oil – I guess you could leave it out but I feel it adds some fruity richness and will put a shine on your coat
several sprigs of fresh thyme

Set your oven to 180 C/350 F. Roughly slice the peaches into quarters or thirds or whatever and lay them on a baking tray lined with baking paper. Drizzle over the honey and the olive oil, then scatter over most of the thyme leaves, and just throw the remaining sprigs on top.

Roast for twenty minutes, then turn the oven off and leave the peaches in there while it cools, for about an hour. Use how you please, and throw any remainders into a jar and keep in the fridge.

That afternoon, 100% not sick of peaches yet, I ate them with Nigella’s miso ice cream that I’d made a variation on (by adding shredded coconut and white chocolate) and it was an incredible combination, the kind of thing that makes you feel so incredibly grown up that you end up going full circle and feeling childish again because you feel so grown up; then this morning I added them to some intensely healthy chia seed muesli to which they brought depth and sweetness. I still have half a jar left, I may just eat them straight from it with a fork but I like the idea of deploying them savoury-ly, perhaps in some tagine-type dish or to accompany crispy, slow-cooked pork belly. What I’m saying is, you will not regret making these. If you avoid honey for whatever reason, I do believe maple syrup would be an excellent substitution; if you don’t like thyme then that’s a little harder as it’s not as though you could successfully use, like, parsley instead – I’d just leave it out altogether. I adore thyme though and am pretty much forever trying to work it into everything I cook.

Because my friend Charlotte and I are practically twins (that is, we’re very similar personality-wise and we were born only a handful of days apart, one can only dream of having a face as beautiful as hers) her birthday happening means that mine is getting super close. I’m feeling more chill about it than I was a few blog posts ago, I mean…it’s going to happen. It just is. Also I remembered that you get presents and lots of attention, both things that I adore, and I’m frankly curious to see what thirty-year-old me is like. It will possibly involve singing Grown Woman by Beyonce with increasing desperation, but who knows!

And honestly it’s impossible to tell who is hotter out of Skin or the Sevendust lead singer LaJon Witherspoon (when Skin sings “crawling down your spine” I’m pretty sure she wins but it’s not actually a competition and I’m just incredibly glad they collaborated on this amazing song.)

Chelsea Jade, Low Brow. This stellar human who I am proud to call a pal has released this gloriously dreamy new tune with a video that’s both beautiful and beautifully silly. “Just hold me closer than you know how to” – ugh it’s so good.

next time: I may well have to make some kind of elaborate pasta bake again to exorcise the demons of the last failed one. Will make sure I’ve slept enough this time.

how much trouble can one ice cream be?

Prologue: Laura.

Confused yet? I decided to write this blog post somewhat in the style of a Baby-Sitters Club book, for no good reason other than it occurred to me and I ran with it.

Chapter 1

WHUMP! CLATTER! 

That’s the sound of me jumping onto my bed while holding a bowl of ice cream and delicious homemade honeycomb sauce, immediately knocking over the worrying number of empty juice cans that I’m lazily keeping beside it instead of putting them in the bin. “Auughhhh!” I just manage to stop the rapidly-melting ice cream and warm sauce from spilling over onto my bed. What a day!

I guess you’re wondering by now who I am, and what I’m wearing. Well there’s me, Laura – I hope you’re taking notes, I’m going to quiz you on this later! Psych! I’m kind of the humorous one here, or so I always say. I’ve got chin-length unruly red hair and glasses, but people do still hang out with me. I’m wearing these old cerulean blue shorts that I think used to be part of some boys’ high school regulation gym uniform (I love vintage!) and a white crop top that has the word “CHALLENGE” written across the front in big black letters, because I like to wear clothing that doubles as a friendly warning for what kind of person I am. I don’t have pierced ears, but people do still hang out with me. Most importantly, I’m eating ice cream, even though it’s not even breakfast time yet. I know what you’re thinking – how do I eat all this ice cream without getting in trouble? The thing is, I’m kind of an individual when it comes to doing what I want. I’m also the only person ever that has ever been into cooking. It’s kind of my one personality trait. If anyone else likes it, I’m certainly not acknowledging it!

Chapter 2

My best friends work during the day and I work at night, but when we get together, we always have a good time! We’re the best friends you’ll ever have. Does that sound like a threat? I’m inclined to tell you the intimate details of their respective family history, but that would be really weird, so I’ll just do a brief hagiography (that means documentation of the lives of saints, it’s a word I learned recently). There’s Kim, who has lo-oo-ong dark hair and the enormous macadamia-shaped eyes of a curious woodland deer. She’s kind of the wise, yet wickedly fun one of the group. Kate has just dyed her hair blonde, which means she is now even more popular and sophisticated – she also has a crazy household with a cat AND a dog, and a real, live, husband! Confusingly, Kate is also wise yet wickedly fun. This week because of Easter and having days off I’ve been able to see them relatively heaps and it has been very good for the soul, as the saying goes. For example, on Monday night we sat on the floor of my bedroom (it’s a great meeting space, I’m so lucky to have my own one!) and ate Pop-Tarts and drank Boulevardiers. That’s a cocktail which is like a negroni but uses bourbon instead of gin, and it’s one of my favourites. We clinked our glasses together in what we call “a toast”, and in that moment we felt like real Big City women.

Chapter 3

“We’re finally getting to the plot!” I thought ruefully, tucking a lock of unruly red hair behind my tragically unpierced ears. So, I’m kind of the “food blogger” around here. I’m also kind of an ideas person. I have Big Ideas and then Occasionally Make Them Happen Around Three Weeks Later If I’m Awake Enough, I know, it’s a little exhausting trying to keep up with me! When my Ideas and food blogging combine – bam! Honeycomb Sauce. Okay, okay, I had honeycomb ice cream at a local restaurant and immediately decided that honeycomb was the new salted caramel, and wanted to make some version of it for myself to have again and again in the comfort of my own bed and/or more normal area in the house to eat. But after some time I learned a little bit about myself and a lot about the true meaning of friendship: it’s not a competition. Salted Caramel may be heavily overexposed, but that doesn’t make it any less delicious. Honeycomb is just a flavour I hadn’t thought about in forever!

I know what you’re thinking – just honey and sugar? Way too sweet. Booooring. About as fun as a pop quiz or getting Salisbury Steak for lunch, neither of which I’ve ever actually experienced.

In fact, the delicate floral sweetness of the honey and the richness of the butter come together to make something pretty magical, and very individual. It doesn’t taste overly of honey, it’s more reminiscent of (that means “reminiscent of”, it’s a word I learned recently) actual honeycomb, the kind of stuff that you find inside Crunchy Bars or other similar candies hidden around your room. This sauce isn’t perfect – I admit! – half of it remained saucy and the other half solidified as soon as it hit the cold ice cream, but this was all so fun and delicious that I decided to share it with you anyway.

A recipe by myself. I’m thinking of adding a tablespoon or so of cream to it next time to see if that keeps it more liquid but I do love it just like this. 

100g butter
half a cup of sugar
one tablespoon brown sugar
one heaped tablespoon honey

Heat everything together in a saucepan, stirring gently as it comes to the boil. Remove from the heat once it starts bubbling and continue stirring for a bit. Allow it to cool somewhat (it’ll be like actual lava initially) before pouring it all over your ice cream. 



Chapter 4

I decided to end the day with ice cream and honeycomb sauce – after all, I’m a grown up and kind of a bad girl who makes her own rules. The remaining sauce had turned rock solid in the fridge, so I had to carefully sit the bottle inside a cup of boiling water to soften it, but during this time, I learned five more lessons about friendship. Unfortunately I’m still wearing the same outfit that I was at the start of this story, but to pad things out a bit, I’ll tell you about what I wore yesterday: a vintage white minidress with pink and orange diamond patterns across it and a high neck with a collar. I wore it with my yellow socks with pizzas on them and chunky black ankle boots – pretty wild, huh? I’m a pretty wild dresser!

I’ve finally given Lin-Manuel Miranda’s musical Hamilton a proper listen and I am predictably entranced and addicted.  Listening to one modern musical about historic political American times got me thinking about another one: Bloody Bloody Andrew Jackson, which in the opposite direction of the incredible success of Hamilton, ran for a mere hundred and twenty-something performances on Broadway before closing. I saw a production of it in New Orleans a few years back but haven’t listened to it since; its pop punk sound is like…perfect? I don’t know what the best entry point would be, maybe Rockstar if you want something fast or Saddest Song if you want something amazing.

Kid Cudi with MGMT, Pursuit of Happiness. Whatever track this samples is intoxicating and then the rest of the song has the temerity to be excellent as well. This song is moderately ancient but sounds so fresh.

next time: the novelty is over, kids, and I have some brussels sprouts to emphasise this (they’re fried with pistachios and truffle butter though, so)
